Steps:
- Brush the ciabatta slices on both sides with olive oil, then sprinkle both sides evenly with 1/4 cup of the sugar, gently rubbing it in.
- Heat a large skillet over medium heat. Place the sugared bread in the skillet and cook until golden brown and caramelized on both sides, 2 minutes per side. Remove to a wire rack to cool briefly.
- In a medium bowl, mix together the ricotta, vanilla and the remaining 1 tablespoon sugar with a rubber spatula. Divide the mixture among the toasts and spread evenly. Top with berries, drizzle with honey and sprinkle with flaky sea salt.
ITALIAN JOES ON TEXAS TOAST
Steps:
- Preheat oven to 425°. In a large skillet, cook beef with green pepper, onion and garlic over medium-high heat until meat is no longer pink, 5-7 minutes; crumble beef; drain. Stir in wine and bring to a boil; cook until wine is reduced by half, about 2 minutes. Stir in tomatoes, tomato paste, salt and pepper; return to a boil. Reduce heat; simmer, uncovered, until mixture is thickened, 2-3 minutes, stirring occasionally., Meanwhile, place Texas toast on a foil-lined 15x10x1-in. pan; bake until lightly browned, 8-10 minutes., Spoon beef mixture onto toast; top with cheese. Bake until cheese is melted, 3-4 minutes. Serve immediately.

- Split the loaf through the middle, leaving it attached at one side, and open it up like a book. Scrape away some of the soft bread inside (use to make breadcrumbs), then drizzle generously with olive oil. Spread the tomato paste over both sides, then start layering up your fillings on top. Start with the provolone and ham, then add any of your favourite pizza toppings, if you like, finishing with the mozzarella. Scatter with oregano, season with salt and pepper, then carefully close the sandwich and squash it down with your hands to flatten. Wrap tightly in foil. Can be made up to a day ahead and chilled.
- To serve, heat oven to 180C/160C fan/ gas 4. Place the foil-wrapped sandwich onto the oven shelf and bake for 30 mins from room temperature or 35 mins from the fridge. Lift onto a board, unwrap, then slice into roughly 6 sandwiches. Serve with bowls of crisps, gherkins and pickled onions and let everyone help themselves.

- Split bread lengthwise; place, cut side up, on a large baking sheet. In a small bowl, combine butter, cheese, garlic and oregano; brush onto cut surfaces of bread. Sprinkle with paprika., Broil 4 in. from the heat for 2-3 minutes or until lightly toasted. Serve warm.

ITALIAN ROAST BEEF

- Poke holes all over the roast. Slice 4 large cloves of garlic. Stick the garlic into the holes. Liberally season the meat all over with salt and black pepper, to taste. Heat the extra-virgin olive oil, 4 turns of the pan, over medium-high heat in a large Dutch oven. When the oil smokes, add the meat and brown on all sides. Remove the meat to a plate. Crush the remaining garlic and add it to the pot along with the onions, bay leaves, carrots, celery and rosemary. Season with salt and pepper, to taste. Cover the pot with a lid and sweat the vegetables for 7 to 8 minutes, stirring occasionally. Stir in the tomato paste and wine, and let reduce for 1 to 2 minutes, scraping up the bits from the bottom of the pot. Stir in the stock-in-a-box. Return the meat to the pot and cover with a lid. Lower the heat to a simmer and cook for 2 1/2 hours.
- When meat is about done, bring a large pot of water to a boil over medium heat for the pasta.
- Remove the meat to a cutting board and cool 15 minutes. Slice the roast and arrange half of the meat on a platter.
- Cook the pasta to al dente while the meat is resting. Drain the pasta and add it to a serving bowl. Remove the vegetables with a slotted spoon and arrange them alongside the meat. Spoon a few juices over the top. Melt the butter in small pan over low heat and add the sage leaves. Add the sage butter to the bowl with the pasta and toss together. Season with salt. Ladle the remainder of the juices over the pasta. Serve the meat and veggies with pasta alongside. Cool and store the remainder of the meat in the refrigerator.

- Pour water into a large kettle, and add bouillon cubes.
- Mix together the salt, garlic, Italian seasoning, black pepper, oregano, basil, and red pepper flakes on a large plate. Rub roast with 1/2 cup vegetable oil. Roll roast in seasoning mixture until well coated. Place the roast in the kettle along with any left over seasoning mixture and oil.
- Bring water to a boil, reduce heat, and simmer approximately 3 1/2 hours. Meat should be tender and well done.

- Sauce: Beat eggs. Mix well with pizza sauce, milk and water and season with 3/4 tsp iodized fine salt (or 3/4 tbsp iodized rock salt). Set aside.
- Combine salami, bell pepper and cheese to make filling. Divide filling into 5. Top 5 slices of bread with salami, bell pepper and cheese. Cover each piece with another slice of bread. Dip in sauce. Drain excess sauce.
- Grill in pan with butter, flip when brown on one side to brown the other side.
