This recipe is for a good, classic hummus and homemade pita chips that are perfect for dipping!

16 pita rounds ((cut into 8 wedges each, then split in half))
½ cup olive oil
Salt
Cinnamon sugar ((3 tablespoons of sugar mixed with 2 teaspoons of cinnamon and a pinch of salt))
2 cans chickpeas ((31 ounces/880g, drained))
3 cloves garlic
½ cup extra virgin olive oil
½ cup ice water
2 tablespoons za'atar
½ teaspoon paprika
¼ teaspoon cumin
¼ teaspoon black pepper
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F. Spread the pita chip pieces in one even layer on two baking sheets. Drizzle with olive oil and toss to evenly coat the pita pieces. Sprinkle one pan with salt and one pan evenly with the cinnamon sugar mixture.
  • Bake for about 20 minutes, until crunchy and golden brown. Let cool completely on the baking sheets. Store in airtight containers.
  • Add the chickpeas to the bowl of your food processor with the garlic. Process until the peas and garlic are finely ground. With the food processor on, drizzle the olive oil in, followed by the water.
  • Scrape the bowl as needed to ensure the texture is smooth. Add the za'atar, paprika, cumin, black pepper, and salt, and blend until smooth and combined.

4 tablespoons unsalted butter, at room temperature
3 tablespoons fresh herbs (chives, parsley, rosemary, thyme, cilantro, etc.)
4 pitas (I like to use whole wheat for a nuttier flavor), cut into eighths
Salt, for sprinkling
Two 15-ounce cans chickpeas, drained and juice reserved
2 cloves garlic
1/4 cup lemon juice
1/4 cup tahini
1 teaspoon ground cumin
1/2 cup extra-virgin olive oil
1 teaspoon salt

Steps:

  • For the pita crisps: Preheat the oven to 400 degrees F. In a food processor, combine the butter and herbs and pulse until well combined. Spread the herb butter onto the pita slices. Sprinkle with salt and bake until crisp, about 10 minutes.
  • Meanwhile, for the hummus: In a food processor, combine the drained chickpeas, garlic, lemon juice, tahini and cumin. Pulse until smooth. With the food processor running, add the olive oil in a steady stream. Season with the salt and puree until very smooth. If the mixture is too thick, add 2 tablespoons at a time of the reserved chickpea juice until desired consistency.

1 can (19 oz) Progresso™ chickpeas (garbanzo beans), drained, 1/4 cup liquid reserved
1/2 cup tahini
1/4 cup extra-virgin olive oil
3 tablespoons lemon juice
2 cloves garlic, finely chopped
1 teaspoon regular table salt
1/8 teaspoon pepper
Chopped fresh parsley
4 whole wheat pita (pocket) breads (6 inch)
4 tablespoons extra-virgin olive oil
1/2 teaspoon kosher (coarse) salt

Steps:

  • In food processor or blender, place beans, reserved bean liquid, tahini, 1/4 cup oil, the lemon juice, garlic, table salt and pepper. Cover; blend on high speed, stopping blender occasionally to scrape down sides, until smooth. Spoon dip into serving dish. Sprinkle with parsley.
  • Heat oven to 375°F. Brush both sides of each pita bread with 1 tablespoon oil. Cut each pita bread into 8 wedges; separate wedges to make 16 wedges for each pita bread. Places wedges, oil sides up, on ungreased cookie sheets. Sprinkle with kosher salt.
  • Bake 10 to 12 minutes or until pita chips are crisp and lightly browned. Serve with hummus.

Classic Hummus with Spiced 'n Baked Pita Chips image

2 cups canned chickpeas, drained and rinsed
1/2 cup tahini (sesame paste)
1/4 cup oil, from the top of the sesame paste or extra-virgin olive oil
Juice of 1 lemon
1 clove raw garlic, or 3 cloves roasted garlic
1 tablespoon ground cumin, plus more for garnish
1/2 teaspoon sea salt
Freshly ground black pepper
Water, for thinning the hummus
Paprika, for garnish
Extra-virgin olive oil, for drizzling
Spiced 'n Baked Pita Chips, to serve, recipe follows
8 mini whole-wheat pitas
1 tablespoon extra-virgin olive oil
1 teaspoon zatar, available in Middle Eastern or specialty stores
Sea salt

Steps:

  • In the bowl of a food processor, add the chickpeas, tahini, oil, lemon juice, garlic, cumin, salt, and pepper. Process until smooth and creamy, adding some water to make it the consistency of dip. Taste and adjust the seasoning with more lemon, cumin, salt, and pepper. Scoop the hummus into a bowl. (May be covered and refrigerated at this point for up to 3 days.)
  • When ready to serve, garnish with cumin, paprika, and a drizzle of olive oil. Serve with Spiced 'n Baked Pita Chips or crudite.
  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Cut the pitas into quarters and spread them onto the baking sheet.
  • In a small bowl, whisk together the olive oil, zatar, and sea salt, to taste. Drizzle this mixture over the pita pieces and toss them together with your hands to coat them evenly. Bake them until golden brown and crisp, about 8 to 10 minutes. Remove them from the oven and let cool.

