GRILLED MUSHROOM RISOTTO



Grilled Mushroom Risotto image

A mushroom risotto can be taken in many different ways, depending on what kind of mushrooms you have and whether they are introduced at the very beginning of cooking or just added at the end, as I'm going to do here. The inspiration for this recipe came when I was in Japan and saw mushrooms being cooked completely dry on a barbecue or griddle pan. This way of cooking brings out a really fresh and nutty flavor in them; perfect for being dressed lightly with olive oil, salt and lemon juice or stirred into a risotto at the last minute before serving.

6 1/3 cups chicken stock
Handful dried porcini mushrooms
Olive oil
1 small onion, peeled and finely chopped
2 sticks celery, trimmed and finely chopped
14 ounces risotto rice
2/3 cup vermouth or white wine
Sea salt and freshly ground black pepper
4 large handfuls wild mushrooms (try chanterelles, shiitake, black trumpet or oyster - definitely no button mushrooms, please!), cleaned and sliced
Few sprigs fresh chervil, tarragon or parsley, leaves picked and chopped
1 lemon, juiced
2 tablespoons butter
2 handfuls freshly grated Parmesan, plus extra for serving
Extra-virgin olive oil

Steps:

  • Heat stock in a saucepan and keep it on a low simmer.
  • Place the porcini mushrooms in a bowl and pour in just enough hot stock to cover. Leave for a couple of minutes until they've softened. Fish them out of the stock and chop them, reserving the soaking liquid.
  • In a large pan, heat a glug of olive oil and add the onion and celery. Slowly fry without coloring for at least 10 minutes, then turn the heat up and add the rice. Give it a stir. Stir in the vermouth or wine - it'll smell fantastic! Keep stirring until the liquid has cooked into the rice. Now pour the porcini soaking liquid through a sieve into the pan and add the chopped porcini, a good pinch of salt and your first ladle of hot stock. Turn the heat down to a simmer and keep adding ladlefuls of stock, stirring and massaging the starch out of the rice, allowing each ladleful to be absorbed before adding the next. Carry on adding stock until the rice is soft but with a slight bite. This will take about 30 minutes.
  • Meanwhile, get a dry griddle pan hot and grill the wild mushrooms until soft. If your pan isn't big enough, do this in batches. Put them into a bowl and add the chopped herbs, a pinch of salt and the lemon juice. Using your hands toss everything together - this is going to be incredible!
  • Take the risotto off the heat and check the seasoning carefully. Stir in the butter and the Parmesan. You want it to be creamy and oozy in texture, so add a bit more stock if you think it needs it. Put a lid on and leave the risotto to relax for about 3 minutes.
  • Taste your risotto and add a little more seasoning or Parmesan if you like. Serve a good dollop of risotto topped with some grilled dressed mushrooms, a sprinkling of freshly grated Parmesan and a drizzle of extra-virgin olive oil.

ASPARAGUS & MUSHROOM RISOTTO WITH FRESH PARSLEY & LEMON



Asparagus & mushroom risotto with fresh parsley & lemon image

10g dried porcini
1 small onion
1 clove of garlic
1 stick of celery
200g asparagus
100g chestnut mushrooms
olive oil
1 vegetable stock cube or pot, organic
½ a bunch of flat-leaf parsley, (15g)
20g Italian hard cheese
150g risotto rice
50ml white wine, (optional)
1 lemon

Steps:

  • Place the porcini in a small bowl, just cover with boiling water and leave to rehydrate.
  • Peel and finely chop the onion and garlic, then trim and finely chop the celery. Snap off and discard the woody asparagus ends, cut off the tips and roughly chop the stalks. Roughly chop the chestnut mushrooms.
  • Heat a splash of oil in a medium pan over a medium-low heat, add the onion, celery and a splash of water, then cook for around 5 minutes, or until softened but not coloured, stirring occasionally.
  • Scoop out, finely chop and add the porcini to the pan with the soaking water, leaving any gritty bits behind.
  • Bring 600ml of water to the boil in a medium pan, add the stock cube or pot and stir to dissolve. Keep over a low heat.
  • Place another pan over a medium heat with a drizzle of oil, then add the garlic, mushrooms and a small pinch of sea salt and black pepper. Cook gently for a few minutes, or until softened.
  • Pick and finely chop the parsley leaves, then add the stalks to the stock. Finely grate the cheese.
  • Once the vegetables are soft, stir in the rice and and fry for 1 minute until translucent. Pour in the wine (or replace with 50ml stock), and keep stirring until absorbed.
  • Turn the heat up to medium, then add a ladleful of hot stock (avoid the parsley stalks!). Keep stirring and adding stock, a ladle at a time, waiting for the rice to soak it all up before adding the next ladleful. Continue until you've added two-thirds of the stock.
  • Stir the asparagus and cooked mushrooms into the pan. Keep adding the remaining stock until the rice is just cooked and the risotto is nice and oozy - if you run out of stock, use boiling water.
  • Remove from the heat and stir in most of the cheese. Season to taste with salt, pepper and a squeeze of lemon juice, then cover and leave to sit for 2 minutes. Divide between your plates, then serve with the parsley and remaining cheese on top.

