TARTUFO (ITALIAN ICE CREAM) RECIPE

Tartufo (Italian Ice Cream) Recipe image

Native to Southern Italy, Tartufo is a simple no-bake dessert recipe made with ice cream, cherries, cookie crumbs, and homemade chocolate magic shell.

Provided by Clarice Lam

Categories     Dessert

Time 4h38m

Yield 6

Number Of Ingredients 7

3 1/2 cups chocolate ice cream
1 1/2 cups cherries (frozen, pitted, thawed and chopped)
1 cup milk chocolate (chopped)
20 chocolate sandwich cookies (finely crushed)
1 1/2 cups semisweet chocolate chips
1/2 cup milk chocolate (chopped)
2 teaspoons plain vegetable oil

Steps:

  • Gather the ingredients.
  • Let the ice creams stand at room temperature for 10 minutes to soften slightly. Line 6 small (about 5-ounce) ramekins or bowls with plastic wrap.
  • In a food processor , grind the chocolate wafer cookies. If you don't have a food processor you can place the cookies in a sealable plastic bag and use a rolling pin to crush them as fine as possible. Place the crumbs into a medium bowl and set aside.
  • Using a spoon scoop some vanilla ice cream into each plastic-lined ramekin about halfway full.
  • Place a cherry on top of the ice cream in the center of each scoop.
  • Scoop enough pistachio ice cream over the cherry to fill the rest of the ramekin.
  • Sprinkle 1 tablespoon of the cookie crumbs to cover the surface of the pistachio ice cream and pull the edges of the plastic wrap together to close. Freeze for at least 3 hours.
  • Meanwhile, make the magic shell by melting the chocolate in a large microwave-safe bowl at increments of 45 seconds, giving a little stir between heatings. When it is almost completely melted take it out of the microwave and stir using the residual heat to melt the rest.
  • Add the coconut oil and whisk until completely combined and smooth.
  • Take the ramekins out of the freezer and unwrap each tartufo, placing them cookie-crumb-side-down on a wire rack over a parchment-lined rimmed sheet tray.
  • Pour the magic shell over each dome of ice cream to completely coat. Tap the sheet tray on the counter lightly to shake off any excess chocolate.
  • Carefully lift each tartufo off the wire rack using a small offset spatula and gently place them one at a time in the bowl of cookie crumbs. Roll the tartufo to coat, gently pressing the crumbs into the chocolate, if necessary, to make them stick.
  • Place them on a plate and freeze for 1 hour before serving. Or wrap each one individually in plastic wrap and store them in a large air-tight container in the freezer until needed.

ITALIAN RAINBOW COOKIE ICE CREAM CAKE

Italian Rainbow Cookie Ice Cream Cake image

This geometric no-bake ice cream cake gets its flashy style from everyone's favorite tri-color Italian cookie.

Provided by Food Network Kitchen

Categories     dessert

Time 9h10m

Yield 8 to 10 servings

Number Of Ingredients 5

2 pounds Italian rainbow cookies, chilled until very firm
4 ounces bittersweet chocolate, chopped
1 tablespoon coconut oil
2 pints vanilla ice cream, softened
1 pint dark chocolate ice cream, softened

Steps:

  • Cut the cookies to form 1-by-1-by-1/2-inch squares. Line a 9-inch springform pan with plastic wrap. Arrange the cookie squares all the way around the sides of the pan with the color lines running perpendicular to the bottom of the pan. Repeat with an additional ring of cookies above the first ring, lining up the colors as much as possible, so the cookies come 2 inches up the sides of the pan and almost completely cover them.
  • Lay one cookie square in the middle of the bottom of the pan. Arrange a second cookie square next to it, with the color lines perpendicular to the color lines in the first cookie. Continue arranging cookie squares to create a parquet floor pattern. Fill the bottom of the pan with cookies, cutting some to fill in any odd-shaped areas. Chill until cold, about 30 minutes.
  • Combine the chocolate and oil in a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until melted, about 2 minutes. Using a pastry brush, coat the cookies on the bottom and sides with a thin layer of chocolate. Chill until set, about 5 minutes.
  • Spread one of the pints of vanilla ice cream in an even layer over the chocolate-coated bottom cookies. Freeze until hard, about 1 hour. Spread the chocolate ice cream in an even layer over the vanilla. Freeze until hard, about 1 hour. Spread the remaining pint of vanilla ice cream in an even layer over the chocolate ice cream. Cover with the remaining cookie pieces. Freeze until solid, 6 hours to overnight.
  • When ready to serve, invert the cake onto a plate so the bottom layer of cookies is on the top. Remove the pan and peel off the plastic wrap. Cut with a hot dry knife.

