HALUSKI (CABBAGE AND NOODLES)

6 slices bacon (thick cut, and chopped)
6 tablespoon butter (unsalted)
2 large onions (chopped)
1 ½ pounds green cabbage (cored and cut into bite size pieces)
½ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
1 pound egg noodles (medium-wide)

Steps:

  • In a large Dutch oven cook the bacon until almost crisp.
  • To the same Dutch oven add 3 tbsp of the butter and melt. Add the onions and saute for 5 minutes until soft and translucent.
  • Add the cabbage, salt and pepper, stir everything together and cook for 10 minutes covered, until the cabbage softens.
  • Meanwhile, cook the noodles according to package instructions. Drain and set aside.
  • Add the cooked noodles to the Dutch oven, remaining 3 tbsp of butter and stir. Cook for a couple more minutes, until everything is heated through.
  • Taste for seasoning and adjust with salt and pepper as necessary. Serve warm with lots of freshly ground black pepper.

This traditional Ukrainian halushki recipe consists of tender dumplings tossed with crispy bacon and sautéed mushrooms and onions. The epitome of Eastern European comfort food!

5 cups flour
1 tsp salt
4 eggs
1 cup lukewarm water
150 g Unsalted Butter (for dough)
3 tbsp Unsalted Butter (for sautéing veggies + dumplings)
1 lb fresh mushrooms
1 onion
1 cup bacon pieces
1 tbsp salt (adjust to taste)
1 tsp ground black pepper (adjust to taste)

Steps:

  • Prepare ingredients for the recipe.
  • Place the flour and salt in a large bowl. Make a little well in the middle. Place whisked eggs, water, and melted butter into it. Using a fork, work the ingredients together to form the dough. Finish up combining the ingredients by hand until you get a smooth, even texture.
  • Divide the dough into eight even pieces. On a floured surface, roll each piece into a long string. Dice each string into small pieces.
  • At this point, you can either freeze the raw dough for later use or move onto the next step to cook them.
  • Bring a pot of salted water to a boil. Toss in the raw dumplings and boil them until they float to the top.
  • Gather the topping ingredients.
  • Dice mushrooms and sauté them in a buttered skillet for about 5 minutes. Dice the onions and add them to the skillet, cooking them until softened. Season with salt and pepper.
  • Stir in bacon pieces, sauté for 5 minutes.
  • Place dumplings into a nonstick skillet and add in sautéed mixture and butter. Cook until they turn golden brown.
  • Serve immediately and enjoy!

1 pound bacon
1 onion, diced
1 (16 ounce) package egg noodles
1 head cabbage, sliced
salt and ground black pepper to taste

Steps:

  • Snip bacon into small pieces with a scissors and cook in a large skillet over medium heat until crisp, stirring often, about 10 minutes. Cook and stir onion with bacon until translucent, about 5 more minutes; set bacon and onion aside, leaving drippings in the skillet.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
  • Transfer bacon and onion mixture with drippings into the pot used to cook the noodles and cook and stir cabbage until coated with drippings. Cover pot and cook until cabbage is tender, 10 to 12 minutes, stirring occasionally. Gently stir in noodles and season to taste with salt and black pepper.

2 heads cabbage, core julienned
1/2 lb bacon
2 large yellow onions, diced
1 (1 lb) package egg noodles, cooked
tossed w. butter, to prevent sticking
black pepper, lots,fresh grnd

Steps:

  • Fry bacon in deep skillet until you have about 1/4 to 1/3 cup grease.
  • Set bacon aside for BLT's or nibbling.
  • (I add it to the recipe just before serving.) Add onion, and saute over medium heat until almost translucent.
  • Add cabbage, about 1/3 at a time, covering pan and lowering heat a bit to prevent scorching.
  • Continue until all cabbage is in pan, and cook until limp and tender.
  • Add 1/2 to 1 full tablespoon fresh pepper-- salt at the very end-- be reserved with salt-- the cabbage picks up the sodium in the bacon and the cooked noodles.
  • Add cabbage mixture to cooked noodles, tossing well to mix.
  • Serves about 450 people as a side dish, 6-8 as more of a main course.