1 small handful Parmesan cheese, freshly grated, plus extra for serving
extra virgin olive oil
1.5 litres organic chicken or vegetable stock, hot

Now pour the porcini soaking liquid through a sieve into the pan and add the chopped porcini, a good pinch of salt and your first ladle of hot stock. Turn the heat down to a simmer and keep adding ladlefuls of stock, stirring and massaging the starch out of the rice, allowing each ladleful to be absorbed before adding the next.
  • Carry on adding stock until the rice is soft but with a slight bite. This will take about 30 minutes. Meanwhile, get a dry griddle pan hot and grill the wild mushrooms until soft.   • Take your risotto and add a little more seasoning or Parmesan if you like. Serve a good dollop of risotto topped with some grilled dressed mushrooms, a sprinkling of freshly grated Parmesan and a drizzle of extra virgin olive oil.

The secret of a good risotto is to stand over it and give it your undivided (and loving) attention for about 17 minutes.

1 liter chicken stock (or vegetable as appropriate)
1 tablespoon olive oil
3 shallots, finely chopped (or 2 medium onions)
1 head celery, finely chopped (discard any tough outer sticks)
sea salt and black pepper
2 garlic cloves, finely chopped
400 g risotto rice
100 ml dry white vermouth or 100 ml dry white wine
70 g butter
100 g freshly grated parmesan cheese

Steps:

  • Stage 1.
  • Heat the stock.
  • Then in a separate pan heat the olive oil add the shallot or onion celery and a pinch of salt and sweat the vegetables for about 3 minutes.
  • Add the garlic and after another 2 minutes when the vegetables have softened add the rice.
  • Turn up the heat now.
  • At this crucial point you can`t leave the pan and anyway this is the best bit.
  • While slowly stirring continuously you are beginning to fry the rice.
  • You don`t want any colour at any point (so remember you`re in control and if the temperature seems too high turn it down a bit).
  • You must keep the rice moving.
  • After 2 or 3 minutes it will begin to look translucent as it absorbs all the flavours of your base (it may crackle at this point that`s fine).
  • Add the vermouth or wine keeping on stirring as it hits the pan it will smelt fantastic!
  • It will sizzle around the rice evapourating any harsh alcohol flavours and leaving the rice with a tasty essence.
  • I must admit I`m a sucker for dry vermouth. When it cooks into the rice it seems to give it a really full but subtle flavour and leaves a wicked sweetness that works perfectly with the rice. White wine is lovely probably more delicate and fresh.
  • Try both see what you think.
  • Stage 2.
  • Once the vermouth or wine seems to have cooked into the rice add your first ladle of hot stock and a pinch of salt (add small amounts of salt to taste white you are adding the stock).
  • Turn down the heat to a highish simmer (the reason we don`t want to boil the hell out of it is because if we do the outside of the rice wilt be cooked and fluffy and the inside will be raw).
  • Keep adding ladlefuls of stock stirring and allowing each ladleful to be absorbed before adding the next.
  • This will take about 15 minutes.
  • Taste the rice is it cooked?
  • Carry on adding stock until the rice is soft but with a slight bite.
  • Check seasoning.
  • Stage 3.
  • Remove from the heat and add the butter and the Parmesan saving a little of the latter to go on top if you like.
  • Stir gently.
  • Eat it as soon as possible while it retains its moist texture.
  • Serve it on its own or with a crisp green salad and a hunk of crusty bread.
  • If you follow this recipe I promise you`ll be making some of the best risottos out. The real secret of a good risotto I`m afraid is that you have to stand over it and give it your loving and undivided attention for about 17 minutes but it`s worth it. The recipe is in stages; I am going to give you five of my favourite risottos all variants of this basic recipe.
  • To find a dry white wine, a good rule of thumb is the greater the alcohol %, the drier the wine.

  • Peel 1 onion, trim 2 sticks of celery, then finely chop both and place in a large high-sided pan on a medium heat with 1 tablespoon of olive oil. Strip in half the thyme leaves (15g) and cook for 10 minutes, or until softened, stirring occasionally.
  • Put 20g of dried porcini mushrooms in a bowl, cover with boiling kettle water and leave to rehydrate.
  • Tear up or halve any larger mushrooms (350g in total), keeping any smaller, delicate ones whole, then stir into the pan. Drain, roughly chop and add the porcini, reserving the soaking liquor.
  • Simmer 1.2 litres of vegetable stock in a pan on a low heat, adding the reserved soaking liquor, discarding the last gritty bit.
  • Stir 300g of risotto rice into the mushroom pan for 2 minutes, then pour in 125ml of white wine and stir until absorbed.
  • Add a ladleful of stock and wait until it’s been fully absorbed before adding the next. Repeat this, stirring and massaging the starch out for the rice for 20 minutes, or until the rice is cooked but still holding its shape and the risotto is oozy.
  • Meanwhile, toast 30g of blanched hazelnuts in a frying pan over a medium heat until golden, then roughly bash in a pestle and mortar.
  • Squeeze the juice from 1 lemon into a small bowl, then mix in 4 tablespoons of natural yoghurt, 4 tablespoons of extra virgin olive oil and a pinch of sea salt and black pepper.
  • Divide 100g of baby spinach between 4 plates, dot over the dressing, then sprinkle over the hazelnuts.
  • Turn off the heat under the risotto, finely grate in 35g of Parmesan and strip in the remaining thyme leaves (15g), then beat in 20g of unsalted butter and season to taste with salt and pepper.