ITALIAN CREMA ICE CREAM (GELATO ALLA CREMA)

Italian Crema Ice Cream (Gelato alla Crema) image

Answering the question 'What would vanilla ice cream taste like without any vanilla?', Italian 'crema' ice cream is exceptionally delicious not because of what's in it, but rather what isn't. Ironically, it might be the best vanilla ice cream I've ever had. Without any other flavors in the way, all you taste is the sweet goodness of milk and cream, which I think is a revelation.

Time 12h40m

Yield 7

Number Of Ingredients 6

⅔ cup white sugar
1 tablespoon white sugar
5 egg yolks
1 cup heavy cream
⅛ teaspoon kosher salt

  • Pour custard through a fine mesh strainer and refrigerate until completely chilled, 8 hours to overnight.
  • Pour mixture into an ice cream maker and churn according to manufacturer's instructions, about 20 minutes. Seal top with plastic wrap, cover with a lid, and freeze until firm, at least 4 hours.

ICED ITALIAN COOKIES

Iced Italian Cookies image

Posted by request, these pretty little cookies are very often served at holiday gatherings in many Italian American families. You may shape them any way you prefer, and change the flavoring of the icing slightly to suit your tastes. The original recipe came from one of my favorite community style cookbooks called "Preserving Our Italian Heritage" compiled by the Sons of Italy Florida Foundation. I combined several variations submitted by 5 different ladies, all of whom used the same basic cookie recipe but used slightly different methods in shaping and icing the cookies. The yield will vary depending upon how you shape your cookies.

Provided by HeatherFeather

Categories     Dessert

Time 50m

Yield 1 batch cookies (amount will vary upon shape)

Number Of Ingredients 10

1/2 lb butter, softened (2 sticks)
2 large eggs, beaten
1 cup sugar
4 cups flour
2 tablespoons baking powder
2 tablespoons vanilla
1 3/4 cups powdered sugar (1/2 of a 1-pound box)
2 tablespoons milk
1 tablespoon vanilla or 1 tablespoon fresh lemon juice
colored crystal sugar, to decorate

Steps:

  • Cream butter and sugar until soft and creamy.
  • Add eggs and vanilla, mixing well.
  • Combine flour and baking powder, then blend into the butter mixture.
  • Break off small, walnut sized pieces of dough and shape into bows, braids, knots,"s" shapes, or any shape you desire.
  • Bake in a preheated oven at 375 F until lightly browned, about 15-20 minutes.
  • Cool on wire racks, then ice as desired.
  • Icing: Blend sugar and your choice of flavoring, adding milk slowly to form a soft, smooth icing (some ice the cookies while they are still warm, others wait until they are cooled).
  • Sprinkle with colored sugar or confettini (tiny multi-colored sprinkles) before icing sets.

COOKIES & CREAM ICE CREAM

Cookies & cream ice cream image

Your guests will be impressed with this rich and indulgent ice cream

Provided by Barney Desmazery

Categories     Dessert, Snack, Treat

Time 35m

Yield Serves 6

Number Of Ingredients 5

600ml double cream
1 plump vanilla pod
100g golden caster sugar
4 egg yolks
300g/11oz pack chocolate chip cookie dough

Steps:

  • Place a container in the freezer. Split the vanilla pod lengthways, scrape the seeds out with the point of the knife and tip into a pan with the cream and pod. Bring to the boil, then remove from the heat and leave to infuse for at least 20 mins. For the best flavour, this can be done a few hours beforehand and left to go cold (see tips, below).
  • In a large bowl, whisk the sugar and egg yolks together for a few minutes until they turn pale and fluffy. Put the vanilla cream back on the heat until it's just about to boil, then carefully sieve the liquid onto the yolks, beating with the whisk until completely mixed.
  • At this point, get a large bowl of iced water and sit a smaller bowl in it. Pour the custard back into the pan and cook on the lowest heat, stirring slowly and continuously, making sure the spoon touches the bottom of the pan, for about 10 mins until thickened (see rules, below). Strain the custard into the bowl sitting in the iced water and leave to cool, then churn until scoopable (see methods, below).
  • Roll pieces of cookie dough into balls or thin snakes, flatten them with your hands and layer through the ice cream. Freeze until solid.
