JOE'S CHILI
Steps:
- 1 Add butter and onions to a large stock pot over med high heat, until caramelized (about 10-15 min). 2 Add the garlic and saute 1 minute longer. 3 Add the turkey, sausage. Cook until the meat is nicely browned and cooked through. I use the spatula/cooking spoon to break up meat. Add the spices, sugar and tomato paste half way through (except for the cayenne, wait until you add the tomatos and beans) 4 Add and stir beer, tomatos, beans, and cilantro stems 5 Once the corn is done roasted in the oven, and cut from the cob, add to pot. 6 Add cream about 1/2 hr into cooking. 7 lower heat, cook about 2-3 hours. 9 about hour / 1.5 hrs into add the corn starch paste to thicken chili. To make the paste, in a small bowl, add a couple spoons of corn starch, and then ladle some of the chili liquid in to make a paste until looks like runny oatmeal consistency. 10 Bring to simmer once consistency looks right (should be thick). the longer you slow cook it the thicker it gets.
ESKIMO JOE'S WORLD FAMOUS CHILI
This is from a restaurant in Stillwater, Oklahoma called Eskimo Joe's. I love trying chili recipes so I'm putting it here so I can find it. I plan on making a few changes like the amount of meat and I know I'll add more beans and probably adjust the seasonings a bit (we like it hot).
