My husband made sausage and veggie kabobs when we didn't have buns to make classic sausage bombers. Grill 'em up, then add cheese cubes. -Cindy Hilliard, Kenosha, Wisconsin

1 large onion
1 large sweet red pepper
1 large green pepper
2 cups cherry tomatoes
1 tablespoon olive oil
1/2 teaspoon pepper
1/4 teaspoon salt
2 packages (12 ounces each) fully cooked Italian chicken sausage links, cut into 1-1/4-inch slices
16 cubes provolone cheese (3/4 inch each)

Steps:

  • Cut onion and peppers into 1-in. pieces; place in a large bowl. Add tomatoes, oil, pepper and salt; toss to coat. On 16 metal or soaked wooden skewers, alternately thread sausage and vegetables., Grill, covered, over medium heat 8-10 minutes or until sausage is heated through and vegetables are tender, turning occasionally. Remove kabobs from grill; thread one cheese cube onto each kabob.

1 package (19 ounce) JOHNSONVILLE® Hot Italian Sausage Links
1 pint cherry tomatoes, (24 tomatoes)
1 tub (16 ounce) marinated fresh mozzarella balls, (Ciligiene 24½ ounce balls)
1 package (2.5 ounces) fresh basil leaves
24 small skewers, wooden or other decorative picks
Extra virgin olive oil
Balsamic syrup* (can substitute with balsamic vinegar)
Fresh ground black pepper to taste

Steps:

  • *Balsamic syrup is available in finer grocery stores.
  • 1. Cook the sausage according to the package directions for the grill or in a skillet.
  • 2. Cut each sausage into 4 to 5 pieces.
  • 3. Assemble each skewer alternating ingredients: tomato, basil, mozzarella, and sausage.
  • 4. Arrange skewers on a platter, drizzle with Extra Virgin olive oil and balsamic syrup.
  • 5. Sprinkle with salt and a grinding of fresh black pepper.

1 cup couscous
2 bell peppers (red and yellow), cut into chunks
1 (12-ounce) package chicken sausage (preferably garlic-flavored), cut into 1-inch pieces
1 large red onion, cut into chunks
1 cup cherry tomatoes
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/4 cup fresh parsley
1/4 cup fresh cilantro
4 scallions, roughly chopped
1 tablespoon white wine vinegar

Steps:

  • Soak eight 8-inch skewers in water, at least 15 minutes. Preheat a grill or grill pan to medium high. Prepare the couscous as the label directs.
  • Meanwhile, toss the bell peppers, sausage, onion and tomatoes in a bowl with 1 tablespoon olive oil; season with salt and pepper. Thread onto the skewers, alternating the sausage and vegetables. Grill, turning, until the vegetables are slightly softened and the sausage begins to brown, 6 to 7 minutes.
  • Meanwhile, puree the parsley, cilantro and scallions in a blender with the remaining 2 tablespoons olive oil, the vinegar and 2 tablespoons water. Season with salt and pepper. Brush the skewers with some of the pesto and continue to cook, turning, until the tomatoes are tender and the sausage is charred, 6 to 7 more minutes.
  • Toss the couscous with half of the remaining pesto and season with salt and pepper. Serve with the skewers and the remaining pesto, for dipping.

4 Italian sausages (1 lb)
2 tablespoons olive oil
1 garlic clove, finely chopped
1 dash salt
1 dash fresh black pepper
1 (8 inch) baguette, diced in 1 inches cube
1/2 red onion, cut into 1 inch squares

Steps:

  • Put sausages in a plate going in the microwave and poke them. Cover with plastic wrap leaving an open corner to let escape the steam and cook at high power for about 5 minutes or until not pink inside. (you can do this step in advance, let cool and cover. They will be good until the next day in the fridge.). Cut in slices of 1 1/2 inches of thickness.
  • Meanwhile, in a bowl, mix oil, garlic, salt and pepper. On metal skewers or wood skewers previously soaked in water, thread sausages alternating with bread cubes and onions squares. Baste the skewers with the mixture of oil.
  • Set the barbecue to medium heat. Put the skewers on an oil grill. Close the cover and cook about 10 minutes or until sausages are grilled and onions are tender (flip the skewers 3 times during the cooking time).

12 ounces fully cooked Italian-style poultry sausage, cut into 1-inch pieces
1/2 cup lightly packed fresh basil
1 12-ounce jar roasted red peppers, drained, rinsed and cut into 1-inch pieces
2/3 cup sun-dried tomatoes, cut into 1-inch pieces if large
1 14-ounce can artichoke hearts, drained and quartered

Steps:

  • Heat a nonstick skillet over medium heat; mist with cooking spray. Add the sausage; cook, turning 2 or 3 times, until warmed through and browned, about 8 minutes.
  • Thread 1 small or 1/2 large basil leaf onto a small wooden skewer. Add a piece of roasted red pepper, sun-dried tomato, artichoke and sausage, arranging them on the skewer so that it can stand up on the sausage end. Repeat with the remaining ingredients to make about two-dozen skewers.
