This recipe contains no potatoes. It gets it name from the look of the candy. I have not tried this recipe myself. It is for an ISO request. Recipe says you can also dip in melted chocolate for Easter eggs.

1/4 cup softened butter
4 ounces cream cheese, softened
1 teaspoon vanilla extract
1 (16 ounce) package confectioners' sugar
7 ounces sweetened flaked coconut (2 1/2 cups)
1 tablespoon ground cinnamon

Steps:

  • NOTE: Be sure to use regular cream cheese, not whipped or reduced fat type.
  • In a large bowl, cream together the butter and cream cheese.
  • Add vanilla and confectioners' sugar.
  • Beat until mixture forms a ball.
  • Stir in coconut with a spoon.
  • Roll the mixture between your hands to form small potato-shaped candies or roll into small balls.
  • Place cinnamon in a shallow dish and roll the balls in it.
  • Place the balls on a cookie sheet and chill for about 1 hour or until firm.
  • If you prefer "dirtier potatoes" roll the candy a second time after they have chilled.
  • Alternatively dip in melted chocolate for Easter eggs.

¼ cup butter, softened
½ (8 ounce) package cream cheese
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 ½ cups flaked coconut
1 tablespoon ground cinnamon

Steps:

  • In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.

These do contain potato, but they don't contain coconut! I made this for Saint Patrick's Day with my class years ago when I was in third grade. Later, right before I graduated from high school, I tracked down my former teacher and got her to give me this recipe. It's easy and fun for kids, and making them was such a wonderful memory for me.

1/2 cup mashed potatoes
1/2 teaspoon vanilla
1 lb sifted confectioners' sugar
2 tablespoons ground cinnamon

Steps:

  • Combine mashed potatoes and vanilla.
  • Adding one cup at a time, blend in enough confectioners' sugar to form stiff, non-sticky dough. (Just how much sugar is needed will depend on moisture of potatoes. Baked potatoes tend to be drier than boiled; leftovers tend to be drier than fresh.)
  • Working with about 1 teaspoon of mixture for each candy, shape into small irregular spheres (like new potatoes) and set out on wax paper to dry slightly before coating.
  • Toss candies a few at a time, in a plastic bag with ground cinnamon.
  • Shake off excess cinnamon.
  • Store candies in cool place or refrigerate.

2 (16 ounce) packages confectioners' sugar, or to taste
1 (14 ounce) package shredded coconut, or to taste
⅓ cup light corn syrup (such as Karo®)
2 tablespoons vanilla extract
½ cup ground cinnamon, or as needed

Steps:

  • Place softened butter in a large bowl. Add confectioners' sugar, coconut, corn syrup, and vanilla extract; mix using your hands until combined. Knead until it holds together but is not too sticky, adding more sugar and coconut, if needed.
  • Place cinnamon on a plate. Form the mixture into small, round balls and roll in the cinnamon until coated and they look like tiny potatoes.

I was frantically searching for a non-coconut recipe for Irish Potatoes for St. Patrick's day. I recently became allergic to coconut, so I made this recipe up after not being able to find an alternative online or in any cookbooks I have at home. I think the almonds are a nice twist and help maintain the consistency of the ball instead of just omitting coconut from other recipes I've seen. This is a good no-bake recipe. It is simple to make and easy to eat.

2 cups whole almonds
½ cup ground cinnamon, or more to taste
½ (8 ounce) package cream cheese, softened
¼ cup unsalted butter, softened
1 teaspoon vanilla extract
1 (16 ounce) package confectioners' sugar

Steps:

  • Place almonds in the bowl of a food processor; process until finely ground. Pour cinnamon into a rimmed plate.
  • Mix cream cheese, butter, and vanilla extract in a large bowl until evenly blended. Place the bowl into a large pan filled with ice to help mixture stiffen; make sure butter mixture does not spill out of the bowl.
  • Sift confectioners' sugar into the butter mixture. Add ground almonds and stir until combined. Let mixture rest on ice for 5 minutes.
  • Roll mixture into 1/2-inch balls and roll in cinnamon until coated. Refrigerate until set, about 20 minutes.
