Authentic pasta carbonara is easy to make and full of flavor! Featuring plenty of savory bacon, a cheesy egg sauce, and tender spaghetti, it's a hearty weeknight meal that is sure to satisfy all pasta lovers.

1 pound spaghetti pasta
1 tablespoon salt
1 pound diced pancetta or diced thick cut bacon
4 egg yolks
2 whole eggs
1 1/2 cups grated pecorino romano cheese (divided)
1/2 teaspoon freshly ground pepper

Steps:

  • Bring a large pot of water to a boil and season with salt. Cook pasta according to package directions. Reserve 1 1/2 cups of the pasta water before draining.
  • In a large saucepan, cook pancetta (or bacon) over medium heat until crisp, about 7 to 10 minutes. Drain excess fat, reserving just 2 tablespoons of the grease.
  • In a mixing bowl, whisk together egg yolks, eggs, and 1 cup pecorino romano cheese.
  • Toss drained pasta with cooked pancetta (or bacon) and reserved grease. Pour egg mixture in, along with ½ cup reserved pasta water and toss together with pasta 2 minutes. Add more of the reserved water to thin out your sauces, as necessary.
  • Serve hot topped with remaining cheese, and freshly ground pepper.

1 pound spaghetti
10 slices bacon (, cut into small pieces)
3 large eggs (, yolks)
1/2 teaspoon Kosher salt
1/4 teaspoon coarse ground black pepper
1 cup Parmesan (, shaved)
1 cup frozen peas

Steps:

  • Cook the pasta in a large pot to one minute less than the directions on the box and keep 1/2 cup of pasta water to the side to drain pasta (do not rinse pasta).
  • In a large skillet add the bacon and cook it until crisp then turn off the heat and remove the bacon with a slotted spoon then add the pasta and toss it in the bacon fat.
  • Add the eggs, salt, pepper and Parmesan cheese to a large bowl and whisk well before adding slowly while tossing the hot pasta quickly to prevent it from scrambling.
  • Add in 1/4 cup of the pasta water and peas, tossing again to create a saucy consistency to the pasta then topping with bacon before serving.

2 cups uncooked penne pasta
1 garlic clove, minced
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon pepper
2 cups 2% milk
3 cups shredded cheddar cheese, divided
1/2 cup crumbled cooked bacon

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large saucepan, saute garlic in butter for 1 minute. Stir in flour and pepper until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; stir in 2 cups of cheese until melted. Remove from the heat. , Drain pasta; add pasta and 1/3 cup bacon to cheese sauce. Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes. 5 slices bacon
1 lb pasta
1 onion, chopped
1 lb frozen large peeled and deveined shrimp, thawed
2 tomatoes, cored and cut into 1/2-inch chunks

Steps:

  • Bring a large pot of water to a rolling boil and salt it generously.
  • While the water comes to a boil, cook the bacon in a large, deep skillet, turning occasionally, over medium heat until crisp, about 10 minutes. Transfer to paper towels to drain and crumble. Drain all but 2 tablespoons fat from the skillet.
  • Add the pasta to the boiling water and cook until al dente according to the label's directions, stirring occasionally.
  • To the fat in the skillet, add the onions and a pinch each of salt and pepper. Cook, stirring, until the onions brown, about 3 minutes. Add the shrimp, season with salt and pepper, and cook, stirring, until just opaque throughout, about 5 minutes. Add the tomatoes, season with salt and pepper, and cook just until warmed through, about 1 minute.
  • Transfer the pasta directly from the pot to the skillet. Toss until very well coated and top with the bacon.

1/2 cup sliced fresh mushrooms
2 garlic cloves, minced
1 cup grated parmesan cheese
2 cups whipping cream
1/2 teaspoon pepper
1/2 cup sliced green onion

Steps:

  • Cook pasta according to package directions; set aside.
  • Cook bacon in large skillet over medium heat until crisp; remove bacon; reserve 2 T.

This is my answer to poor planning. I usually have all the ingredients on hand. This is a family favorite. For those with gluten intolerance corn spaghetti substitutes nicely.

1/3 lb bacon, thick sliced
1/4 lb butter
1 cup half-and-half cream
2 tablespoons white vinegar
1 lb spaghetti
2 eggs, beaten
1/3 cup grated fresh parmesan cheese

Steps:

  • Cut bacon into little pieces, approximately 1" square and saute in a small frying pan with the butter until bacon barely begins to brown. It should be a bit crunchy but not dry.
  • Microwave half and half for one minute and add bacon and butter. Add the vinegar; this will turn the half and half into cheese. Simmer gently for about 15 minutes, or until sauce cooks smooth.
  • Boil spaghetti al dente. Drain and return to the pan. Immediately throw in the eggs, bacon sauce and grated cheese. Add salt and pepper to taste, toss and serve immediately.
