FAJITA PIZZA
Shake up pizza flavors with fajita ingredients. Olé!

Steps:
- Move oven rack to lowest position. Heat oven to 450°F. Spray 12-inch pizza pan with cooking spray.
- Heat 10-inch skillet over medium-high heat. Add oil; rotate skillet to coat bottom and side. Cook chicken in oil 3 minutes, stirring frequently. Stir in bell pepper and onion. Cook 3 to 4 minutes, stirring frequently, until vegetables are crisp-tender and chicken is no longer pink in center; remove from heat. Stir in salsa; set aside.
- Stir Bisquick mix and very hot water in small bowl until soft dough forms; beat vigorously 20 strokes. Press dough in pizza pan, using fingers dipped in Bisquick mix; pinch edge to form 1/2-inch rim. Sprinkle 3/4 cup of the cheese over crust. Top with chicken mixture. Sprinkle with remaining 3/4 cup cheese.
- Bake 12 to 15 minutes or until crust is brown and cheese is melted and bubbly.

Steps:
- Preheat oven to 400°.
- grease 12" pizza pan.
- Cut chicken into strips.
- Heat skillet and add oil.
- Saute chicken for 5 minutes.
- Add green pepper and onion.
- Continue cooking until tender.
- Remove from heat and add salsa.
- Set aside.
- For crust, blend baking mix with water.
- Turn dough on surface dusted with baking mix or flour.
- Knead until dough is not sticky.
- Press on prepared pan.
- Spread 1/2 cup cheese on crust and top with chicken mixture.
- Sprinkle remaining cheese on top.
- Bake 15-20 minutes.

Steps:
- Preheat oven to 400°F.
- Unroll pizza crusts and arrange them side by side in a baking sheet.
- Roll dough with pastry roller.
- Bake for 15-18 minutes or until light golden brown.
- Slice peppers and onion.
- Coarsely chop cooked chicken.
- Heat skillet over medium heat. Add oil and garlic. Stir fry 30 seconds. Add peppers, onion and southwest seasoning; stir fry 1-2 minutes or until vegetables are tender.
- Remove from heat and stir in salsa and chicken. Arrange vegetables mixture over crust. top with cheese.
- Bake an additional 15-18 minutes until golden brown.

FAJITA PIZZA
This fajita seasoning is amazing. I use it on almost everything now. This pizza is delicious and spicy and just plain wonderful. Can be served with sour cream and/or extra salsa for dipping. The cayenne makes the seasoning hot, as does the black pepper, so take care if spicy food is not your thing.

- 1. Mix fajita seasoning ingredients. Add 1 tablespoon of the seasoning with the olive oil to the chopped steak, place in a plastic bag, and marinate for half an hour.
- 2. Thaw the dough, spray it with cooking spray, and place in covered bowl on top of the stove until it rises and doubles in size. Stretch out dough to fit a pizza pan. Brush with olive oil and sprinkle with the fajita seasoning. Bake for 10 minutes, then remove from oven.
- 3. mash together avocado, lemon juice, cilantro, a pinch of chili powder, a pinch of cumin, a pinch of crushed red pepper flakes, and a teaspoon of salt and black pepper.
- 4. Saute steak with red onions until they reach desired doneness. Spread pizza crust with salsa, top with steak and onions, sprinkle cheese on top, and bake for 10 minutes or until cheese is melted. Spread with avocado mixture before serving.

- Preheat to 450°F.
- Heat skillet to medium high heat. Sprinkle the steak with the chili powder, garlic powder. Sear steak for 4 minutes on both sides. Remove from pan and let sit for 5 minutes. slice steak diagonally across grain into 1/4 inch strips.
- Lightly coat pizza crust with cooking spray. Spread salsa evenly over crust.
- Arrange peppers and onion evenly. And top with steak strips and sprinkle with cheese.
- Bake for 8-10 minutes.

- saucepan cook together chicken and mixture of fajita mix and water, set aside.
- Combine sour cream and salsa, spread all over pizza dough.
- (leaving 1 in. crust) Top w/ chicken.
- Cook peppers and onion over med.
- heat w/cooking spray until soft.
- Top pizza w/peppers.
- Sprinkle cheese all over the top.
- Bake@ 350 degrees F for 12 min.

- Heat oil in large skillet.
- Add chicken and cook, stirring frequently until lightly browned.
- Stir in seasonings.
- Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender.
- Heat oven to 425°.
- Sprinkle pizza pan with semolina flour and press dough into pan.
- Pre-bake dough until it is a very light golden brown, about 6 minutes.
- Remove from oven and scatter chicken over crust, spoon salsa over chicken, spread vegetable mixture over that, and finally, top with cheese.
- Bake for another 15 minutes until crust is golden brown.
