Italian Fettuccine Pie image

An easy way to form the pasta shell is to spoon the fettuccine mixture into pie plate and then press firmly with another pie plate

1/2 lb ground beef
1 small onion, finely chopped
1 (8 ounce) can stewed tomatoes, undrained
1 (8 ounce) can tomato sauce
1/2 teaspoon italian seasoning
6 ounces uncooked fettuccine
2 eggs
1 tablespoon butter or 1 tablespoon margarine, melted
1 cup shredded mozzarella cheese
1 cup cream-style cottage cheese
1 cup chopped fresh broccoli or 1 cup frozen broccoli, thawed chopped
1/4 cup grated parmesan cheese

Steps:

  • Heat oven to 350 degrees.
  • Cook beef and onion in 10 inch skillet over med heat, stirring occasionally, until beef is brown; drain.
  • Stir in tomatoes, tomato sauce and Italian seasoning.
  • Heat to boiling; reduce heat.
  • Cover and simmer 10 mins.
  • ,stirring occasionally.
  • Cook and drain fettuccine as directed on pkg.
  • Beat one of the eggs and the butter in med.
  • bowl.
  • Stir in fettuccine and mozzarella cheese.
  • Spoon mixtur into ungreased quiche dish or pie plate 9 x11/2 inches; press evenly on bottom and up side of plate.
  • Mix cottage cheese and remaining egg; spread over fettuccine mixture on bottom of pie plate.
  • Sprinkle with broccoli.
  • Spoon beef mixture evenly over top.
  • Sprinkle with parmesan chees.
  • Bake uncovered 30 minutes or untill hot in centre.
  • Let stand 10 minutes before cutting.

Cacio e Pepe Pie image

This decadent version of spaghetti pie has all the best parts of cacio e pepe (Pecorino! black pepper!) in a hearty, extra-cheesy, baked form.

Nonstick vegetable oil spray
8 oz. coarsely grated Fontina cheese (about 2 cups)
1 1/2 cups half-and-half
4 oz. finely grated Parmesan and/or Pecorino Romano (about 1 cup), plus more for serving
1 Tbsp. freshly ground black pepper, plus more
1/2 cup plus 1 1/2 tsp. kosher salt
12 oz. bucatini or spaghetti
8 oz. ricotta
3 large eggs
2 Tbsp. extra-virgin olive oil, plus more for drizzling

Steps:

  • Preheat oven to 375°F. Lightly spray an 8" springform pan with nonstick spray. Wrap bottom tightly in foil to prevent any leaks and place on a rimmed baking sheet.
  • Mix Fontina, half-and-half, 4 oz. Parmesan, 1 Tbsp. pepper, and 1 1/2 tsp. salt in a large bowl that can rest on rim of pasta pot without falling in.
  • Fill pasta pot with 5 quarts water and add remaining 1/2 cup salt. Bring to a boil and cook pasta 4 minutes shy of package directions. Drain.
  • While pasta is cooking, place bowl with cheese mixture over pot and whisk constantly until cheese is melted, 3-4 minutes. Remove from heat. Whisk in ricotta, then eggs and 2 Tbsp. oil. Add drained pasta to bowl and toss to coat.
  • Transfer pasta to prepared pan, pressing down to compact lightly. Pour any leftover cheese mixture evenly over. Using tongs or a fork, pull up a few strands of pasta so they form loops just above surface of pie (these will get browned and give texture to the top).
  • Bake pasta until cheese is bubbling and pie is golden brown on edges and sides, 35-45 minutes. Let cool 10-15 minutes before removing sides of pan. Slide a thin spatula underneath and around pie to help release it from pan, then transfer to a platter or cutting board. Top with Parmesan, a drizzle of oil, and a few cranks of pepper. Slice into wedges and serve warm.

I got this recipe from my monthly Betty Crocker recipe book (Jan 2001). It is very easy to make and so good. I used about a cup of swiss cheese and I used fresh chopped basil. The flavor was amazing! I added a salad and it made a complete meal.

4 ounces uncooked angel hair pasta
18 -25 slices French baguettes, about 1/4 inch thick
2 tablespoons margarine or 2 tablespoons butter, melted
3/4 cup shredded swiss cheese
2 tablespoons chopped fresh basil or 2 teaspoons dried basil leaves
1 (10 ounce) container refrigerated alfredo sauce
3 medium roma tomatoes, chopped
2 medium green onions, sliced
1 tablespoon grated romano cheese or 1 tablespoon parmesan cheese

Steps:

  • Heat Oven to 400. Cook and drain pasta as directed on package.
  • While pasta is cooking, brush bread with butter. line bottom and side of pie plate, 9 x 1 1/2 inches, with bread, butter side up and slightly overlapping slices. Bake about 10 minutes or until light brown.
  • Reduce oven temperature to 350. Stir swiss cheese and 1 tablespoon of the basil into the alfredo sauce. Toss sauce and pasta. Spoon into baked crust. Sprinkle with tomatoes, onions and Romano cheese.
  • Bake 15 - 20 minutes or until hot. Let stand 5 minutes before cutting. Sprinkle with remaining basil.

Use leftover French bread to create a delicious creamy pasta pie rich in cheese and tomatoes.

4 oz uncooked angel hair (capellini) pasta
18 to 25 slices baguette or French bread, about 1/4 inch thick
2 tablespoons butter or margarine, melted
3/4 cup shredded Swiss cheese (3 oz)
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
1 container (10 oz) refrigerated Alfredo pasta sauce
3 medium plum (Roma) tomatoes, chopped
2 medium green onions, sliced (2 tablespoons)
1 tablespoon grated Romano or Parmesan cheese

Steps:

  • Heat oven to 400°F. Cook and drain pasta as directed on package.
  • Meanwhile, brush bread with butter. In 9-inch glass pie plate, line bottom and side with bread, butter sides up and slightly overlapping slices. Bake about 10 minutes or until light brown.
  • Meanwhile, in large bowl, mix Swiss cheese, 1 tablespoon of the basil and the Alfredo sauce.
  • Reduce oven temperature to 350°F. Add pasta to sauce mixture; toss to mix thoroughly. Spoon into baked crust. Sprinkle with tomatoes, onions and Romano cheese.
  • Bake 15 to 20 minutes or until hot. Let stand 5 minutes before cutting. Sprinkle with remaining 1 tablespoon basil.

  • Bring a large pot of water to a boil. Preheat the oven to 425ºF and set a rack in the middle position. Butter a 9 1/2-inch springform pan. Tightly wrap the bottom of the pan with a large sheet of aluminum foil, crimping the foil against the outer edges to tightly seal.
  • In a large skillet, heat the oil over medium-high heat. Add the onion and garlic and cook for 1 minute. Add the broccoli and 1 tablespoon of water and cook until the broccoli is crisp-tender, 2 to 3 minutes. Add the sausage and cook, breaking the meat into small bits, until cooked through, about 6 minutes. Stir in the tomato paste and cook for 1 minute, then add the crushed drained tomatoes and 1/4 teaspoon salt. Cook, stirring occasionally and scraping any bits from the pan, until the liquid is mostly evaporated, about 5 minutes. Remove from the heat and set aside.
  • Add salt to the boiling water and cook the spaghetti just until very al dente, 7 to 8 minutes (look for a white spot in the center when you bite into a strand). Drain the pasta (do not rinse) and reserve the pot.
  • In a medium bowl, whisk together the milk, eggs, pepper, and 3/4 teaspoon salt. Combine the spaghetti and milk mixture in the pot; add in the sausage-broccoli mixture, cheddar, fontina, and 1 cup of the Parmesan; stir until well combined.
