Time 25m

Number Of Ingredients 8

2-1/2 cups all purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1-1/2 teaspoons freshly ground black pepper
1/3 cup vegetable oil
1/2 cup dry red wine
1 egg (lightly beaten with 1 tablespoon water)

Steps:

  • In a large mixing bowl, combine the flour, sugar, baking powder, salt, and pepper. Make a well in the center and add the vegetable oil and wine.
  • Mix thoroughly and refrigerate for about 1 hour.
  • Preheat the oven to 350°F.
  • To form the biscuits, pinch off 1-inch balls of dough and gently roll into a small log about 1/2-inch in diameter.
  • Bring the ends together to form a circle and pinch to close.
  • Place the formed biscuits on a parchment-lined baking sheet. Brush with the egg-water mixture.
  • Bake for 12 to 18 minutes until solid and slightly crisp on the outside.
  • These cookies do not really brown, so test them after 12 minutes and time them according to your personal taste.
  • Cool on wire racks and store in an airtight container.

3/4 cup flavorless oil (E.g. canola, aovcado, or grapeseed)

Place the cookie on a parchment or silicone mat-lined cookie sheet and repeat with the rest of the dough.
  • Bake the cookies for 25-30 minutes, until lightly browned on the bottom and slightly hard to the touch.
  • Let them cool for a few minutes on the cookie sheet, then remove them to a wire rack to finish cooling.

Time 1h10m

Yield 48 biscuit type cookies

Number Of Ingredients 7

2 cups flour
3 -4 cups flour
3 teaspoons baking powder
1 cup sugar
1 cup oil
1 cup dry red wine (like a good table burgundy)
1 egg, slightly beaten with 1 tsp water

Steps:

  • In medium size bowl place sugar, oil and wine; mix together till completely combined.
  • Stir 2 cups flour and baking powder together; add to wet mixture and blend well.

  • Don't be alarmed at the color of the dough-it's kinda grey with a pink blush.

My friend, Pmags shared this with me. He says "Uber-simple traditional southern Italian 'cookie'. Kinda of a scone. Eat alone or with coffee. Very popular in my home state. (Rhode Island) Here's one recipe. Some people put anise or a touch of black pepper"
