- Preheat oven to 400°; with greased fingers, pat dough onto an ungreased 12-in. pizza pan. Prick dough thoroughly with a fork. Bake at 400° for 10-12 minutes or until lightly browned. Meanwhile, in a large skillet, cook the sausage, onion, mushrooms and green pepper over medium heat until sausage is no longer pink; drain., Spread pizza sauce over crust. Top with sausage mixture; sprinkle with cheese. Bake until golden brown, 12-15 minutes. Or, wrap pizza and freeze for up to 2 months. , To use frozen pizza: Unwrap and place on a pizza pan; thaw in the refrigerator. Bake at 400° for 18-22 minutes or until golden brown.

- 1. Remove sausage from casing and pinch into dime-sized pieces. Spread sauce over crust and sprinkle with 1 cup cheese. Add Italian Sausage pieces and green pepper. Top with the remaining cheese.
- 2. If purchasing crust, bake according to crust package directions or until sausage is no longer pink (160?F) and cheese is melted.
- 3. If using my crust, bake at 400°(thick crust) or 425°(thin) for about 25-28 minutes(thick) or about 20 minutes (thin/medium) or until crust is brown and sausage is no longer pink.

- Heat oven to 425°F. Lightly spray large cookie sheet with cooking spray.

- Mix yeast and water in a large bowl; place in warm spot for about five minutes.
- Sift flour, salt, and sugar into the yeast. Mix well, then add olive oil and form a soft ball.
- Knead on floured surface until soft and elastic (about five minutes).
- Shape into ball and place in a lightly oiled bowl.
- Cover with a clean towel and place in a warm spot for about one hour.
- Punch down dough and reshape into ball. Cover and let sit another 20 minutes, or until it rises again.
- Preheat oven to 375 degrees.
- Shape dough into flat round shape and stretch onto pizza pan or hand toss and place on floured surface.
- Press fingertips into surface of dough until entire surface is dimpled.
- Brush olive oil over entire surface of pizza dough.
- Combine tomatoes, basil, 1 tsp salt, garlic and onion powder, and garlic together.
- Divide and spread evenly over dough.
- In layers add sausage, onion, mushroom, and cheeses.
- Sprinkle crust with left over parmesan cheese.
- Bake in oven for 25 minutes or until crust is golden and cheese is gooey.
- Remove from oven and let rest for 5 minutes before slicing.

ITALIAN SAUSAGE PIZZA CASSEROLE
This "upside down" pizza casserole is easy to make in a hurry. You can use any ingredients you like on pizza, for example add some black olives or pepperoni to the basic recipe or take out the mushrooms. Store bought spaghetti sauce works fine; your homemade will be even better! Add a salad and you have dinner.

- Preheat oven to 400°F.
- Brown sausage, onions, garlic, green pepper, and mushrooms in a skillet over medium high heat for 6-8 minutes until sausage is cooked, stirring frequently. Drain and return sausage mixture to warm skillet.
- Stir 3 tablespoons flour into the sausage and vegetables and then add spaghetti sauce, mixing well. Bring to a boil stirring often. Pour into lightly greased 6x10 or 8x8 baking dish and top with shredded Italian cheese. A blend of Italian cheeses works well but use whatever you like or have on hand.
- Beat egg and stir in milk, oil, salt until well blended. Stir in the remaining flour and parmesan cheese and mix well. It should be pourable and not a dough like biscuits so adjust with a bit more flour or milk as needed. Pour over sausage/cheese in casserole covering the entire top evenly. Sprinkle a little more shredded parmesan cheese on top if desired.
- Bake, uncovered, 25-30 minutes until golden brown. Let stand 10 minutes before cutting into squares for serving.