AVOCADO HUMMUS WITH CRISPY PITA CHIPS

1 teaspoon chili or dried chipotle powder
Zest of 2 large limes, optional
2 whole wheat or plain pita breads, split in half horizontally
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
One 15-ounce can cannellini beans, rinsed and drained
1 large or 2 small avocados, seeded, peeled and coarsely chopped
1/2 packed cup arugula
1/3 cup fresh flat-leaf parsley leaves
2 tablespoons fresh lemon juice
1 clove garlic, smashed
1 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
2 tablespoons extra-virgin olive oil

Steps:

  • For the pita chips: Place an oven rack in the center of the oven and preheat to 350 degrees F.
  • In a small bowl, whisk together the oil, chili powder and lime zest if using. Brush the mixture on both sides of the bread halves using a pastry brush. Sprinkle the breads with the salt and pepper. Cut each bread half into 8 wedges and place in a single layer on a baking sheet. Bake until crisp and golden, 15 to 18 minutes.
  • For the hummus: Combine the beans, avocado, arugula, parsley, lemon juice, garlic, salt and pepper in the bowl of a food processor. Pulse until the mixture is coarsely chopped. Gradually add the olive oil until the mixture is creamy. Season with salt and pepper.
  • Spoon the hummus into a serving bowl and serve the pita chips alongside.

EDAMAME HUMMUS WITH PITA CRISPS

From Cooking Light. Made for the super bowl party and it was a big hit with those that like edamame. It's green when it's done, and a bit thick. Next time, I will thin it a bit more with a bit more water. Delicious with chips too.

1 1/2 cups frozen blanched shelled edamame
4 teaspoons olive oil, divided
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon coriander
2 garlic cloves, peeled
1/2 cup fresh flat-leaf parsley
3 tablespoons tahini
3 tablespoons water
3 tablespoons fresh lemon juice
1/2 teaspoon paprika

Steps:

  • Preheat oven to 350°F.
  • Arrange pita halves in a single layer on oven rack.
  • Bake at 350°F for 15 minutes or until crisp, and cool completely on a wire rack.
  • Break each pita in half into about 6 chips each.
  • Prepare edamame according to package directions, omitting salt.
  • Place 3 tsp oil, salt, cumin, coriander, and garlic in a food processor, and pulse 2 or 3 times or until coarsely chopped.
  • Add the edamame, parsley, tahini, water, and juice; process 1 minute or until smooth.
  • Spoon the hummus into a serving bowl.
  • Drizzle with remaining 1 tsp oil, and sprinkle with paprika.
  • Serve with pita crisps.

3 pitta breads
5 tbsp olive oil
400g can chickpeas , rinsed and drained
½ tsp ground cumin
1 garlic clove , crushed
juice 1 lemon

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Slice each pitta in half so it separates into two really thin pieces of bread, then cut into strips or wedges. Lightly grease a shallow baking tray or sheet and arrange the pitta slices on top. Cook in the oven for 10 mins until crisp, then leave to cool. Can be stored in an airtight container for 4-5 days.
  • To make the hummus, tip the rinsed chickpeas into a food processor. Add all the remaining ingredients and 3 tbsp cold water and whizz together. Keep adding water, a tbsp or so at a time, until you get a smooth spoonable paste. Tip into a bowl and serve. Can be kept in the fridge for up to 3 days.

High's Hummus with Pita Crisps image

High's Café is located in Comfort, Texas (about twenty-three miles south of Fredericksburg). In addition to their tasty sandwiches and homemade soups, friends Brent and Denise make the best hummus ever. A wonderful informal party appetizer, hummus is easy to make, healthy, and a favorite for kids and adults alike. I serve it with toasted pita wedges and either carrot or celery sticks (or both) for dipping.

Yield makes about 3 cups

Number Of Ingredients 15

2 (16-ounce) cans chickpeas (about 4 cups), rinsed and drained
1 tablespoon minced fresh garlic (about 3 medium cloves)
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon Hungarian paprika
2 teaspoons kosher salt
1/4 cup freshly squeezed lemon juice (about 1 large lemon)
2 tablespoons tahini
6 tablespoons extra-virgin olive oil, plus more for drizzling
2 tablespoons chopped fresh Italian parsley leaves, for garnish
Greek olives, for garnish
Chopped fresh tomatoes, for garnish
8 white or whole wheat pita pockets
About 1/4 cup olive oil, for brushing
Kosher salt, for sprinkling

Steps:

  • TO MAKE THE HUMMUS: Combine the chickpeas, garlic, cayenne pepper, cumin, paprika, salt, lemon juice, and tahini in the work bowl of a food processor fitted with the metal blade. Add just enough olive oil through the feed tube to get the mixture turning, usually about 2 tablespoons. (Too much oil at the beginning will prevent the finer pieces of chickpea from grinding smoothly, creating a coarse blend.) Scrape down the sides. Run the processor until the chickpeas are ground completely. Once the mixture is smooth, slowly add up to 4 tablespoons more olive oil to achieve a silky consistency. The folks at High's say, "Run your machine a long time. We almost whip it." I let the machine run for another 3 minutes or so. Spoon the hummus into a serving bowl; set aside.
  • TO MAKE THE PITA CRISPS: Preheat the oven to 350°F. With a knife, slit open the pitas along their edges and pull each apart into 2 rounds. With a pastry brush, lightly paint both sides of each pita half with olive oil. Sprinkle both sides with salt and cut each round into 8 wedges. Lay the pita wedges in a single layer on baking sheets. Bake until light golden brown and crisp, about 10 minutes.
  • To serve, drizzle olive oil over the hummus and sprinkle with chopped parsley. Accompany with pita crisps, Greek olives, and chopped fresh tomatoes.
  • Tahini is made by pulverizing sesame seeds into a paste with a consistency similar to peanut butter. Many regular grocery stores stock tahini, so ask for help if you can't easily find it yourself, or try stores that specialize in Middle Eastern food.
