BACON CHEDDAR JALAPENO CORNBREAD



Bacon Cheddar Jalapeno Cornbread image

This is the result of combining a number of my favorite cornbread recipes. The first time I made it, I had people begging for the recipe. The problem was that it didn't exist, as I had just improvised it as I went along. Here's my attempt to put it down in words.

5 slices bacon
3 cups all-purpose flour
1 cup yellow cornmeal
¼ cup white sugar
2 tablespoons baking powder
2 teaspoons kosher salt
1 cup milk
1 cup buttermilk
1 cup unsalted butter, melted
3 extra large eggs, lightly beaten
1 (8 ounce) package shredded sharp Cheddar cheese
3 jalapeno peppers, diced

Steps:

  • Fry bacon in a large cast-iron skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate; reserve remaining bacon grease in skillet. Crumble bacon.
  • Preheat oven to 350 degrees F (175 degrees C). Place skillet with bacon grease in oven.
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Whisk milk, buttermilk, butter, and eggs in another bowl; stir milk mixture into flour mixture until just combined. Batter will be slightly lumpy. Fold in Cheddar cheese and jalapeno peppers. Allow batter to rest at room temperature for 10 minutes.
  • Pour batter into hot skillet and sprinkle with crumbled bacon, gently pressing bacon into batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pan for 10 minutes before slicing.

1 cup pastry flour
1/2 cup yellow cornmeal
1/8 cup granulated sugar
1/3 tablespoon baking powder
1/3 teaspoon baking soda
1/3 teaspoon salt
5 ounces buttermilk
1/3 cup shredded Cheddar
1/3 cup shredded Monterey Jack cheese
1/8 cup chopped jalapenos
2 green onions, sliced
1 large egg
1/4 bunch fresh cilantro, chopped
1/4 cup melted butter
Nonstick cooking spray, for the muffin tin

Steps:

  • Preheat the oven to 350 degrees F.
  • Sift flour, cornmeal, sugar, baking powder, baking soda and salt together in a large bowl. Combine buttermilk, Cheddar, Monterey Jack, jalapenos, green onions, egg, cilantro and melted butter in a medium bowl. Fold wet ingredients into dry ingredients with a rubber spatula until just combined. (Do not overmix.)
  • Spray a muffin tin with cooking spray. Evenly fill 6 muffin cups to the top. Bake for 20 minutes.

JALAPENO CORN MUFFINS

2 tablespoons unsalted butter
1/3 cup finely chopped onions
1 cup fresh corn kernels
3/4 teaspoon plus pinch salt
1 cup all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
Pinch cayenne pepper
1/3 cup shredded Cheddar
1 cup buttermilk
1/4 cup vegetable oil
2 large eggs, lightly beaten
1 tablespoon minced seeded green jalapenos
1 tablespoon minced seeded red jalapenos
3 tablespoons honey

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease 14 regular sized muffin tin cups.
  • In a small skillet, melt the butter over medium-low heat. Add the onions and cook until soft and golden brown, 3 to 4 minutes. Add the corn and a pinch of salt and cook 3 to 4 minutes, stirring occasionally. Remove from the heat and set aside to cool.
  • In a large bowl, stir together the flour, cornmeal, baking powder, salt, cayenne pepper, and cheese. In a second bowl, whisk together the buttermilk, oil, eggs, jalapenos, and honey. Add the buttermilk mixture to the flour mixture, stirring just until moistened. Stir in the cooled onions and corn.
  • Spoon the batter into the prepared tins, filling 3/4 of the way full. (If there are empty cups in a tin, fill with water.) Bake the muffins until golden and a toothpick inserted into the center comes out clean, 12 to 15 minutes. Transfer to a wire rack to cool and serve warm.

MINI BACON-JALAPENO-ONION CORN MUFFINS

1 clove garlic, minced
4 tablespoons butter, melted
1 cup frozen corn, thawed
1 cup buttermilk
3 eggs, lightly beaten
5 slices crispy bacon, crumbled
6 ounces shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray 48 mini muffin tin cups with nonstick cooking spray.
  • Mix cornmeal, sugar, baking soda, and salt together in a large bowl. Stir in jalapenos, onion, and garlic. Add melted butter and mix well.
  • Stir corn, buttermilk, eggs, and bacon into the cornmeal mixture until incorporated. Add shredded Monterey Jack cheese and mix batter well.
  • Use a 1-tablespoon cookie scoop to fill muffin cups about 3/4 full with batter.
  • Bake in the preheated oven until puffed and golden brown, 18 to 20 minutes. Remove from muffin tins and cool on a rack.

150g (¾ cup) fresh corn kernels or thawed frozen corn kernels
3 slices thick-cut bacon, cut into ¼-inch pieces
150g (1 cup plus 3 Tbsp) all-purpose flour
115g (½ cup plus 1 Tbsp) granulated sugar
75g (½ cup) cornmeal
95g (¾ cup plus 2½ Tbsp) dried milk powder
12g (1 Tbsp) baking powder
5g (1 tsp) fine sea salt
2 eggs, whisked
90ml (¼ cup plus 2 Tbsp) canola oil
150ml (½ cup plus 2 Tbsp) water
60g (¾ cup) grated cheddar cheese, plus more for topping
1 jalapeño, seeded and diced (40g / ¼ cup)
5g (¼ bunch) chives, chopped

Steps:

  • Preheat the oven to 350°F.
  • Place the corn on a baking sheet and roast in the oven for 15 minutes, until the kernels have toasty brown spots. Set aside to cool.
  • Line a plate with paper towels.
  • Cook the bacon in a frying pan over medium heat, stirring occasionally, until the fat has been rendered and the edges are golden brown, 6 to 8 minutes. Using a slotted spoon, transfer the bacon to the paper towels to drain. Set aside.
  • Coat a muffin pan with cooking spray and set aside.
  • Put the flour, granulated sugar, cornmeal, milk powder, baking powder, and salt in a large bowl and mix to combine. Make a well in the center and add the eggs, oil, and water; mix until well incorporated.
  • Add the corn, cheese, jalapeño, and chives; mix gently just until incorporated.
  • Spoon a scant 75g (⅓ cup) of batter into each muffin cup. Sprinkle the tops with additional cheese and the bacon.
  • Bake the muffins until golden brown around the edges and a cake tester or toothpick inserted in the center comes out clean, about 20 minutes, rotating the pan after 10 minutes to ensure even baking. Remove the muffins from the pan and cool completely on a cooling rack. Serve immediately or store in an airtight container at room temperature for 1 day (or in the refrigerator for up to 3 days).
