SUMMER BERRY CRISP
Juicy berries are marvelous nestled under a crispy top. This dessert is easy enough for a beginning baker to make and serve with pride.

Steps:
- 1. Preheat the oven to 350°F. Butter a 9-inch Pyrex pie plate.
- 2. Gently combine the berries with the sugar, flour and cinnamon; place in the prepared pie plate.
- 3. Prepare the topping: Combine the oats, flour, both sugars and salt in a bowl. Use a pastry blender or 2 knives to work in the butter until topping resembles coarse meal. Sprinkle evenly over the berries.
- 4. Place the pie plate on a baking sheet. Bake in the center of the oven until the fruit is bubbling and the topping is golden brown, about 1 hour. Remove the crisp to a rack to cool slightly. Serve in dessert bowls with whipped cream or ice cream.

- Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
- In large bowl, gently stir raspberries, blueberries and 1/4 cup sugar. Spoon into baking dish. Sprinkle with vanilla.
- In medium bowl, mix flour, brown sugar and pumpkin pie spice. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse meal. Add oats; toss well. Sprinkle over berry mixture.
- Bake 30 minutes or until filling is bubbly and topping is golden. Serve warm.

- Preheat oven to 400°F.
- Spread frozen berries in a single layer on a paper towel-lined baking sheet; thaw for 30 minutes at room temperature.
- While berries are thawing, make oatmeal topping: Mix together in a large bowl flour, sugars, allspice and salt; stir in rolled oats. Blend butter into flour mixture with a pastry cutter until large, moist clumps form.
- Returning to the crisp -- prepare pears by peeling and cuting into 3/4" pieces. Combine pears in a large bowl with lemon juice, thawed berries, sugar and flour; toss well.
- Transfer pear/berry mixture to a 2-quart baking dish spritzed with baking spray for easy clean-up.
- Sprinkle evenly with chilled topping.
- Bake until fruit is tender and topping is golden (about 45 minutes). Cool at least 20 minutes, and serve with vanilla ice cream or frozen yogurt (if desired).

TRIPLE BERRY CRISP
This is very versatile. It has a double crisp where 1/2 of the crisp goes on the bottom. If you are not a fan of this or your bottom layer is to soggy then just make it a single layer. Any berry combination should work fine and I've heard it used with peaches as well. If you love nuts but your family doesn't, try what I do and eat yours with pecan or maplenut icecream YUM! Also it works for fresh or frozen berries.

- Preheat oven to 350.
- Mix the berries, 5 t white sugar, lemon juice, and 2 T flour in a large bowl and set aside.
- Mix remaining flour, oats, brown sugar, and cinnamon and then cut in butter till crumbly. Then add nuts if desired.
- Sprinkle 1/2 of this mixture in a 9 by 13 and bake for about 15 minutes.
- Remove from oven and distribute berry mixture evenly over the crust. Sprinkle on remaining crumbles and bake for about another 30 minutes or till bubbly.
- Remove and serve hot or cold with whipped cream or icecream.

- Preheat oven to 375.
- For filling, combine sugar and cornstarch in a small bowl. Add berries and toss to coat evenly.
- For topping and bottom layer, combine oats, brown sugar, flour, cinammon, sugar, ginger, and salt in a bowl. Cut in cold butter using two knives -- then mix with fork until mixture resembles coarse crumbs.
- Pat half of the oat mixture on bottom of a 2-quart glass pan. Top with berry concoction. Finish off by crumbling the remainder of the oats on top of the berries.
- Bake 20-25 minutes until oats are golden brown and berries are bubbling around edges.
MIXED BERRY CRISP
My husband is completely addicted to pies. Unfortunately, it's a little hard to have a whole pie hanging around the house with only two people to eat it. Here's a lighter alternative to a traditional fruit pie. Berries are the best choice for low-carb diets. On top of being low in sugar, they are rich in vitamins and antioxidants.

- Preheat oven to 375 degrees.
- Toss the berries with the cornstarch to evenly coat. Put the berry mixture in a large greased ramekin or a small greased baking dish (I used a 16 oz. ramekin).
- In a small bowl, combine the butter, oats, brown sugar, flour, cinnamon and nutmeg. Mix lightly with a fork until the mixture is crumbly.
- Top the berries with the crisp mixture. Sprinkle the top of the crisp with water.
