Steps:
- In a large skillet with a tight fitting lid, fill half full of water.
- Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
- Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
- Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.
- Add butter to pan and add seasoned salt, garlic powder, oregano and paprika. Place drained partially cooked potatoes in butter mixture and toss lightly to coat both sides then cook until potatoes are browned and cooked through, turning occasionally to brown both sides.
- Add the sausage, peppers and onions back with the potatoes and stir lightly without breaking up the potatoes and serve.
SAUSAGE, PEPPERS, ONIONS, AND POTATO BAKE
This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

ROASTED ITALIAN SAUSAGE, PEPPERS, AND POTATOES
I've made this several times for my family and it is, as I like it a really good meat and potatoes meal. It is a rustic meal and takes awhile to cook, but Oh is it good! I found this recipe in a cookbook someone threw out, called Prairie Home Cooking and of course I could not resist looking through it! It has all this information...

Steps:
- 1. Heat the oven to 400 degrees. (this can be done on a grill as well, med-high grill). Place the sausages and the potatoes in a large pan or roaster, and transfer to the oven or grill. (put cover over if grilling) (I add the sausages whole, but can cut in half or in chunks) I add a little oil in the pot for the oven baked. You don't need but a couple tablespoons. Use large roasting pan. Larger than a 9x13. I buy those foil throw away pans.
- 2. Roast or grill them , turning the food several times for 30 minutes or until they have begun to brown.
- 3. Add the peppers, onions, mushrooms and herbs to the pan. Add a little more vegetable oil, a couple of Tablespoons. Roast or grill 45 to 60 minutes more. Check and turn occasionally until potatoes are brown and tender. Check that the potatoes are done. Ovens vary so it can take longer for some. I put a Tablespoon of mustard on my plate to dip the sausage in. I salt and pepper it also. Enjoy with your favorite condiment. Enjoy! Great company dish :)
- 4. **************************************************** This recipe was made in celebration of when slaves were emancipated (freed) and traveled to a town called Nicodemus, Kansas, named after the first slave to purchase his freedom and where they could buy their own peice of land and make lives for themsleves. To this day some of the decendants still celebrate Emancipation day. The town has been designated a National Historic Site, however the towns future is in doubt. But for many who still live there, the last weekend in July still means "home to Nicodemus" for Emancipation Days.
SAUSAGES WITH POTATOES AND HOT PEPPERS
Steps:
- Scrub and dry the potatoes, but don't peel them. Slice them lengthwise into sticks and wedges, about 1/2 inch wide (French-fry size).
- Pour the olive oil into the skillet and set over medium-high heat. Scatter the garlic and peperoncino flakes in the oil. Stir and toss the garlic for a minute or so, until lightly colored, then, with a slotted spoon or skimmer, scoop all the cloves from the pan and reserve. Strew the sliced pickled peperoncini in the oil and toast them, stirring, for about a minute, just to get them sizzling, then scoop them out-letting all the oil drain back into the pan.
- Scatter the cut potatoes in the skillet, and toss them in the flavored oil. Season with 1/2 teaspoon of salt, and cook for 6 minutes or so, over moderate heat. Toss and turn them frequently, until lightly crisped on all sides.
- Push the potatoes to the side of the skillet, and lay all the sausages in the pan. Cook for 5 or 6 minutes, rotating and shifting the sausages until they're sizzling and lightly browned on all sides; turn the potatoes as needed so they don't burn.
- Cover the pan, lower the heat, and keep the potatoes and sausages sizzling and caramelizing slowly for about 20 minutes, turning and moving them in the skillet now and then. Remove the cover, and scatter the reserved garlic and peperoncini all over. Taste a potato, and season with more salt if you like. Cook uncovered for another 10 minutes or so, over low to moderate heat, until all the potatoes and sausages are caramelized and crisp on the outside, and tender and fully cooked inside.
- Serve hot (and spicy).

- Precook the potatoes by arranging them on a flat plate and microwaving on high for 4 minutes. Alternately, you can roast them in the oven by themselves for 7 to 8 minutes.
- Whisk the balsamic vinegar, olive oil and garlic together in the bottom of a large mixing bowl. Add the sausage, onion, red pepper, green pepper, and precooked potatoes.
- Season with a few grinds of black pepper and a pinch of salt, toss to coat with the balsamic vinegar mixture and transfer to the prepared baking pan.Note: Go easy on the salt as the sausage will flavor the potatoes and peppers during cooking.

- Cut peppers into 3-4" pieces or tear to even size pieces by hand. Reserve juice in jar. Set aside.
- Add oil to a large heavy skillet until hot. Add sausages and cook over medium heat until sausages are nicely browned and cooked through.
- With a slotted spoon, transfer sausages to a plate. You may cut the sausages into diagonal size pieces or leave them whole. It's all a matter of preference.
- Increase heat to high, add potatoes and fry, turning often, until crispy and tender. If necessary, add more olive oil for even frying throughout which will help enable the "crispy" factor.
