- Arrange potatoes and peppers in bottom of greased 13 x 9 x 2 inch casserole dish.
- Combine the seasonings, sprinkle one-third of seasoning mixture over the vegetables. Layer chicken pieces and sausage over vegetables, sprinkle remaining seasoning mixture on top.
- Cover tightly with foil.
- Bake at 425 degrees for 30 minutes.
- Reduce oven temperature to 375 degrees, bake 30 - 40 minutes longer.

Every bite of this hearty one-dish meal brings back memories of my grandmother's Italian kitchen. To this day, I can picture Grandma slicing fresh sausage, dicing crispy peppers and adding "just a pinch" of oregano. I stir up those memories often- this casserole's a favorite for family gatherings, church suppers and post-practice community choir socials.

- Spray a 13x9-in. baking dish with vegetable cooking oil; arrange potatoes and peppers in the dish. Combine the seasoning; sprinkle a third of the seasoning mixture over vegetables. , Layer chicken pieces and sausage over vegetables; sprinkle remaining seasoning mixture on top. Cover and bake at 425° for 30 minutes. Reduce heat to 375°; bake 30-40 minutes longer.

- Preheat oven to 375 degrees F (190 degrees C).
- Remove casings from sausages and cut into 1-inch pieces. Place these into a 10x15-inch roasting pan. Layer the potatoes, carrots and onions over the sausages. Then pour the tomatoes over all. Season with salt, ground black pepper and oregano.
- Cover and bake at 375 degrees F (190 degrees C) for 60 minutes, then uncover and bake for 15 to 20 more minutes.
