TOP SIRLOIN ROAST
This is a wonderful garlic-infused roast that has replaced my traditional pot roast recipe. Be sure to use a good-quality top sirloin roast for the most tenderness and flavor. I love using the traditional potatoes and carrots but also add the red pepper and mushrooms for more nutritional value. Use an amber beer or a medium slightly-darker beer, such as Yuengling® Black and Tan.

Steps:
- Make small slits in the roast using a sharp knife; tuck slivered garlic into each slit. Rub minced garlic, paprika, salt, and ground black pepper over the entire roast. Set aside until roast comes to room temperature, 15 to 30 minutes.
- Preheat oven to 325 degrees F (165 degrees C).
- Arrange potatoes, carrots, and onions in an even layer in a 9x12-inch roasting pan. Dissolve beef bouillon cubes in hot water in a small bowl and pour over vegetables. Pour in beef broth and beer.
- Place roast on top of the vegetables, making sure it is not submerged in the broth mixture. Place bay leaf pieces around the roast.
- Bake roast in the preheated oven until internal temperature reaches 150 degrees F (66 degrees C) for medium, 45 to 60 minutes. Transfer roast to a platter; cover with aluminum foil, and allow to rest until internal temperature reaches 155 degrees (68 degrees C), about 10 minutes.
- Increase oven temperature to 425 degrees F (220 degrees C). Add red pepper and mushrooms to the roasting pan and return it to the oven. Bake until vegetables are tender and lightly browned, 15 to 20 minutes.
- Thinly slice the roast crosswise. Serve with vegetables; spoon pan juices over meat and vegetables.

SEARED SIRLOIN WITH JAPANESE DIPS
This recipe is based on the southern Japanese dish tataki, which means 'hit into pieces'. Serve with our spicy soy dressing and wasabi-laced soured cream for an extra hit of heat

- Rub the beef generously with oil and season well. Heat a heavy frying pan and sear the beef on all sides for about 8 mins in total for very rare, 10 mins for rare and 12 mins for medium-rare. Remove from the pan and set aside.
- While the meat is resting, prepare the accompaniments. For the ponzu dipping sauce, mix all the ingredients together with a splash of water until the sugar has dissolved, then set aside. For the wasabi cream, stir the ingredients together until completely mixed, then set aside.
- After the beef has rested for 10 mins, use your sharpest knife to carve it into thin slices. Fan the slices out on a serving platter, scatter with the cucumber, then the cress, followed by the sesame seeds. Bring to the table with the two sauces and the ginger in small serving dishes for dipping and spreading over the beef slices. Serve with chopsticks and sticky rice on the side, if you like.

JAPANESE-STYLE SIRLOIN RICE BOWL
Sirloin steak strips stir-fried with peppers, cabbage, and sprouts then tossed with a homemade sauce and served over rice. Japanese-Style Sirloin Rice Bowl is a quick and easy recipe for a meal packed with flavor.

- Combine soy sauce, sugar, sake and sesame oil in a small bowl. Set aside. Cook rice according to package directions.
- Heat wok, electric frying pan or large sauté pan to medium high heat. Heat vegetable oil, add sirloin steak strips and stir until strips are browned (about 2-3 minutes). Push strips to one side. Add scallions and peppers and stir-fry for 2-3 minutes. Add cabbage and sprouts, combining all ingredients in the pan. Stir-fry about 1 minute.
- Pour soy sauce mixture over steak and vegetables and toss. Serve in a bowl over warm rice and garnish with sesame seeds.
SKEWERED SESAME SIRLOIN
Another one of my recipes for the grill! I love grilling outdoors....something about being outside instead of in the kitchen makes me smile! This is an asian inspired marinade for sirloin, cut in to strips and threaded on skewers. I like to grill some zucchini or asparagus with this and serve with rice. Prep time is actually marinating time.

- Trim the excess fat from the steak; slice steak diagonally across the grain into 1/4 inch thick strips.
- Combine the soy sauce and remaining ingredients in a glass bowl. Add steak strips and toss to coat. Cover and marinate in the refrigerator for 1 1/2 to 2 hours.
- Remove steak strips from the marinade, reserving the marinade. Thread the steak strips onto skewers. Grill, uncovered, over medium-hot coals (350-400 degrees) for 9 minutes or to desired degree of doneness, turning and basting the steak strips frequently with the reserved marinade.
