STUFFED ZUCCHINI WITH MEAT / ITALIAN STYLE



Stuffed Zucchini with Meat / Italian Style image

Stuffed Zucchini with Meat, Italian style, nothing says Italian Summer Dinner Dish then this. A delicious meatball mixture stuffed inside a hollowed out Zucchini and then pan-fried or baked to perfection.

5 medium zucchini
2-3 tablespoons olive oil
1-2 pinches salt
3/4 cup water
2 slices bread (I use day old Italian if extra thick use 1 1/2 slices)
1/2 pound ground beef
1 large egg
1/4 cup freshly grated parmesan cheese
1/2-1 teaspoon parsley (or 1 tablespoon fresh)
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 -1 clove garlic minced

Steps:

  • If the zucchini is long, cut it in half, then hollow it out, rinse and set aside.
  • In a small bowl soak the bread for about 30 seconds in either water or milk. Remove the crust and squeeze out the excess moisture, crumble and place in a medium bowl, add the ground beef, egg, parmesan cheese, spices and garlic, and mix well.
  • Stuff the meatball mixture into the zucchini. In a medium to large frying pan add 2 tablespoons of oil and place the stuffed zucchini in the pan, sprinkle with a pinch or 2 of salt and extra spices if desired, drizzle with approximately 1 tablespoon of olive oil. Add the water, cover the pan slightly. Cook on low/medium heat until the zucchini is tender and water has evaporated. Raise the heat, and uncover and cook till zucchini is slightly browned, turn and brown the other side. Serve immediately. Enjoy!

1 pound lean ground beef
1 medium sweet onion, finely diced
1 (8 ounce) package sliced white mushrooms
1 (6.5 ounce) can tomato sauce
1 (6 ounce) can sliced black olives
2 cloves garlic, minced
1 (14.5 ounce) can Italian-style stewed tomatoes
salt and ground white pepper to taste
4 medium zucchini
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir mushrooms, tomato sauce, olives, and garlic into the skillet. Crush stewed tomatoes into smaller pieces and add to the mixture. Season with salt and white pepper. Let simmer, uncovered, until liquid reduces, 20 to 30 minutes.
  • Slice zucchini lengthwise; cut into 1/2-inch slices and add to the skillet. Cook, covered, until firm yet tender to the bite, 5 to 7 minutes. Stir in Cheddar cheese and cook, covered, until melted, 3 to 4 minutes. Serve.

Made in the kitchen of college kids trying to eat better, this recipe uses zucchini instead of pasta to make it lighter and healthier and no ricotta cheese!

4 medium zucchini, sliced lengthwise and cut into 1/2-inch slices
1 tablespoon salt, or more to taste
1 tablespoon olive oil, or more as needed
½ medium onion, diced
4 cloves garlic, minced
1 pound ground beef
1 medium potato, diced
1 large red bell pepper, diced
1 (26 ounce) jar marinara sauce
1 (8 ounce) package mozzarella cheese, grated

Steps:

  • Salt zucchini slices on a plate and let sit for 10 to 15 minutes while you dice the rest of the ingredients.
  • Heat a large skillet or wide pot over high heat. Add oil, onion, and garlic, and sauté until the onion gets a little brown and becomes translucent, about 5 minutes. Add ground beef, potato, and bell pepper. Cook and stir until beef is browned and crumbly, about 5 minutes. Pour in marinara sauce.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Layer marinara mixture, zucchini slices, and mozzarella cheese in that order in a casserole dish until you run out of ingredients, ending with mozzarella cheese. Cover.
  • Bake in the preheated oven, covered, for 30 minutes. Remove cover and continue baking until lasagna is cooked through and bubbly, about 15 minutes more.

This is an easy quick cheap meal to serve. I got the recipe from my friend Mary.

1 pound(s) ground beef or any meat you like
3 - or more italian sausages, hot or sweet
3-4 - zucchini sliced in 1/2
2 cup(s) spaghetti sauce
1 1/4 cup(s) bisquick
1 cup(s) small curd creamed cottage cheese
2 - large eggs
1/2 cup(s) or more parmesean cheese or any cheese you like
- salt and pepper to taste

Steps:

  • Bake at 350* Butter a baking dish about 8" x 8" x 2" deep
  • Cook meat together with the sausage meat until brown and drain fat.
  • Place zucchini slices in a single layer in the baking dish. Salt and pepper to taste. Sprinkle the 1/4 cup Bisquick on top.
  • Top with beef and spaghetti sauce.
  • Mix together the 1 cup Bisquick, cottage cheese and eggs until a soft dough forms. Spread over the top of the dish.
  • Sprinkle with Parmesan Cheese to cover. Bake uncovered until hot and bubbly. Let stand 10 minutes before serving.

This is a simple layered casserole with three elements: roasted zucchini, a really good homemade tomato sauce and Parmesan. Roasting, rather than frying the zucchini, allows you to cut down on olive oil and time.

