Jubilee Salad image

This is a pretty, healthy salad that serves a lot of people. You may like more or less dressing, but err on the cautious side because too much will overwhelm the veggies. This doesn't keep for more than a day -- two at most.

1 green pepper, chopped
1 yellow pepper, chopped
1 red pepper, chopped
1/2 sweet onion, chopped
1 cup celery, chopped
1 cucumber, peeled and chopped
1 1/2 cups grape tomatoes
1 1/2 cups of matchstick carrots
1 -2 tablespoon sugar
1/2 cup low fat balsamic vinaigrette salad dressing

Steps:

  • Mix all ingredients.
  • Chill.

DIAMOND JUBILEE CHICKEN

Update Coronation chicken with this salad of mild spices, apple, walnuts, yoghurt sauce and pomegranate

1 large chicken (about 2.25kg/5lb)
1 tsp turmeric
2 tsp ground ginger
2 tsp ground cumin
2 tsp ground cinnamon
3 tbsp sunflower oil
500g Greek yogurt
4 tbsp mayonnaise
¼ tsp cayenne pepper
4 tsp pomegranate molasses or balsamic glaze, plus extra to serve
2 green-skinned English apples , cored and diced
200g toasted walnut piece
bunch flat-leaf parsley , chopped
100g/4oz pomegranate seeds

Steps:

  • Heat oven to 160C/140C fan/gas 3. Sit the chicken in a large roasting tin. Mix together the turmeric, 1 tsp ginger, 1 tsp cumin, 1 tsp cinnamon and oil, then brush all over the chicken, making sure all of the spiced oil is used. Season well. Pour 250ml water into the bottom of the tin, cover with foil and seal around the edges. Put in the oven and cook for 2 hrs.
  • Remove the foil and increase oven to 220C/200C fan/gas 7. Cook for a further 30 mins until the chicken is cooked through. Remove from the oven and leave until cool enough to handle. Strip the chicken meat from the carcass in chunky pieces and set aside.
  • To make the salad, mix together the yogurt, mayonnaise, remaining 1 tsp each of ginger, cumin and cinnamon, cayenne pepper and pomegranate molasses or balsamic glaze. Add the chicken pieces, apples, all but a handful of the walnuts and parsley, and season.
  • Spoon the salad onto a large plate. To serve, drizzle with a little pomegranate molasses or balsamic glaze and scatter over the pomegranate seeds, remaining walnuts and chopped parsley.

This is a great, refreshing dessert, especially after a hearty meal. This does have to be prepared immediately before serving, but does not take a lot of time. Your guests will enjoy the blue flames when the brandy is ignited!

½ cup white sugar
2 tablespoons cornstarch
¼ cup cold water
¼ cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
½ teaspoon finely grated orange zest
¼ teaspoon cherry extract
¼ cup brandy
3 cups vanilla bean ice cream

Steps:

  • Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
  • Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

Big bowl of YUM! I can't take credit for this one & can't remember who gave me the recipe. Great for pot-lucks. You may substitute chunk pineapple instead of crushed if you like.

1 (21 ounce) can cherry pie filling
1 (6 ounce) can crushed pineapple, drain juice
1 tablespoon lemon juice
1 (14 ounce) can sweetened condensed milk
16 ounces Cool Whip (the large tub)
2 -4 ounces pecan pieces

Steps:

  • In huge bowl mix all ingredients until blended well. (I'm not crazy about nuts, so I only use a small bit of pecans.).
  • Variations: add another can of cherry pie filling and/or cocount flakes.
  • If you can resist, it is best after chilled for a couple of hours.

This is So yummy! I make it for Thanksgiving, Christmas, and pot lucks. Everyone loves it and asks for the recipe. They can't believe how easy it is when I give it to them.

1 can(s) cherry pie filling
1 can(s) crushed pineapple, drained well
1 can(s) eagle brand milk
1/2 c coconut flakes (optional)
1/2 c miniature marshmallows (optional)
1 medium container cool whip

Steps:

  • 1. Mix together cherry pie filling, drained pineapple, eagle brand milk, and coconut flakes.
  • 2. Fold in cool whip and mix well with previous ingredients, then mix in marshmallows.
  • 3. Chill in fridge 3 hours or overnight.

3 ounces cherry Jell-O
21 ounces cherry pie filling
3 ounces lemon Jell-O gelatin
3 ounces cream cheese
1/3 cup Miracle Whip
8 3/4 ounces crushed pineapple, drained
2 cups miniature marshmallows
2 (2 1/2 ounce) packages Dream Whip
1 tablespoon nuts, chopped

Steps:

  • Dissolve the cherry gelatin in 1 cup hot water, cool. Add the cherry pie filling to the cherry gelatin. Turn into a 7x11 glass dish. Refrigerate unti firm. Dissolve the lemon gelatin in 1 cup hot water and set aside to cool. Beat together the cream cheese and salad dressing, gradually add the cooled.
  • lemon gelatin, stir in the drained pineapple and the marshmallows. Pour over the first layer of gelatin. When the second layer is firm, prepare the Dream Whip and spread over the top, sprinkle with the nuts.
  • Cool Whip or 'real' whipped cream can be substituted for the Dream Whip. I prefer the flavor of Dream Whip or real cream over the Cool Whip. Preparation time includes refrigeration time.
