ITALIAN MEATLOAF

Italian Meatloaf blends Italian sausage and ground beef with spices and cheese for a tender one dish meal. The perfect family meal!

1 cup Italian or white bread (crusts removed, cut into 1 inch cubes )
1 tablespoon milk
1/2 cup white onion (minced)
3 cloves garlic (minced)
1 teaspoon fine sea salt
1/2 pound lean ground beef
1 pound Italian sausage (casing removed, crumbled )
1 tablespoon flat leaf parsley (minced, plus more for garnish (optional) )
1 tablespoon fresh oregano (minced)
1 tablespoon Worcestershire sauce
1 egg (lightly beaten )
3/4 cup bread crumbs
1/4 cup Parmesan cheese (finely grated)
1 cup mozzarella cheese (shredded, divided )
3/4 cup marinara (divided, plus more for for serving )

Steps:

  • Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
  • In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
  • In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
  • Add crumbled ground beef and sausage, breaking into small pieces.
  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

1 19oz pkg Johnsonville Mild Italian Sausage, decased
3/4 lb ground beef or turkey
3/4 cup chili sauce
1/4 cup water
3/4 cup rolled oats
1 large egg, lightly beaten
1 tbsp chili powder
1 tbsp worcestershire sauce
1 small sweet Red bell pepper, finely chopped (ok to use green bell)
1 small onion, finely chopped
1 cup fresh or defrosted frozen corn kernels
1 cup fresh baby spinach leaves
3 slices provolone cheese

Steps:

  • Preheat the oven to 350 degrees F. In a large bowl, combine 1/2 cup of the chili sauce with the water. Add the oats, egg, chili powder, Worcestershire, and mix well. Add the decased sausage and the ground turkey or beef. Add the bell pepper, onion and corn and mix well. Divide the meat mixture in half. Lay half the meat mixture in a lightly greased 9 x 5 x 3" loaf pan. Create a shallow indent in the meat allowing the edges to rise along the edge of the pan. Layer the provolone and the spinach leaves on top of the meat along the center, staying about 1/2 inch away from the edges. Cover completely with the 2nd half of the meat mixture forming a domed top and sealing the edges. Bake uncovered for 50 minutes. Spread the remaining 1/4 cup chili sauce over the top of the loaf and bake until a meat thermometer inserted in the center of the loaf registers 165 degrees F. About 15-20 minutes longer. Allow the loaf to stand for 5-10 minutes before slicing.

You'll only need leftover meat loaf and five ingredients to make these yummy sandwiches that are easy to prepare on a griddle. You can even cook the sandwiches in a panini grill or countertop indoor grill. Feel free to use leftover homemade meat loaf, purchase meat loaf from the deli or purchase cooked meat loaf in the convenience packaged food section in the meat department.

1/4 cup butter, softened
12 slices Italian bread (3/4 inch thick)
6 slices provolone cheese
1/3 cup pizza sauce
1/2 cup giardiniera
6 slices cooked meat loaf, warmed

Steps:

  • Butter one side of each slice of bread. Place six slices on a griddle, buttered side down. Layer with the cheese, pizza sauce, giardiniera, meat loaf and remaining bread, buttered side up. Cook over medium heat until golden brown, turning once.

This simple recipe was devised from a rare flash of inspiration and ingredients I had on hand. I started out making a regular pasta dinner & got sidetracked after I had made the bread and thawed the meats. I used premade basil pesto & jarred onion-garlic marinara sauce to speed this dinner along. This could be easily changed to reflect what you have to use up. *Definitely a recipe for skinny, heart healthy folks! The rest of us can only lick our chops.

1/2 lb hot Italian sausage, ground
1/2 lb ground beef
1/2 medium onion, finely chopped
1 egg
1/3 cup seasoned bread crumbs
1 loaf Italian bread (or similarly textured bread)
1/2 cup basil pesto
1/4 cup parmesan cheese, grated
1 1/2 cups pasta sauce, divided

Steps:

  • Preheat oven to 350°F.
  • Mix meatloaf ingredients together (use your hands, it's easier).
  • Dump meat mixture into a baking dish and pat into shape and size to fit your bread.
  • Bake for 20 minutes, remove from oven & cover with 1/2 cup pasta sauce. Return to oven & bake 20 minutes more.
  • Cut bread into thick slices -3/4-inch or so. Slather with pesto.
  • Slice hot meatloaf into 1/2-inch slices. (tricky but you can do it!) Place a slice on top of pesto.
  • Mix 1/2 cup pasta sauce with cheese & spread on top of meatloaf.
  • Put sandwiches under the broiler till bubbly & hot & bread is crispy on the edges.
  • Serve with the rest of the sauce, heated in the microwave for 30 seconds.
  • You will need a knife & fork!
  • * If you really want to go for the gusto, top sandwich with a slice of mozzarella or your favorite cheese before broiling.
  • Cooks note: As written, the number of servings is just a guess. Depends on the hollowness of the diners' legs. ;-).

2 1/2 pounds organic or grass-fed beef (80/20)
2 pounds Italian sausage
1/2 cup fresh Italian parsley, chopped
2 yellow onions, chopped
3 tablespoons minced garlic
4 farm-fresh eggs, organic eggs or at the very least cage-free eggs
3 tablespoons organic Italian seasoning
1 tablespoon Himalayan salt or sea salt
1 tablespoon fresh coarse-ground pepper
1 cup organic ketchup
2 cups fresh breadcrumbs (I use gluten-free)
1 tablespoon olive oil
3 yellow onions, peeled and cut in half, then sliced into half-moons 1/4 inch thick
1 tablespoon red balsamic vinegar
1 teaspoon organic sugar
2 fresh garlic cloves
1/4 cup grated mix of Parmesan, Asiago and Romano cheeses or just a good Parmesan will do
1/4 teaspoon Himalayan salt or sea salt
1 cup fresh basil leaves
1 cup stemmed kale leaves of choice (any variety will do)
1/4 cup olive oil
Mayonnaise, for spreading
24 to 28 slices dense bread or French bread
Marinara or meat sauce of your choice, for topping
24 to 28 slices Havarti cheese

Steps:

  • For the mini meatloaves: Preheat the oven to 350 degrees F. Line baking sheets with parchment or silicone pads.
  • In a large bowl, mix together the beef, sausage, parsley, onions, garlic, eggs, Italian seasoning, salt, pepper, ketchup and breadcrumbs with your hands. Yep, they are the best utensils for the job!
  • Form the meat mixture into approximately 12 to 14 mini loaves (6 to 8 ounces each) on the baking sheets. Bake for 16 to 18 minutes until they reach 165 degrees F. Remove from the oven and let cool slightly before slicing.
  • For the caramelized onions: Heat a saute pan over medium-high heat. Pour in the olive oil, add the onions and then reduce the heat to low. Cook the onions until translucent, stirring occasionally. Add the balsamic and sugar and continue cooking until soft, approximately 2 hours low and slow.
  • For Joy's basil kale pesto: In a food processor, add the garlic, cheese, and salt. Process until almost smooth. Add the basil, kale and olive oil and process until combined. Taste and make any adjustment you may like. Ah, yum! Set aside if you can until ready to use.
  • For the sandwiches: Spread some mayo on each slice of bread. On half of the slices, spread on marinara or meat sauce of your choice. On the other slices, spread on the pesto. Slice the mini meatloaves and layer on the pesto slices. Top with the caramelized onions. Finish with the cheese slices. Close the sandwiches and place on a panini grill until browned and toasty! Slice in half on an angle and enjoy!