2 to 2½ pounds fresh ripe tomatoes
1 tablespoon extra-virgin olive oil
1 small onion, chopped
2 to 4 garlic cloves (to taste)
Salt and pepper
1/8 teaspoon sugar
2 sprigs fresh basil
1 tablespoon chopped fresh basil
2 to 2¼ pounds zucchini
Salt and pepper
3 tablespoons extra-virgin olive oil
1/2 to 1 teaspoon red pepper flakes (pepperoncini), to taste
3/4 cup freshly grated Parmesan

Steps:

  • If you have a food mill, quarter tomatoes. If not, peel, seed and chop them. (See step 5.)
  • To make tomato sauce, heat 1 tablespoon olive oil in a large, heavy skillet over medium heat and add onion. Cook, stirring often, until tender, about 5 minutes.
  • Add garlic. Cook, stirring, until fragrant, 30 seconds to a minute, and add tomatoes, salt, pepper, sugar and basil sprigs. Increase heat to medium-high. When tomatoes are bubbling briskly, stir and reduce heat to medium. Cook, stirring often, until tomatoes have cooked down and are beginning to stick to pan, 15 to 25 minutes, depending on consistency. Remove basil sprigs; taste and adjust seasoning.
  • Heat oven to 450 degrees. Line 2 sheet pans with parchment. Trim ends off zucchini and cut in half crosswise, then into lengthwise slices, about 1/4 to 1/3 inch thick. Season on both sides with salt and pepper and toss with 2 tablespoons olive oil. Arrange zucchini slices on baking sheets in one layer and sprinkle with red pepper flakes. Roast for 12 minutes, until lightly browned and easily pierced with a knife. Remove from oven and reduce heat to 375 degrees.
  • If using a food mill, put sauce through medium blade. If not, pulse sauce in a food processor fitted with steel blade until just coarsely puréed. Stir in chopped basil.
  • To assemble the dish, oil a 2-quart gratin with olive oil. Spread 1/4 cup tomato sauce over bottom of dish. Arrange a third of the zucchini in an even layer over tomato sauce. Spoon a third of remaining sauce over zucchini and sprinkle with 1/4 cup Parmesan. Repeat with 2 more layers, ending with 1/4 cup Parmesan. Drizzle on remaining tablespoon olive oil. Bake 30 to 35 minutes, until bubbling and browned on the top and edges. Remove from heat and allow to sit for 5 to 10 minutes before serving.

  • Mix stuffing mix with half each of the pasta sauce and oregano. Add meat; mix well. Pat into 13x9-inch baking dish.

5 cups water (you might need more water)
3 medium zucchini, sliced
2/3 cup dry breadcrumbs, divided
1 lb ground beef
1 medium onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
1 -2 teaspoon dried chili pepper flakes (optional or to taste)
1 teaspoon dried basil
1 teaspoon dried oregano
4 cups pasta sauce
3 cups ricotta cheese (or use 2 cups ricotta and 1 cup creamed cottage cheese)
1 large egg, lightly beaten (or use 2 small eggs)
1/2 teaspoon garlic powder
3 cups mozzarella cheese, divided (can use more)
1 tablespoon dried parsley (can use fresh chopped parsley)
salt & freshly ground black pepper, to taste
1/2 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (set oven rack to lowest position).
  • Grease a 13 x 9-inch baking dish.
  • Bring about 5 cups water to a boil in a saucepan.
  • Add in the sliced zucchini; simmer for 3 minutes or until just crisp-tender; drain on paper towels or a clean tea towel then cool.
  • In a skillet cook the ground beef with onion, dried chili flakes, basil and oregano until the beef is no longer pink; drain fat.
  • Add in garlic and continue cooking the beef until lightly browned.
  • Add in the pasta sauce; cook for about 10-15 minutes, season with salt and pepper; remove from heat.
  • In a bowl mix together the ricotta with egg/s, garlic powder, 1 cup mozzarella cheese, dried parsley; mix to combine, then season with salt and pepper to taste.
  • Arrange all of the zucchini slices in the bottom of the baking dish (the slices do not have to be in one layer) then sprinkle with about 1/3 cup dry breadcrumbs.
  • Dollop HALF of the ricotta mixture over the breadcrumbs, then cover with HALF of the beef mixture, then sprinkle about 1 cup mozzarella cheese on top.
  • Repeat the layers with remaining 1/3 cup breadcrumbs, ricotta mixture, then meat mixture (reserve the remaining 1 cup mozzarella cheese for the top after baking).
  • Sprinkle 1/2 cup or more Parmesan cheese over the top of the meat mixture.
  • Place the baking dish on a baking sheet to catch any spills.
  • Bake uncovered for about 44-50 minutes or until heated through.
  • Sprinkle remaining 1 cup mozzarella cheese on top and return to oven for another 5-8 minutes.

1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
1 egg, beaten
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
1/8 tsp. pepper
1 cup CLASSICO Tomato and Basil Pasta Sauce

Steps:

  • Heat oven to 400ºF.
  • Cut zucchini into 1/8-inch-thick lengthwise slices. Place on baking sheet. Bake 10 min. Meanwhile, mix Neufchatel, egg, 1/4 cup Parmesan and pepper until well blended.
  • Layer half the zucchini in 8-inch square baking dish sprayed with cooking spray, overlapping slices as necessary to cover bottom of dish; cover with half each of the Neufchatel cheese mixture and sauce. Repeat layers. Top with remaining Parmesan.
