2 1/2 pounds chuck roast ( (tenderized and diced finely))
21 ounces beef broth
30 ounces water
4 tablespoons vegetable oil
29 ounces whole tomatoes with the Juice (food process, strain seeds and pulp, measure two cups for Chili, save remainder for another recipe)
1 tablespoon paprika
5 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 teaspoon season salt
1/4 teaspoon garlic salt
1/4 teaspoon cayenne pepper
5 tablespoons Saltine crackers (finely crushed)
4 tablespoons masa harina
1 cup water (- more or less, just enough to make a medium thick, smooth sauce)

Steps:

  • Cut the chuck roast into small bite-sized pieces (diced).
  • In a 4-quart saucepan, brown the diced chuck roast in vegetable oil, stirring frequently until lightly browned.
  • Add beef broth and water.
  • Simmer beef for 1 hour on medium-low heat.
  • Place tomatoes with juice in blender and blend until pureed.
  • Strain the tomatoes to remove seeds and pulp.
  • After beef has been simmering for 1 hour, add 2 cups of the pureed tomatoes.
  • Add all the spices to meat and tomatoes and stir well.
  • Simmer for 45 to 50 minutes on low heat, stirring from time to time.
  • Combine the finely crushed saltine crackers, masa harina, and enough water to make a medium thick, smooth mixture (thickening sauce).
  • Slowly pour enough of the thickening sauce into meat and tomato mixture, to bring it to a thick state, stirring constantly. Depending on how much the liquid has been reduced, you may need less of the thickener.
  • Simmer on low heat and stir until chili reaches the desired consistency and ready to be served.

1 lb 80 / 20 ground chuck
1/3 lb pepperoni, finely ground [this can be easily done in a food processor]
3 Tbsp white onion, grated on microplane
1 Tbsp kosher salt
1 Tbsp light brown sugar
16 ounce can(s) tomato paste
1 Tbsp liquid smoke flavoring
1 1/2 tsp chili powder
1 tsp ground cumin
1/2 tsp celery seed
1/2 tsp ground white pepper
1/4 tsp cayenne pepper
3/4 c v8 juice
1/4 c finely ground cornmeal

Steps:

  • 1. Brown ground chuck in a skillet. Drain approximately half the residual oil. Add ground pepperoni and grated onion and brown for another minute or two.
  • 2. combine in kosher salt, brown sugar, chili powder, cumin, celery seed, cayenne and combine to meat mixture.
  • 3. Reduce heat and add tomato paste, liquid smoke and V8 juice and bring to a simmer.
  • 4. When chili has come to a low bubbling simmer, add cornmeal and cook low and slow for another 15 minutes.
  • 5. Ladle over hotdogs or grilled burgers. This is a welcome sauce for grated sharp cheddar cheese and minced onions, but a true Coney Dog uses classic yellow mustard and a sprinkling of onions. Enjoy!

This recipe is quick and easy. Only have to simmer for 30 minutes! It started as a very saucy Coney Island hot dog sauce. I prefer a meatier chili sauce, but if you prefer it saucy with less meat, reduce ground round to 1/2 pound meat.

3 cups water
1 (12 ounce) can tomato paste
½ cup sweet pickle relish
½ cup chopped onion
2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard

2 teaspoons salt
2 teaspoons white sugar

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add water, tomato paste, pickle relish, onion, Worcestershire sauce, mustard, chili powder, salt, and sugar; bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until sauce is thickened, about 30 minutes.

James Coney Island is a famous hotdog restaurant here in Texas. My family loves their hotdogs and chili, so I found this recipe at copykat.com to try and re-create their chili at home. While I don't think it is the exact recipe, I do think it comes pretty close!

4 tablespoons vegetable oil
2 cups tomatoes with juice (food process,strain seeds and pulp, measure two cups for Chili, save remainder for another recipe)
1 tablespoon paprika
5 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 teaspoon season salt
1/4 teaspoon garlic salt
1/4 teaspoon cayenne pepper
1/2 teaspoon m.s.g.
5 tablespoons saltine crumbs (finely ground)
4 tablespoons mesa flour
1 -1 1/4 cup water (use enough water with dry ingredients to mix into a medium thick, smooth sauce)

Steps:

  • In a 4 quart sauce pan brown diced chuck steak in vegetable oil, stir steak frequently until lightly brown.
  • Add beef broth and water.
  • Simmer beef mixture for 1 hour on medium low heat. After beef has been simmering for 1 hour, add 2 cups of tomatoes that have been processed in a blender with their juice. Strain after processing to remove seeds and pulp.
  • Add all spices to meat and tomatoes and stir well. Simmer for forty five to fifty minutes on low heat, stirring from time to time.
  • Slowly pour enough of the thickening sauce into meat and tomato mixture, to bring it to a thick state, stir constantly. Depending how much the liquid has been reduced, you may need less of the thickener .
  • Simmer on low heat and stir until chili reaches the desired consistently and ready to be served.
  • Great over hot dogs or served alone with your favorite accompaniments.

I was given 'Happy Days With The Naked Chef' and found that I enjoy Jamies style, he can be relied on for sensible recipes that work. I decided to try his Chilli Con Carne for my son and husband one weekend when the girls were away. Good comfort food, served over rice, DH found this spicy while I thought it could be pepped up a little more (sometimes I surprise myself!!).... adjust for your own taste! Jamie recommends chuck steak, minced, but I used ground beef that I had in the freezer. I don't think the sun-dried tomatoes are traditional, but they are a nice touch! This dish is ideal for make-ahead, and definitely tastes even better the next day!

2 medium onions, chopped
1 garlic clove, chopped
olive oil
2 teaspoons chili powder
1 red chili, de-seeded and finely chopped
1 teaspoon ground cumin

500 g minced beef
200 g sun-dried tomatoes packed in oil
2 (400 g) cans tinned tomatoes
1/2 stick cinnamon
1 cup water
2 (400 g) cans red kidney beans, drained

Steps:

  • In a large pot, fry onions and garlic in a little olive oil until soft.
  • Add chilli powder, fresh chilli, cumin and a little seasoning. Then add the meat and continue to cook, stirring, until it has browned.
  • Process the sun-dried tomatoes in your food processor, with a little oil from the jar, enough to loosen into a paste.
  • Add these to the beef with the tomatoes, cinnamon stick, and the water. Check the seasoning, and add more if you prefer.
  • Bring to the boil, cover, turn the heat down and simmer for about 1 and a half hours.
  • Add the kidney beans about 1/2 an hour before serving, they are already cooked and only need to be warmed through.
  • Serving suggestions, steamed rice, crusty bread, a tossed salad, some guacamole or/and sour cream/yoghurt.

The story of how the Coney Island hog dog got to the Midwest is pretty straightforward, but no one really knows exactly how the wiener first came to be topped with what is basically a hot meat relish. I have no idea how authentic this is, and have never been to Detroit, or even Flint. I have had Nathan's® version, which I enjoyed, but the word on the street is that it's not nearly as good as the relatives it spawned.

2 cups water, or more to taste
½ cup diced onion
⅓ cup ketchup
2 tablespoons butter
2 cloves garlic, crushed

  • Bring a large pot of water to a boil. Cook hot dogs in boiling water until heated through, 5 to 7 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Arrange hot dog buns on a baking sheet.
  • Cook buns in the preheated oven until soft and warm, 2 to 3 minutes.
  • Place 1 bun on a plate. Place a hot dog in the bun and top with meat sauce. Drizzle yellow mustard and diced onion over the meat sauce. Repeat with remaining hot dogs.
