MY MAMA'S BRACIOLE

8 slices beef braciole, beef very thinly sliced
Coarse salt and black pepper
8 slices prosciutto di Parma
1 1/2 cups plain bread crumbs, eyeball it
1/2 cup milk, eyeball it
2/3 cup Parmigiano-Reggiano, 3 handfuls
1 small onion, finely chopped
1/2 cup flat-leaf parsley leaves, a couple of handfuls, chopped
1 cup chopped arugula
Plain round toothpicks
2 tablespoon extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, cracked away from skin
2 tablespoons butter
12 crimini mushrooms, finely chopped
2 tablespoons flour
1 cup dry white wine
1 cup beef broth
1 rounded tablespoon tomato paste

Steps:

  • Season meat with salt and pepper. Top each slice of meat with a slice of prosciutto. In a medium bowl, moisten bread crumbs with milk. Add grated cheese, onion, parsley, arugula, salt and pepper to the crumbs and combine well. Spread a thin layer of stuffing down the center of each beef slice and roll tightly. Fasten rolled meat with plain toothpicks.
  • Heat a large nonstick skillet over medium high heat. Add oil to a hot pan along with garlic. Set meat into pan and brown on all sides, 6 minutes. Remove the meat from the pan. Add butter to the pan. Add mushrooms to the melted butter. Saute mushrooms 5 minutes. Add flour to the pan and cook 2 minutes. Whisk wine into the flour and mushrooms and scrape up pan drippings. Reduce wine 1 minute, then whisk in beef broth and tomato paste. Set meat back into sauce and reduce heat to medium low. Partially cover pan with a cover left ajar an inch. Simmer meat in sauce 10 to 15 minutes. Transfer beef rolls to a platter, removing toothpicks. Pour pan gravy down over the beef rolls and serve.

Rachael turns an inexpensive cut of meat into a delicious dinner. The whole family loves this! I serve it with salad and some orzo tossed with parmesan cheese, a little butter, and fresh-ground pepper.

2 tablespoons evoo extra virgin olive oil
4 beef cube steaks (about 2 pounds total)
salt & fresh ground pepper
1 slice pancetta (optional) or 1 slice bacon, chopped (optional)
1/2 medium onion, chopped
1 garlic clove, finely chopped
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
1 (8 ounce) can tomato sauce

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Season the steaks with salt and pepper, and sear in the pan (working in batches if need be) until the steaks have a nice crust on the outside, about 3 minutes per side.
  • Remove the cooked steaks from the skillet and reserve warm on a plate. Return the skillet to medium-high heat and add the pancetta or bacon, if using. Cook until golden brown and crispy, about 5 minutes.
  • Add the onion and garlic to the pan, and cook until tender, about 5 minutes. Add the balsamic vinegar, brown sugar, Worcestershire and tomato sauce to the pan, season with salt and pepper, and bring up to a bubble. Reduce the heat to medium and simmer the sauce until lightly thickened, 3-4 minutes.
  • Serve the steaks with a hearty pour of the Italian BBQ sauce and a fresh green salad alongside.

6 slices meaty bacon, optional
One 22-ounce bag frozen waffle-cut fries or potato wedges
Salt and pepper
4 large or 5 medium portobello mushroom caps, trimmed and wiped clean (store in paper bag or paper towels; see Cook's Note)
1 cup loosely packed dried porcini mushrooms
1 1/2 cups beef or chicken stock or water
About 3 tablespoons EVOO
2 tablespoons butter
1 large shallot
3 large cloves garlic
1 small handful of thyme sprigs
1/2 cup flat-leaf parsley tops
1/2 cup Marsala
1 lemon
1 cup heavy cream
1/2 pound gorgonzola dolce
Finely chopped chives, to serve
One 2-pound piece sirloin or two 1-pound sirloin steaks, flat iron steaks or hanger steaks
Kosher salt and coarse black pepper
4 sprigs rosemary
Olive oil, about 1 tablespoon
1 lemon
2 tablespoons butter
2 cloves garlic
Baby arugula, kale or watercress, to serve

Steps:

