ONE PAN CHEESY JALAPEñO CHICKEN



One Pan Cheesy Jalapeño Chicken image

This cheesy jalapeño chicken is made in one pan, is bursting with flavor, smothered in melty cheese, and made in just 20 minutes! Try it tonight!

1 lime (sliced)
3 1/2 Tbsp vegetable oil (divided)
3 boneless skinless chicken breasts (cut in half and pounded to be 1/2 inch thick)
1 tsp chili powder
1 tsp dried oregano
3/4 tsp kosher salt
1/2 tsp ground cumin
1/2 tsp black pepper
1/2 tsp dried minced onion
1/4 tsp ancho chile powder
1/2 cup all-purpose flour
1 1/2 - 2 cups frozen corn kernels, thawed ((fresh corn works as well))
2 jalapeños (seeds removed and sliced lengthwise into strips)
2 cloves garlic (minced)
3 Tbsp lime juice ((juice of 2-3 limes))
1/2 cup water
1 - 1 1/2 cups shredded Mexican blend cheese ((or any cheese you prefer))
minced fresh cilantro, for garnish
extra lime wedges, for garnish

Steps:

  • To a mixing bowl, add chicken, chili powder, oregano, kosher salt, ground cumin, black pepper, dried minced onion, and ancho chile powder. Toss and massage spice mixture into all sides of chicken.
  • Add flour to a shallow bowl or plate and lightly dredge chicken in flour. Let chicken sit while you heat up your pan.
  • Heat large oven-safe skillet over MED-HIGH heat. Add lime slices to pan and char for 1-2 minutes per side, until charred and brown, as desired. Remove to a plate.
  • Add 2 ½ Tbsp of the vegetable oil to the hot pan and let heat through until shimmering.
  • Add chicken pieces to the hot pan, being careful not to overcrowd the pan (you may need to do 2 batches, depending on the size of your pan). Cook about 3 minutes per side, until golden brown, then remove to plate.
  • Move oven rack to the upper third part of the oven and preheat broiler to HIGH.
  • Add remaining 1 Tbsp vegetable oil and then add corn kernels, jalapeno slices and garlic. Cook, stirring often, about 2-3 minutes, until corn begins to lightly brown.
  • Add chicken back to the pan, and pour in lime juice and water. Cook several minutes (this time can vary depending on your stove - mine took 2 minutes), until liquid is mostly absorbed.
  • Sprinkle with shredded cheese and broil for about 2-3 minutes, until cheese is melted.
  • Garnish with minced fresh cilantro and serve with lime wedges or charred lime slices.

1 chicken breast, cooked and diced
12 ounces cream cheese
2 jalapenos
3 tablespoons chopped onions
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1 1/2 cups monterey jack cheese
6 medium pita bread, cut and separated
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients, except pitas, and blend until smooth in a food processor.
  • Spread on pita and place on cookie sheet.
  • Bake until puffed and bubbly about 7-10 minutes.

2 teaspoons ground cinnamon
2 teaspoons chili powder
1 teaspoon ground cumin
2 teaspoons salt
1 teaspoon black pepper
1 whole chicken, cut into pieces
1 cup chicken broth
2 tablespoons honey
2 limes, juiced
½ jalapeno pepper, minced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix cinnamon, chili powder, cumin, salt, and pepper. Rub chicken pieces with the mixture, and arrange on the prepared baking sheet.
  • In a medium saucepan over medium-high heat, blend chicken broth, honey, lime juice, and jalapeno. Cook and stir until thickened.
  • Place chicken in the preheated oven and cook about 15 minutes. Begin basting periodically with the chicken broth mixture. Continue cooking 30 minutes, or until the chicken is no longer pink and juices run clear.

Steps:

  • Preheat oven to 350 degrees. Split pita breads in half horizontally; brush cut sides with olive oil. Cut each round into eight wedges.
  • Arrange, cut sides up, on two rimmed baking sheets. Sprinkle with salt and pepper. Bake until golden and crisp, 10 to 12 minutes.

4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
1 tablespoon canola oil
2 medium onions, chopped
1/2 cup reduced-sodium chicken broth
2 jalapeno peppers, seeded and minced
2 teaspoons ground cumin
3 ounces reduced-fat cream cheese, cubed
1/4 cup reduced-fat sour cream
3 plum tomatoes, seeded and chopped
2 cups hot cooked rice

Steps:

  • Sprinkle chicken with salt. In a large nonstick skillet over medium-high heat, brown chicken in oil on both sides. , Add the onions, broth, jalapenos and cumin. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 165°, 5-7 minutes. Remove chicken and keep warm., Stir cream cheese and sour cream into onion mixture until blended. Stir in tomatoes; heat through. Serve with chicken and rice.

  • Roast Garlic: Preheat the oven to 350 degrees Fahrenheit. Slice the top of a head of garlic off so that the cloves are exposed and gently rub your fingers back and forth over the sides to remove as much of the paper as you can. Drizzle the cloves with olive oil, and wrap the head tightly in aluminum foil. Roast the garlic until the cloves are caramel in color, about 45 minutes. Allow the garlic to cool completely before squeezing out the cloves. Set aside.
  • Marinate the Chicken: For the chicken, add the chicken to a large baking dish or resealable plastic bag. Whisk together 3 tablespoons of the olive oil, the lemon zest, and juice, garlic, dill, vinegar, honey, salt and pepper. Pour it over the chicken and toss it to coat. Place the dish or bag in the refrigerator and marinate for at least 2 hours or overnight.
  • While the chicken is marinating, prep the tzatziki. Combine all of the ingredients together in a large bowl and mix them together until combined. Store the dip in the fridge until ready to use.
  • Prepare the Whipped Feta: For the whipped feta, preheat the broiler in your oven to high and move an oven rack directly below it. Place the jalapeño peppers on a baking sheet. Once the broiler is hot, set the baking sheet underneath to roast the peppers. As soon as the skin begins to char and bubble, pull the baking sheet out and rotate the peppers to roast all sides. This should take about 5 minutes. Immediately remove the peppers and place them in a resealable plastic bag (note: or bowl covered with plastic wrap) for 2o minutes. The bag will steam up.
