THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

Steps:
- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
JOLEAN'S HOMINY AND SAUSAGE
This was one of those staple meals that Mom came up with when funds were low...It's just simple, cheap, comort food and it's the only way my siblings and I would ever eat hominy...I still love it! (NOTE: I add 1 tsp. parsley flakes to it when I season with salt & pepper, but that's not part of the original recipe...AND, I prefer to use Sage flavored sausage.)

Steps:
- In a large skillet, brown the sausage and cut into chunks. Remove sausage and drain grease but leave drippings in the pan.
- Saute onion and garlic in butter in the same pan with the sausage drippings. Add hominy and cook over medium heat stirring frequently, until heated through. Sprinkle with salt & pepper to taste.
- Add sausage back to the skillet for about 5-10 minutes, stirring frequently until heated through.
- Serve with big, fluffy biscuits with butter and honey! YUM!
- Oh, just a NOTE: My brother and my Dad always mixed in some catsup with theirs -- I used to put some on the side and dip the sausage into it -- Mom didn't care much for that when we added catsup, though! LOL!
JOLEAN'S SLOP SOUP
This was a staple in our family growing up. Very inexpensive and easy, and kid-friendly. Odd thing about it was that our friends from school would ask to stay for supper at our house whenever Mom made this, and she concocted it simply because we didn't have much in the way of groceries/money back then!!

- Brown the garlic and ground chuck and break into chunks while cooking. Drain thoroughly.
- Pour soups and water into large stock pot. Stir until smooth and no lumps, while heating on medium heat on the stove.
- Add browned ground beef, mushrooms, oregano, basil, salt & pepper. Cook until gently bubbling.
- Add noodles and simmer on low for 10 minutes (until noodles are al dente', or tender but not mushy.) Add pat of butter and stir in as it melts.
- Serve with warm garlic & cheese bread.

- Set a large soup pot over medium-high heat. Add vegetable oil and beef; cook, stirring occasionally, until meat is browned and cooked through, about 10 minutes.
- Remove meat from pot and set aside. Drain all but 2 tablespoons of grease from pot and discard.
- Add onion and green bell pepper; cook until softened, 8-10 minutes. Add garlic, thyme and cayenne pepper; cook just until fragrant, about 30 seconds.
- Add ketchup and cook, stirring, until it darkens in color, about 1 minute. Add tomato sauce, water, beef stock, Worcestershire sauce, apple cider vinegar and brown sugar.
- Sir well. Reduce heat to medium; add reserved ground beef. Simmer partially covered 15 minutes.
- Season to taste with salt and pepper. Serve with corn chips or toasted garlic bread.
