3 tablespoons oil
1 onion, minced
2 tablespoons minced green bell pepper
1 stalk celery, chopped
1 clove garlic, minced
1 (28-ounce) can whole tomatoes, chopped
1 (28-ounce) can tomato puree
1 tablespoon basil
1 teaspoon crushed oregano
1 bay leaf
1/2 cup dry red wine
1 cup water
2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Heat the oil over medium heat in a large, heavy pot. Add the onion, bell pepper, celery and garlic and cook until the vegetables are tender, 8 to 10 minutes. Add the tomatoes, tomato puree, basil, oregano and bay leaf. Simmer the sauce 1 hour, stirring frequently.
  • Add the red wine, water, salt and pepper. Simmer 1 hour longer. If the sauce is too thick, add more water. Stir in the cheese just before serving.

2 lbs veal, cubed
1/2 onion, finely chopped
8 mushrooms, sliced
1 green pepper, diced
2 garlic cloves, minced
1 (900 ml) can tomatoes, mashed
2 teaspoons tomato paste
1 teaspoon salt (to taste)
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
8 fresh basil leaves
1/2 teaspoon Italian spices
olive oil

Steps:

  • In frying pan, heat the oil then sauté the garlic quickly (do not burn) .
  • Add the veal and peppers. Once peppers are tender, add the mushrooms and the onions. Let the dish simmer for 15-20 minutes.
  • Once simmered, add the tomato paste and mashed tomatoes. Let simmer and additional 5 -- 10 minutes. Season with the spices and herbs then simmer for 20 minutes. Adjust seasoning if required.
  • Remove the basil leaves and serve over pasta.

Little Joe's was a very popular Italian restaurant located just north of the Los Angeles Civic Center. It's now closed and the space is used as a movie set. However, the popularity of this recipe lives on and, years later, is still being requested for publication in the local newspapers. I think it deserves to be immortilized at 'Zaar.

3 tablespoons olive oil
1 medium onion, chopped
2 tablespoons bell peppers, minced
1 celery, chopped
1 garlic clove, minced
1 (28 ounce) can whole tomatoes, chopped
1 (28 ounce) can tomato puree
1 tablespoon dried basil
1 tablespoon crushed dried oregano
1 bay leaf
1/2 cup dry red wine
1 cup water
2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons freshly grated parmesan cheese

Steps:

  • Heat oil in a large heavy pot.
  • Add onion, green pepper, celery and garlic and saute until vegetables are tender.
  • Add tomatoes, tomato puree, basil, oregano,and bay leaf.
  • Simmer for one hour, stirring frequently.
  • Add wine, water, salt and pepper.
  • Simmer one hour longer.
  • If sauce is too thick, add water.
  • When sauce is cooked, add Parmesan cheese and mix well.

2 lbs Italian sausage, casings removed (mild or hot)
1 small onion, chopped (optional)
3 -4 garlic cloves, minced
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 1/2 teaspoons brown sugar
1 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
1/4 teaspoon fresh coarse ground black pepper
1/4 cup red wine (a good Cabernet!)
1 lb thin spaghetti
parmesan cheese

Steps:

  • 1 In large, heavy stockpot, brown Italian sausage, breaking up as you stir. 2 Add onions and continue to cook, stirring occasionally until onions are softened. 3 Add garlic, tomatoes, tomato paste, tomato sauce and water. 4 Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper. 5 Stir well and barely bring to a boil. 6 Stir in red wine. 7 Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn! 8 Cook spaghetti according to package directions. 9 Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

I invented this recipe using Sloppy Joe sauce when I didn't have spaghetti sauce on hand!

1 pound spaghetti
1 pound lean ground beef
1 (15 ounce) can sloppy joe sauce
½ green bell pepper, diced
½ onion, chopped
½ cup Italian-style dried bread crumbs
¼ cup shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet, brown beef over medium heat; cook until no longer pink and drain. Add sauce and simmer on low.
  • Add green bell pepper and onion; mix well. Remove from heat and immediately mix in bread crumbs and cheese.
  • Add sauce to pasta; serve immediately.

Spaghetti is one of my favorite meals, so I came up with this recipe to have a variation. I also had my dad in mind when I thought of this, because he loves Sloppy Joes. I knew he would just love this and he did. It is another recipe that I just thought of... I am not sure if it has been done before, but this recipe is really good.

1 ½ pounds ground beef
½ medium onion, diced
½ medium green bell pepper, diced
1 pinch dried Italian seasoning, or more to taste
salt to taste
1 (4.5 ounce) can sliced mushrooms, drained
1 (14 ounce) jar pasta sauce
6 medium hamburger buns, split
6 slices shredded mozzarella cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, bell pepper, Italian seasoning, and salt in the hot skillet until beef is browned and crumbly, 5 to 7 minutes.
  • Add mushrooms and cook for 2 minutes. Stir in pasta sauce, cover, and cook until sauce has reduced slightly, 5 to 10 minutes longer.
  • Serve Sloppy Joe mixture on hamburger buns with a slice of mozzarella cheese.

My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!
