ITALIAN BEEF AND RICE CASSEROLE



Italian Beef and Rice Casserole image

This Italian Beef and Rice Casserole is a filling dinner that adults and kids love! Ground beef is nestled in tender rice and packed with lots of veggies and delicious Italian flavors for a hearty casserole that will fill you up!

1.5 lbs ground beef
1 onion (diced)
1 green pepper (diced)
14.5 oz canned tomatoes ((1 can))
1 cup shredded carrots
2 cups white rice ((I use jasmine))
2.5 cups beef broth
2 tbsp Italian seasoning
1 tsp garlic powder
1 tsp salt
1 cup mozzarella cheese
parsley (chopped)

Steps:

  • Brown and drain the ground beef. Place the ground beef in a large casserole dish.
  • Mix in the onion, green pepper, diced tomatoes, shredded carrots, rice, broth, garlic powder, salt, and Italian seasoning.
  • Cover tightly with foil and bake at 400˚F for 50-60 minutes, or until the rice is tender.
  • Once the rice is tender, remove the foil, add the cheese to the top, and bake for 5 more minutes, or until the cheese is melted.
  • Once the cheese is melted, remove from oven, garnish with chopped parsley (optional) and serve warm.

I strongly recommend converted rice for this, I have used regular long grain white rice for this recipe and the texture of the cooked rice was too soft.

1 1/2 cups uncooked converted white rice (Uncle Ben's Original brand is best)
1 1/2 cups dry white wine
1 (19 1/2 ounce) can tomatoes, drained and cut up
1 (10 3/4 ounce) can chicken broth
2 medium zucchini, sliced 1/2 inch thick
2 medium onions, chopped
1 cup water
1/4 cup butter
salt and pepper
2 tablespoons minced fresh garlic (or to taste)
1 teaspoon dried basil
1 bay leaf
1 cup sharp cheddar cheese, shredded
1 cup grated romano cheese or 1 cup parmesan cheese
1 cup heavy whipping cream (unwhipped)

Steps:

  • Set oven to 400 degrees.
  • Butter a 13 x 9-inch baking pan.
  • In a large bowl, combine ALL ingredients EXCEPT the cheddar, Romano OR Parmesan cheese and the whipping cream; mix well to combine all ingredients.
  • Transfer to a prepared baking dish.
  • Cover with foil, crimping the foil very tightly to edges of dish not to let any steam escape.
  • Bake for 1 hour (stirring at the end of 30 minutes).
  • Remove from oven and stir in the cheeses and the whipping cream.
  • Return to oven; continue to bake for 10 minutes longer.
  • Note: although I have never tryed it, I presume that half and half cream may be replaced for the whipping cream.

1/4 cup chopped onion
2 garlic cloves, minced
1/4 cup butter, cubed
3 cups cooked long grain rice
2 cups shredded cheddar cheese
1 cup minced fresh parsley
1 cup whole milk
4 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon salt

Steps:

  • In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

2 garlic cloves, minced
2 teaspoons olive oil
8 cups fresh spinach (about 10 ounces), chopped
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups hot cooked rice
1/2 cup chopped roasted sweet red peppers

Steps:

  • In a large nonstick skillet, saute garlic in oil for 1 minute. Stir in spinach. Cover and cook for 3-4 minutes or until tender; drain well. Add the vinegar, salt and pepper. Stir in the rice and red peppers until combined. Cook and stir until heated through.

  • Preheat the oven to 180°C (350°F). In a saucepan, begin cooking the rice. In a separate large frying pan, add the olive oil over medium-low heat.
  • Add the onion and garlic to the pan and soften for approximately 3 minutes. Add the courgette and soften for 2 minutes, then the diced pepper and soften for another 2 minutes. Add the tomato puree and stir to coat the veggies. Cook for one minute.
  • Add the passata, water, dried herbs and chilli flakes and bring to simmer. Allow to simmer for approximately 20 minutes or until reduced. Season to taste. The rice should be cooked by this time.
  • Once the sauce is reduced, add the rice, fresh basil and black olives and stir them in. Place half of this mixture in the base of the casserole dish(es). Top with parmesan, then add the remaining half of the rice mix and top with sliced mozzarella. Bake for 20 minutes or until cheese is golden. Serve immediately.
