Italian Turkey Burgers image

Seasoned with oregano and Parmesan cheese, these plump burgers are a delicious change-of-pace entree. I like to serve them on crusty Italian bread with warmed spaghetti sauce, but you can also use hamburger buns. -Mary Tallman, Arbor Vitae, Wisconsin

1/4 cup canned crushed tomatoes
2 tablespoons grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground turkey
8 slices Italian bread, toasted
1/2 cup meatless spaghetti sauce, warmed

Steps:

  • In a large bowl, combine the first 6 ingredients. Crumble turkey over mixture and mix well. Shape into four 3/4-in.-thick oval-shaped patties. , Grill patties on an oiled rack, uncovered, over medium heat or broil 4 in. from the heat on each side until a thermometer reaches 165° and juices run clear, 6-8 minutes. , Place a patty on each of 4 slices of bread. Drizzle with spaghetti sauce; top with remaining bread.

Italian Turkey Burgers (Reduced Fat) image

I have been playing around lately with trying to make different kinds of reduced fat burgers to go with the low fat eating plan I am on. This is my latest attempt. I used ground turkey breast so that I didn't feel that bad about having a little bit of fat from the sundried tomatoes but at least it is 'good' fats. The cooking time includes the one hour chilling time.

1 lb ground turkey breast
1 small onion
1/2 cup fresh basil
1 cup roasted sweet red pepper, from a jar, roughly chopped
5 sun-dried tomatoes packed in oil, cut in half
1 teaspoon garlic powder
1 egg white

Steps:

  • Put the turkey in a bowl and set aside.
  • Roughly chop the onion and put it into a food processor or mini chopper along with the basil, red peppers and sun dried tomatoes.
  • Blitz the ingredients until the onions and everything else is finely chopped.
  • Empty the contents of the food processor into the bowl with the ground turkey.
  • Add the garlic powder and the egg white.
  • Mix with your hands until everything is well combined.
  • Form four equal sized burgers and place on a plate and put into the fridge for an hour to firm up.
  • Take the burgers out of the fridge and either pan fry in a little bit of extra virgin olive oily for about 5 minutes on each side until cooked through or do on a Foreman type grill for about 10 minutes total.
  • Serve on buns of simply bunless with a salad is watching the calories. If serving with bread it is fun to complete the Italian feel with ciabatta rolls.

3 tablespoons mayonnaise
1 clove garlic, finely chopped
8 ounces ground turkey
12 ounces sweet Italian turkey sausage, removed from casings
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
4 ounces sliced Italian fontina cheese
Four 3-by-3-by-1/2-inch squares focaccia, split and lightly toasted
1 plum tomato, sliced
1 cup baby arugula

Steps:

  • Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.
  • Preheat a large skillet over medium heat. Add the olive oil and pancetta slices and cook the pancetta on both sides until crisp, about 3 minutes. Drain on paper towels and reserve.
  • Place the same skillet over medium-high heat and add the burgers. Cook, turning once, until cooked all the way through, about 5 minutes per side. Top with the fontina and cook until just melted.
  • To serve, place the burgers on the focaccia bottoms. Top with tomato slices, pancetta and arugula. Spread the focaccia tops with garlic mayonnaise, set on top of the burgers and serve.

2 tablespoons fresh basil leaves, chopped or 2 teaspoons dried basil
1 teaspoon paprika
1 teaspoon fresh garlic, finely chopped
1/4 teaspoon black pepper
4 slices mozzarella cheese
4 hamburger buns
2 roma tomatoes, sliced

Steps:

  • Combine ground turkey, basil, paprika, garlic, and pepper in medium bowl. Shape into 4 hamburgers.
  • Cook hamburgers on grill or in skillet until done.
  • Top each burger with 1 slice cheese and continue cooking until cheese is melted.
  • Place burgers on buns, top with tomatoes.

1 egg
1/4 teaspoon pepper
3/4 cup Italian seasoned breadcrumbs, divided
cooking spray
1 cup thinly sliced mushroom
1/2 cup red wine or 1/2 cup chicken broth
1/2 cup plain fat-free yogurt

Steps:

  • Combine turkey, egg, pepper and 1/4 cup bread crumbs.
  • Shape into 4 burgers. Coat burgers with remaining bread crumbs.
  • Spray skillet with cooking spray; cook burgers over medium-low heat until browned on each side and no longer pink in the middle; 5-8 minutes per side.
  • While burgers are cooking, spray a skillet with cooking spray and saute mushrooms 5 minutes or until softened.
  • Stir in wine and heat to boiling; reduce heat and simmer, uncovered, until wine is almost gone.
  • Reduce heat to low and stir in yogurt.
  • Place burgers on serving plates. Spoon mushrooms over and serve.

  • To make the burgers, place the ground turkey, turkey sausage, bread crumbs, basil, oregano, fennel, garlic powder, salt, black pepper, and red pepper flakes in a large mixing bowl and lightly combine with your fingers. Make sure the ingredients are fairly evenly incorporated, but do not compact the meat. Shape into 6 patties. Grill on medium high until the bottoms are browned (about 5 minutes), then flip and continue grilling until cooked through, about 5 additional minutes. When the burgers are almost ready, top with mozzarella and Asiago cheeses.
  • For the veggies: Place the veggie slices in a medium bowl. Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat. Place in a grill basket and grill until softened and lightly charred, about 8 minutes, turning the veggies often so that they do not burn. Toast the buns as desired.
