MEAL IN A JAR: ITALIAN BARLEY SOUP
This is a favorite flavor-packed meal in a jar - an herb-flecked, hearty, Italian Barley Soup with a bit of a hippie twist. Just add water and a can of crushed tomatoes and you're on your way to a really great pot of soup.

Steps:
- Combine the ingredients into a pint jar, leaving the bouillon cube wrapped. Set aside until ready to make the soup.
- When you're ready to make soup pour the water and crushed tomatoes into a medium soup pot. Unwrap the bouillon cube and add that along with the contents of the jar to the soup pot as well. Bring to a simmer over medium heat. Allow to cook for 35-40 minutes, or until the barley and mung beans have cooked through. If you need to thin your soup at all, add water 1/2 cup at a time. If you want to add any kale or broccoli go for it a few minutes before the soup is done cooking.
- Serve topped with a bit of cheese and a drizzle of good olive oil.

Steps:
- Layer beans in order listed in a 1-quart wide-mouth jar; set aside.
- Place pasta in a plastic zip-lock bag; gently pack on top of beans; secure lid.
- Place the remaining ingredients in a small plastic zip-lock bag or small jar; pack both jars or jar and zip-lock bag together in a basket; include cooking instructions.
- Cooking instructions: set the spice mixture and pasta aside; pour the beans in a mixing bowl; rinse with water and drain.
- Cover the beans with water; let soak overnight; rinse, drain, and pour into a 5-quart Dutch oven; add in 8 cups water, a 28 ounce can crushed tomatoes, seasonings in jar or bag, 1 cup sliced carrots, 1 cup sliced celery, 1 cup chopped onions.
- Bring to a boil; lower heat, and simmer, covered, for 2 hours.
- Uncover and gently boil until thickened (about 35 minutes).
- Stir in pasta; heat about 10 minutes or until pasta is tender.

- Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jar with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar.
- Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar.
- Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more. Serve with your favorite bread or rolls and a tossed salad.

- In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
- Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.
