Number Of Ingredients 15

DRY RUB
1 Tbsp salt
1/2 Tbsp ground black pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp dried parsley flakes
BRISKET
3 lb brisket
4 Tbsp olive oil
4 medium carrots, cut into 1-inch pieces
2 medium yellow onions, peeled and quartered
4 oz tomato paste
750 ml dry red wine
12 oz bottle lager type beer
12 oz can ginger ale

Steps:

  • 1. In a small bowl combine salt, pepper, garlic powder, onion powder, and parsley.
  • 2. Spread dry rub on both sides of brisket evenly. Preheat the oven to 300F degrees.
  • 3. Heat the olive oil in a large Dutch oven or pot on medium high heat.
  • 4. Sear the brisket on both sides thoroughly.
  • 5. Remove meat and set aside.
  • 6. Scraping pan to loosen the bits of meat stuck to the bottom.
  • 7. Saute the carrots and onions until soft, about 10 minutes.
  • 8. Add the tomato paste and stir until thoroughly mixed.
  • 9. Put the brisket back in the pan, and cover with the bottle of red wine, beer, and ginger ale.
  • 10. Place the entire pot with brisket into the oven and cook for at least three hours.
  • 11. When the meat is fork tender, remove the meat and set aside on a large cutting board.
  • 12. Skim the foam and fat from the liquid.
  • 13. Remove carrots and onions with a slotted spoon and blend in a food processor with 1 cup cooking liquid.
  • 14. Return to pot and mix with remaining liquid.
  • 15. Cook until reduced slightly.
  • 16. At this point you can either slice the brisket and serve with the sauce, or use two forks to shred the meat. Add some liquid from pot to moisten the meat and serve on rolls or slider buns, with coleslaw.

Jewish Brisket Sandwich with Smoked Mozzarella and Red Cabbage Slaw image

One 4-pound beef brisket
Kosher salt and coarsely ground black pepper
2 tablespoons extra-virgin olive oil
3 cloves garlic, peeled and crushed
2 celery stalks, cut into chunks
1 large carrot, cut into chunks
1 yellow onion, cut into chunks
2 cups red wine
2 cups beef stock
4 sprigs fresh rosemary
2 bay leaves
3 or 4 fresh thyme sprigs
1/2 cup mayonnaise
1 tablespoon stone-ground mustard
4 onion rolls, buttered and toasted until golden
8 slices smoked mozzarella
Red Cabbage Slaw, recipe follows
1/4 cup freshly squeezed lemon juice (about 1 1/2 lemons)
1/4 cup red wine vinegar
1 1/2 tablespoons sugar
1/2 cup extra-virgin olive oil
1/4 cup thinly sliced jarred cherry peppers
1 small shallot, thinly sliced
1/2 head red cabbage, thinly sliced (about 4 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F.
  • Sprinkle the brisket liberally on both sides with 1 tablespoon salt and some pepper.
  • Place a large Dutch oven or heavy-based pot over medium-high heat. Add the oil. Add the brisket and sear on all sides until deep golden brown, 10 to 12 minutes. Remove the brisket and set aside. Add the garlic, celery, carrots and onions and cook until browned, about 5 minutes. Deglaze the pot with the wine and let simmer, about 1 minute. Then, use a wooden spoon to scrape the bottom of the pot. Then add the stock, rosemary, bay leaves and thyme. Add the brisket back to the pot fat-side up, cover and roast in the oven until the brisket is fork tender, about 3 hours.
  • Transfer the brisket to a cutting board and let it rest, about 15 minutes. Strain out the vegetables and skim off some of the excess fat and reserve the jus. Slice the brisket thinly across the grain.
  • Whisk the mayonnaise and mustard until well blended in a small bowl. Smear the top of the rolls with the mayonnaise mixture liberally. Place the mozzarella on the bottom of the rolls, pile high with the brisket and ladle the jus over top. Top with the Red Cabbage Slaw.
  • Whisk the lemon juice, vinegar and sugar in a medium bowl. While whisking, slowly add the oil until smooth. Add the cherry peppers, shallots and cabbage. Taste and season with salt and pepper. Cover the bowl with plastic wrap and set aside in the refrigerator until you are ready to serve.

2 tablespoons paprika
2 tablespoons brown sugar
1 tablespoon garlic powder
1 tablespoon chili powder
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
One 6- to 8-pound trimmed beef brisket
8 cloves garlic, peeled
24 Hawaiian rolls, warmed
Favorite slaw, for serving
2 cups pickled deli peppers
2 cups pepper relish
2 cups pickle chips
2 cups baby spinach

Steps:

  • Preheat the oven to 275 degrees F. Cover a sheet pan with foil and place a baking rack on top.
  • In a small bowl, mix together the paprika, brown sugar, garlic powder, chili powder, salt and pepper. Set aside.
  • Place the brisket onto the rack over the prepared sheet pan, fat-side down. With a sharp knife, cut 8 slits into the brisket, placing a garlic clove into each slit. Season the brisket with the spice mixture, flip and season the other side, leaving the fat side facing upwards.
  • Roast until very tender, 7 to 8 hours. Let rest for 10 minutes, then slice the brisket into thin strips.
  • Serve with the rolls, slaw, peppers, relish, pickles and spinach.

  • Place the brisket, fat side up, in a large casserole or Dutch oven with a tight-fitting lid. Toss in the onions, carrots, and bay leaves. If you are using the tomato paste, blend it into the broth then pour over the meat and vegetables. Then pour the crushed tomatoes and red wine, if using, on top. The liquid should cover the meat and most of the vegetables. Cover the casserole and bake the brisket until the meat is very tender, 3 to 31⁄2 hours.
  • If you are serving the brisket the next day, let it cool then put the entire casserole in the refrigerator. About an hour before serving, skim off any hardened fat, then take out the meat and cut off any excess fat from the top of the meat. Slice the brisket across the grain, as thin or thick as you like, then neatly return the sliced meat to the cooking liquid. Reheat the brisket on the stovetop over medium-low heat, or in a preheated 325°F oven, until everything is warmed through and the cooking liquid has reduced and thickened up a bit, about 30 minutes in the oven, maybe less on the stovetop. Adjust seasonings as needed.