  • For the fries and Marsala mushrooms: Turn oven on 425 degrees F, a rack in lower third and another in upper third of oven.
  • Gather bacon, fries, fresh and dried mushrooms, stock, butter, shallots, garlic, thyme, parsley, rosemary and steaks.
  • Arrange bacon on broiler pan or wire rack over baking sheet. Arrange the waffle fries on a second large baking sheet. Place fries on top shelf and bacon below in oven. Cook bacon 15 minutes or until brown and very crisp (bacon is optional topping for fries). Cook waffle fries (or potato wedges) 25 minutes, turning once, then season with salt and pepper before topping and serving.
  • Gill the portobellos (scrape the underbelly of caps) and thinly slice.
  • Place dried mushrooms in small pot or pan, cover with stock or water, bring to a boil and reduce to 1/2 cup liquid, 6 to 7 minutes.
  • Heat a large cast-iron skillet, cast-iron griddle or heavy skillet over medium-high heat for steaks.
  • Heat a large skillet over medium-high to high heat with EVOO, 2 turns of the pan. Add butter to oil and melt. Add fresh mushrooms and brown, 5 to 6 minutes. Meanwhile, peel and chop shallot and grate or chop 2 cloves garlic; strip thyme leaves and chop; finely chop parsley. Add shallots and garlic to mushrooms with salt and pepper and thyme; stir, add Marsala and let it evaporate. Add porcini mushrooms and most of the stock; reserve the last of it as it may collect grit. Add the juice of a lemon and parsley, then reduce heat under the mushrooms to warm.
  • Grab more ingredients: cream, cheese and chives.
  • Heat cream and a clove of crushed garlic in small pot over medium to medium-high heat, reduce by a third and add gorgonzola; turn heat to low.
  • For the sliced steak with rosemary: Season the steaks with kosher salt and coarse pepper. Strip rosemary leaves and coarsely chop, then rub into meat. Add olive oil to pan, 1 turn of the pan, add steaks and cook meat 8 minutes, turning occasionally. Brown and char a halved lemon with steaks the last minute or two. Reduce heat under pan and remove lemon, then add butter and crushed garlic to pan and spoon over meat. Remove meat and rest a couple of minutes, then slice against grain and top with lemon juice.
  • Chop bacon, if using.
  • Serve sliced steak with a small pile of greens to one side, mushrooms along the other side and waffle fries topped with gorgonzola sauce, bacon bits and chives at end of plate or platter.

A simple-to-make recipe that's also inexpensive! Makes the house smell wonderful as it cooks, and tastes great on those chilly fall nights. We typically serve this over cooked egg noodles with a tossed green salad, but it would be nice over rice, as well. Enjoy!

2 lbs beef cube steaks
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 (14 1/2 ounce) can canned diced tomatoes
1 (15 ounce) can canned tomato sauce
1 large onion, thinly sliced
1 teaspoon italian seasoning
5 small zucchini, cut into 1/2 inch slices

Steps:

  • In a large resealable plastic bag, place the cube steak, flour, salt, and pepper. Seal, and shake to coat.
  • Heat the olive oil in a large skillet over medium heat, and brown the cube steak.
  • Reduce heat to low, and mix in the tomatoes, tomato sauce, onion, and Italian seasoning.
  • Cover, and simmer at least 1 hour, stirring once.
  • Place the zucchini in the skillet, and coat with the tomato sauce.
  • Continue to simmer uncovered 10 minutes, or until zucchini is tender.

4 cube steaks
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 (8 ounce) can tomato sauce
1 (4 ounce) can mushrooms
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon garlic
1/8 cup onion, finely diced
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
2 tablespoons oil

Steps:

  • Preheat oven to 350 degrees.
  • Put oil in skillet, and add cube steaks. Cook until just brown.About 8 minutes.
  • Mix the tomato sauce with the basil, oregano, garlic, onion, and mushrooms.Pour over cube steak and put in preheated oven for 20-25 minutes.
  • Top with the mozzerella, and then the parmesan cheese. Return to oven til melted. About 5 minutes.

Olive oil (not EVOO) or neutral oil
Kosher salt and coarse pepper
Butter, garlic and herbs, for finishing, optional

Steps:

  • Remove meat from refrigeration 20 to 30 minutes before cooking, if possible. The larger the piece of meat, the more time it will need to rest at room temp.
  • Preheat your pan or cooking surface over high heat. For steaks over 1 inch thick or on the bone, preheat oven with rack at center to 375 degrees F.
  • Oil the meat, not the pan. Use olive oil (not EVOO) or neutral oil (light in color and flavor and suitable for cooking at a high-temp) and oil the meat, then season and place on hot cooking surface. Do not move for 2 to 3 minutes to develop the sugars, color, crust and flavor.
  • Brown the steaks about 3 minutes per side to develop crust and color before transferring them to the oven (if using). Brown the fat of any steak as well before transferring. Steaks 1 inch thick or quick-cooking steaks, such as any "flat steaks," cook in about 8 minutes, turning occasionally for medium-rare to medium doneness (see Cook's Note). Skirt steaks will cook in just 6 to 7 minutes.
  • When the steaks are just about to temperature, add butter, garlic and herbs to pan and spoon over steak to baste. Remove meat from the pan or grill 5 degrees before the desired temperature of the steak, as it will continue to cook as it rests due to carry-over cooking. Let the meat rest for 5 to 10 minutes to allow the juices to settle back into the meat before slicing.
