Love ginger? You'll love this homemade salad dressing recipe! It's full of fresh ginger flavor, balanced by a touch of maple syrup and apple cider vinegar. Recipe yields 3/4 cup dressing.

½ cup extra-virgin olive oil
2 tablespoons apple cider vinegar, to taste
2 tablespoons Dijon mustard
1 tablespoon maple syrup or honey, to taste
2 teaspoons finely grated fresh ginger
½ teaspoon fine sea salt
About 20 twists of freshly ground black pepper

Steps:

  • In a jar or small bowl, whisk together all of the ingredients until fully blended. Sometimes, if your mustard is cold, it will need a few minutes to warm up before it fully incorporates.
  • Taste, and adjust if necessary-for more tartness, add another teaspoon of apple cider vinegar, or for more sweetness/balance, add another teaspoon or two of maple syrup (I usually add one).
  • This salad dressing will keep well in the refrigerator for up to 10 days. Real olive oil can solidify slightly when cold; if that happens, simple let it warm to room temperature for a few minutes or microwave it in a microwave-safe jar for no more than 15 to 30 seconds.

Joli Kobe is a great restaurant in Atlanta and for years I have wanted the recipe for their ginger dressing. It was in the paper this week .... finally I have it. Had to share as it is so delicious! Great on salads of any kind.

2 teaspoons chopped fresh ginger
1 1/2 teaspoons chopped yellow onions
1 small garlic clove
3/4 teaspoon yellow mustard
1/4 cup aji-mirin (sweetened rice wine) or 1/4 cup mirin (sweetened rice wine)
2 tablespoons soy sauce, more for seasoning
2 tablespoons water
1 cup vegetable oil
salt and pepper

Steps:

  • Place the ginger, onion, garlic, yellow mustard, aji-mirin and soy sauce in blender and blend until smooth.
  • Add the water and, with the motor running, gradually add the vegetable oil in a thin stream.
  • Season to taste with salt. pepper and soy sauce.

  • In a food processor or blender, mix the mayonnaise, corn syrup, salt, and pepper until blended. Mix in the soy sauce, ginger, and sugar. Blend well and adjust seasoning to taste. Chill 2 hours to blend flavors.

There's a wonderful restaurant in Atlanta called Joli Kobe, they make the best chicken curry salad. I happened to find a recipe on food network from Tyler Florence that tastes exactly the same. It's wonderful on top of spring salad with ginger dressing.

3 tablespoons extra virgin olive oil
4 boneless skinless chicken breasts (about 1 1/2 pounds total)
salt & freshly ground black pepper
1/2 cup mayonnaise, plus
extra mayonnaise, if you like, for spreading
1 teaspoon curry powder
1/2 lemon, juice of
1/4 cup chopped blanched almond, toasted
1/4 cup raisins
8 fresh basil leaves, torn
8 slices good-quality dense white bread, such as tuscan

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large ovenproof skillet over medium-high heat until smoking.
  • Sprinkle the chicken breasts on both sides with salt and pepper.
  • Put them in the pan in a single layer, and brown them 2 minutes on each side.
  • Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes.
  • Remove from the oven and cool.
  • Chop the cooled chicken and put it into a large bowl.
  • Add the rest of the ingredients and toss.
  • Season with salt and pepper.
  • Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken.
  • Top with another slice of bread and serve.
  • You can also take a scoop of chicken salad and place on top of spring salad and serve with ginger dressing.
