TASTES BETTER FROM SCRATCH BREAKFAST CASSEROLE



Tastes Better from Scratch Breakfast Casserole image

This was quite delicious. I added more bell peppers and used regular onion cooked with the sausage and bell peppers. i also used almond milk. I don't use cooking spray, but I reuse my butter wrappers to grease pans. Recipe courtesy of Tastes Better from Scratch.

2 lbs pork sausage
12 eggs
1 cup sour cream
1/4 cup milk
salt, to taste
pepper, to taste
4 green onions
1/2 green bell pepper, diced
1/2 red bell pepper, diced
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350. Spray a 9x13 inch pan with cooking spray. I used my butter wrappers to grease the pan.
  • Combine the eggs, sour cream, milk, cheese, salt, and pepper in a large bowl. Mix on low speed with electric mixers, just until combined.
  • Heat a large skillet over medium heat. Add sausage and cook until browned, breaking it into small pieces with a wooden spoon as it cooks. Drain most of the grease and add the sausage to the bowl with the egg mixture.
  • Add the bell peppers and onion to the same skillet the sausage was cooked in and saute for 2 to 3 minutes. Add to the bowl with the eggs and stir everything to combine.
  • Pour mixture into greased 9x13 inch pan and bake for 35 to 50 minutes or until the edges are set and the center is just barely jiggly.
  • Leftover egg casserole can be stored in the fridge and enjoyed within 3 to 4 days. Leftovers are delicious reheated in the microwave.

Classic Waffles image

This is a no-fail recipe. Fluffy on the inside and slightly crisp on the outside. You can also substitute regular milk for the buttermilk and they turn out just as good! I have a Belgian waffle maker that flips 180 degrees, so please note that the "flipping waffle maker over" part of the recipe is aimed at that type of machine (think Waffle House). If you have a standard waffle maker, I'd suggest pouring the batter into the center of the bottom and spreading it out a little with a spoon before closing the lid.

2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 3/4 cups buttermilk (or regular milk)
2 eggs
2 tablespoons oil

Steps:

  • Preheat waffle iron.
  • Combine flour, sugar, baking powder and salt in a large bowl. Whisk milk, eggs and oil in a medium bowl. Whisk milk mixture into dry ingredients until smooth.
  • Pour one cup of batter into preheated waffle iron. Close top and flip waffle maker. Bake until brown, about three minutes.

4 cups all-purpose flour
2 tablespoons granulated sugar
2 1/2 tablespoons baking powder
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
4 eggs, separated
3 1/2 cups milk
1/2 cup butter, melted
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, mix together flour, sugar, baking powder, sea salt, and cinnamon. Set aside.
  • Preheat a waffle maker to medium heat.
  • Separate egg whites from yolks. Make sure to save both parts of the egg.
  • Put whites in the bowl of your standing mixer and beat on high ntil stiff peaks form.
  • Transfer beaten egg whites to a bowl and set aside in the refrigerator.
  • Add egg yolks and butter to the bowl of your standing mixer and mix on medium speed until combined.
  • Add milk, applesauce, and vanilla extract and beat until combined.
  • Add half of the dry ingredients and beat until combined.
  • Repeat with remaining dry ingredients.
  • Add beaten egg whites and fold into the batter by hand with a spatula.
  • Spray waffle maker lightly with non stick cooking spray and scoop 1 cup of batter into the center of the waffle plates. **I don't use cooking spray. I save my butter wrappers when they are used--something my Mom did and use those to grease everything.
  • Cook on medium heat for 3 to 5 minutes or until the waffles are golden brown.
  • Repeat with remaining batter until it has all been used.
  • To keep warm, preheat oven to warm setting and put each batch of waffles on a large baking sheet in the warm oven until ready to serve.
  • Serve with warm maple syrup, whipped cream, fresh berries, etc.
