- In a large bowl, beat the cream cheese, mayonnaise, cheddar, chiles, peppers and 1/4 cup Parmesan until blended. Spoon into an ungreased 1-1/2-qt. baking dish., In a small bowl, combine the bread crumbs, oil and remaining Parmesan. Sprinkle over cheese mixture. Bake, uncovered, at 350° for 20-25 min. or until golden brown. Sprinkle with green onions, if desired. Serve with chips or crackers.

This has all the flavor of jalapeno poppers in an easy to make dip! I have mixed the Parmesan cheese in with the dip and omitted the cracker and butter topping, but baked as usual, too.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Remove bacon with a slotted spoon to a plate lined with paper towels to drain.
- Stir bacon, cream cheese, mayonnaise, Cheddar cheese, mozzarella cheese, green onion, and jalapeno peppers together in a bowl; spread into a 9-inch round baking dish.
- Mix crackers, Parmesan cheese, and butter together in a bowl; spread over the top of the cream cheese mixture.
- Bake in preheated oven until bubbly, 20 to 30 minutes.

JALAPEñO POPPER DIP
Taking a cue from the creamy, spicy flavors of jalapeño poppers, this dip is sinfully good and blissfully easy. Just mix a few of the roasted chiles with room-temperature cream cheese, cheddar cheese, sour cream, garlic powder, and drained jarred pimientos, then slide it all into the oven until the casserole dish bubbles.

- Preheat broiler with rack 6 inches from heating element. Place jalapeños on a rimmed baking sheet. Broil, flipping once, until charred all over, 6 to 8 minutes. Transfer to a bowl, cover, and let stand 10 minutes.
- Remove and discard skins, stems, and seeds from chiles; transfer to a food processor with cream cheese, sour cream, cheddar, pimientos, salt, and garlic powder. Purée until smooth; pour into a 1-quart ovenproof baking dish.
- Switch oven to 375°F. Combine panko, parsley, and oil; sprinkle over dip. Bake until golden and warmed through, 15 to 20 minutes. Serve immediately with chips and crudités.
