JACKASS ROLL
Steps:
- In shallow pan with hot water gentle re-hydrate tapioca paper, until soft.
- Place paper on rolling mat and apply sushi rice on 2/3 of paper. Place pork, French fries, and avocado on rice.
- Firmly roll paper into itself creating a maki roll. Move mat to 1 side of roll and firm up the end with palm of your hand, and repeat on the other side. Repeat with remaining ingredients.
- Cut each roll into 6 equal pieces and garnish on top of roll with Garlic Chili Mayo.
- Garnish plate with wasabi and gari.
- Wash rice 6 times, until water runs clear from rice. Cook rice in rice cooker and let stand after cooking for 15 minutes. Combine rice vinegar, salt and sugar until dissolved, this is the sushi zu.
- Place rice in a hangiri, or wooden bowl, and pour sushi zu over top as evenly as possible. Spread the rice out around the bowl as evenly as possible, separating the rice from itself not mashing it. Flip entire rice mixture over and let stand for another 10 minutes. Keep rice in some type of thermal container.
- Mix all ingredients thoroughly and refrigerate.

Steps:
- Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
- Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
- Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

I call these Jackrolls because my very good friend Jack made these for me.

Steps:
- 1. lay steak out flat and sprinkle with salt& pepper, place a slice of bread on top and place a few pieces of onion on that.
- 2. roll up steak , wrap with a slice of bacon, place into crock pot.
- 3. roll up remaining steaks in same manner.
- 4. add garlic cloves,gravy mix and water, and any seasoning you like and cover and cook for 3 to 4 hours or until meat is tender. Serve over noodles or with mashed potatoes.
- 5. you can also add mushrooms to this, its just a matter of taste.
