JAM FILLED OATMEAL BARS



Jam Filled Oatmeal Bars image

Buttery brown sugar Oatmeal Bars with a fruity jam filling.

1 cup all purpose flour
1 cup old fashioned oats
1/4 teaspoon salt
3/4 teaspoon baking soda
10 tablespoons unsalted butter (melted)
1/2 cup light brown sugar (packed (it should be soft and fresh))
1 1/2 teaspoons pure vanilla extract
generous 3/4 cup jam or preserves

Steps:

  • Preheat oven to 350°F. Line an 8x8 pan with foil or parchment paper (leaving overhang on two sides for easy removal). Spray with nonstick spray.
  • In a medium bowl, combine, flour, oats, salt and baking soda.
  • In a large bowl, whisk butter, brown sugar and vanilla until well combined (this will take at least one full minute). Add dry ingredients and stir with a rubber spatula or wooden spoon until combined.
  • Pull out about 3/4 cup (a little less than half) of the cookie dough and set that portion aside (it will be the topping). Dump the remaining dough into the prepared pan and press it down into a flat even layer. Bake for 10 minutes.
  • Remove from the oven and carefully spread the jam on top of the cookie base. Take the reserved cookie dough and crumble it over the top of the jam layer. Return to the oven and bake for 14-16 more minutes, until the topping is light golden brown. Place the pan on a wire rack to cool. These bars are soft when they are warm (they likely won't hold together). To firm them up they can be stored at cool temp or refrigerated.

3 oz cream cheese, softened
1/2 c butter, softened
1 c all purpose flour
raspberry, strawberry or apricot preserves

Steps:

  • 1. Combine the cream cheese, butter and flour and blend completely. Chill.
  • 2. Roll out the dough, half at a time, to about 1/4 inch thick. Cut into small rounds or other dainty shapes.
  • 3. Make a small depression in the center of each cookie and place 1/2 teaspoons preserves. Bake on an ungreased cookie sheet at 350 degrees for about 20 minutes.
  • 4. Cool, and dust with confectioners' sugar if desired.

1/4 cup powdered sugar
1/4 cup strawberry jam

Steps:

  • 1. With an electric mixer, cream butter and splenda. Beat in vanilla. Gradually add pecans and flour, blending thoroughly. Cover tightly and chill so dough will be easier to handle (about 1-2 hours or for up to 3 days).2. On a floured board, roll dough to a 1/8-inch thickness. Using a favorite cookie cutter, cut the dough into shapes and transfer to an ungreased baking sheet. (The cookies will be sandwiched together. If using different cookie cutters, be sure to cut out even numbers of cookies using the same cookie cutter.) Cut out about a 1/2-inch hole in the center of half of the cookie shapes. You can use the cap from the vanilla extract or other bottle if you don't have a tiny round cutter. Bake cookies at 375 F. for about 12 minutes or until lightly browned. Transfer to cooling racks to cool completely.3. Gather the cookies with holes in one area. Sift powdered sugar over the tops of these cookies. Spread the bottom cookies with jam. Place a sugar-topped cookie on each jam-topped cookie to form a sandwich. Store in an airtight container.

  • In a small saucepan, heat the milk until steaming and small bubbles form around the edges (not quite to the boil). Remove from heat and let cook to lukewarm.
  • Butter or spray two 9-inch by 5-inch loaf pans and set aside (you can use 8x4, if that's all you have. It will be a little tight lengthwise, but it should work).
  • In the bowl of a stand mixer (or a large bowl), combine both flours, yeast, sugar, and salt. Add the lukewarm milk, eggs, vanilla, vegetable oil (and the orange zest, if using). Mix then knead by hand, or using your mixer. Mix until the dough is smooth but slightly sticky. Add more flour as needed. The more moist your dough is, the more tender your bread will be, so only add enough flour to bring the dough to a point where it can be kneaded (it should be moist, but shouldn't stick to your hands). Place the dough in an oiled bowl, cover with plastic wrap and let it rise in a warm place until doubled in size, about 1 hour.
  • Turn the dough out onto a lightly floured surface and roll out into a rectangle about 16 inches by 16 inches. It should be about 1/2 inch thick. Using a pastry cutter, a pizza cutter, or a knife, cut the dough into 4-inch x 4-inch squares. You'll have 16 squares.
