This recipe was given to me many years ago by a friend...She is a true Italian...this has been in her family for many years. I love to use this in my baked Ziti...I hope you will enjoy this recipe....

1 lb ground sirloin
1 lb italian sausage, no casings
2 large tomatoes, canned and cut up
4 can(s) tomato paste, italian
4 clove garlic minced
salt and pepper to taste
1 Tbsp sweet basil, fresh
parsley (italian)

Steps:

  • 1. Brown: Sausage, ground sirloin, and garlic, push to side away from grease. Brown: Tomato paste in grease for 3 minutes. Blend tomatoes to thin paste then add meat to sauce.
  • 2. then add the same amount of water using the tomato cans to mixture. Add salt and pepper to mixture to taste, and sweet basil, stir every so often.
  • 3. Let boil for 10 minutes. Put burner on simmer for 3 to 4 hours......

AUTHENTIC (QUICK) ITALIAN TOMATO SAUCE FOR PASTA



Authentic (Quick) Italian Tomato Sauce for Pasta image

NOTE: To enjoy with pasta as soon as the sauce is ready, put a large pot of salted water on the cooktop over high heat and cook the pasta (I prefer De Cecco) as directed (if you are using egg or a very quick cooking pasta, do this about half-way through these directions).

4 Tbsp extra virgin olive oil
1 to 5 cloves fresh garlic (not in a jar, dried, powdered, or frozen) preferably grown in USA/Europe
small bunch of fresh Italian parsley, finely chopped (my family likes to use parsley in sugo)
1 (28-32 oz) about 800g carton/jar of whole, chopped tomatoes or puree (like Mutti, or Bionaturae) any tomatoes listed on the Greatest Tomatoes from Europe site will be fantastic or about 1 lb of fresh tomatoes (San Marzano, Roma or cherry tomatoes are great)
about 1 1/2 level tsp sea salt
3 or 4 large leaves of fresh basil, more to add to each plate, if desired
Parmigiano Reggiano to grate on top

Steps:

  • Pour the oil into a large saute pan (not a deep pot) over medium high heat. Crush the garlic and add it to the oil (if you want a spicy sauce, you can add some hot pepper, fresh or flakes, at this point). Saute the garlic until it just starts to brown, then add the parsley.
  • Turn the heat up to high. Now add the tomatoes, and quickly cover with the lid for about 30 seconds, until the squirting subsides. Stir with a wooden spoon and lower the heat a little. It is important that this sauce is cooked at a fast simmer, as it is cooked briefly.
  • Add the salt and continue to simmer at a fast pace, and stir often.
  • The sauce will thicken quickly, so do not overcook it, and have it become too thick; about 5 to 7 minutes should be sufficient.
  • Taste the sauce, if it doesn't taste delicious, it probably just needs a little more salt. Turn off the heat and add the fresh basil (I tear mine into pieces). Also, unless absolutely necessary, do not wash your basil. Wipe it with a damp paper towel instead, so the water doesn't ruin the flavor and aroma.
  • Add sauce to the drained pasta (save some pasta water to add back into the pasta in case it's too dry), and enjoy immediately with some freshly grated authentic Parmigiano Reggiano cheese and/or pepper.
  • Also, if you've been plating pasta in a bowl, then topping it with sauce, this is American-style. If you want to serve it the way they do in Italy, mix the sauce in and then plate it.

jodie's italian sauce (pre made)
1 large italian cheese (bag shredded)

Steps:

  • 1. Preheat oven to 400*, Use my Italian sauce for this recipe start to Pre pare 4 hours ahead of time...

  • 3. Cook and drain ziti: Mix sauce, ziti, 1/2 the cheese together, spread into sprayed deep baking dish. Put remaining cheese on top and spread out..Place in oven and bake for 30 minutes...serve hot

Number Of Ingredients 9

3 garlic cloves, minced
3 tablespoons olive oil
1 can (29 ounces) tomato puree
1 can (28 ounces) crushed tomatoes
2 tablespoons brown sugar
1 tablespoon Italian seasoning
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a large saucepan, saute garlic in oil until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until sauce reaches desired thickness. Use in Deep-Dish Sausage Pizza, Tomato Artichoke Chicken or any recipe that calls for pizza sauce. Sauce may be refrigerated for up to 1 week.

This is go to dinner for leftovers and just because on a night you want something quick to make to make plenty to go around. I hope you enjoy it!

1 lb oryx browned or other ground meat
sea salt to taste
pepper to taste
1 Tbsp minced garlic
2 tsp italian seasoning
1 tsp sage, dried
1/2 c onion chopped
1 c bell pepper chopped
1 jar(s) italian sauce
1 can(s) fire roasted tomatoes
2 box pasta of choice
2 qt boiling water
1 Tbsp olive oil
2 c mushrooms, optional

Steps:

  • 1. Brown meat, I'm using Oryx it's very lean and healthy. Drain any excess fat off of meat.
  • 2. Add dry ingredients and minced garlic to meat.
  • 3. Add onion and bell peppers , pushing meat to the side. Saute the veggies in same pan. I use a cast iron skillet.
  • 4. After sauteing, mix meat and veggies together. Add Italian Sauce let simmer 30 minutes.
  • 5. While doing this get your water ready for your pasta. After cooking pasta to Aldente Drain and rinse, pour your sauce in and simmer for 10 minutes. You can serve Hot with or without cheese.

This is a recipe I got from my father who got it from a little old lady he knew from Italy. I always simmer this sauce with my meatballs (recipe posted). You can also add sausage if you like. This sauce is to die for!!!!

1 (28 ounce) can peeled plum tomatoes
2 cloves garlic
1 small onion, diced
6 cloves
1 teaspoon basil

1/4 cup extra virgin olive oil
1/4 cup grated cheese

Steps:

  • In a large pot, sauté onion and garlic in olive oil.

1 (16 ounce) can whole tomatoes
5 cloves garlic, peeled
3 tablespoons olive oil
1 white onion, chopped
1 pound mushrooms, sliced
1 (16 ounce) can crushed tomatoes
8 ounces tomato paste
1 green bell pepper, chopped
2 tablespoons dried oregano
1 tablespoon dried basil leaves

Steps:

  • In a blender chop the whole tomatoes with juice and garlic until chunky. In a medium size pot, heat oil on medium high heat. Put onion and mushroom in and saute for about 5 minutes.
  • Place in pot the blended tomatoes, crushed tomatoes, tomato paste, chopped green peppers, oregano and basil. Bring to boil, then lower to medium low, cover and stir periodically. Cook and reduce about 1 to 2 hours or to your liking.