There must be dozens recipes out there, all made by their grandmother's and mother's, who were Polish,Ukranian, Hungarian, Russian or from others who have some other Eastern European background, but I decided I would add mine which my grandfather, from Rumania, used to make with me in our home in Cuba. My father would just melt when I made this and we served it with brisket and gravy, not that the dish needed anything else. In spite of what the directions may seem this is a quickie noodle dish. UPDATE: 12/27/07 just made this again and I used microwaveable(sp) turkey bacon(special request)and I used crushed red pepper flakes and it was great! We enjoyed it so much and I still would like more since I am only allowed a bite!!! "UP-UPDATE" 04/18/09 - have corrected the tiny grammatical error, thanks for the tip! ;)

1 head cabbage
1 1/2 cups broad egg noodles
1 1/2 cups onions
4 tablespoons unsalted butter or 4 tablespoons unsalted margarine, and
4 tablespoons virgin olive oil
2 teaspoons minced garlic
1/2 teaspoon brown sugar or 1/2 teaspoon Splenda sugar substitute, brown blend
salt, to taste
fresh coarse ground black pepper, to taste

Steps:

  • Variation #1:.
  • Cook broad noodles according to package instructions and drain.
  • Cut up cabbage, onions, add butter, garlic and brown sugar and water.
  • Cook until cabbage is done, making sure no water remains, 5-7 minutes.
  • Pour cabbage over noodles and mix well.
  • Add salt & pepper, to taste.
  • This is a more rustic looking recipe.
  • Variation #2:.
  • Cook the noodles according to package instructions and drain.
  • Cut the cabbage up any way you like, slices or shredded, do the same with the onions, I prefer sliced onions & shredded cabbage.
  • Heat a large pan on medium-high heat.
  • When the pan is hot, add butter/oil combo, or 'grease' of your choice.
  • When the butter & olive oil are hot, add cabbage and onions and saute for a few (about 5 minutes), then add garlic and sugar.
  • Turn down the heat to medium and cover the pan.
  • Let this cook until the cabbage is soft, about 3 more minutes.
  • If you want the cabbage browned more, remove the lid and turn up the heat once again.
  • Add the butter/oil combination as you need it.
  • Add the cooked noodles and serve.
  • Variation #3:.
  • Use 1/2 of the butter/oil combination and turn heat to medium-high, when it is hot; add the onions.
  • Saute the onions with sugar or substitute for about 10 minutes, until they start to caramelize, then add garlic for another 30 seconds to 1 minute.
  • Cook noodles according to package directions, and drain.
  • Place cabbage in large saute pan with 1 Tablespoon of the butter/oil combination and saute until lightly browned.
  • Add the caramelized onions, garlic, cabbage & noodles and marry them for about 1 or 2 minutes, then add salt & pepper, to taste .
  • Serve.
  • *The amount of ingredients you use depends on how much halushki you want to make. Experiment!

HALUSHKY (POTATO DUMPLINGS) UKRAINE / RUSSIA

The is from "The Best of Ukrainian Cuisine". I haven't tried it yet. It differs from the halusky recipe in that it doesn't use farina. Times are guesstimates. If you don't have a meat grinder, you can grate the potatoes instead.

1/2 lb potato, unpeeled
1 fresh potato, peeled
1 egg
1 onion, finely chopped
2 tablespoons flour
1 tablespoon oil
1 pinch red pepper
salt, one pinch
melted butter (for drizzling over top)
sour cream

Steps:

  • Be sure to wash the potatoes before doing anything with them.
  • Take the one uncooked, peeled potato. Grind in a meatgrinder.
  • Cook the other potatoes in salted water. Drain, cool, peel and grind them also in the meat grinder.
  • Combine cooked potatoes with fresh potato and egg.
  • Brown finely chopped onion in oil. Combine with flour and stir. Season with salt and red pepper. Mix with the potatoes.
  • Bring at least a quart of salted water to a simmmer. Drop in spoonfulls of the batter. Cook at a slow boil for 8-10 minutes. Remove with a slotted spoon to a colander. Do not overcrowd the cooking water.
  • To serve, put on a plate and drizzle with butter. Pass with sour cream. It can also be served with fried mushrooms to go with meat dishes.
