This recipe was passed down through my French Canadian family from my grandmother, to my mother and then to me many years ago. It traditionally takes hours to make, as we let the beans slow cook overnight in the oven on low heat. I decided to try and transform it into a much quicker Instant Pot® recipe with great success! With this method, you don't even have to presoak the beans. These are even better the next day, and they freeze well, too.

8 cups water
1 pound dry navy beans, rinsed and picked through
1 tablespoon olive oil
6 ounces salt pork, diced
6 ounces bacon, cut into small pieces
1 small onion, minced
1 ½ cups water, divided
¼ cup ketchup
⅓ cup molasses
¼ cup brown sugar
1 tablespoon yellow mustard

Steps:

  • Combine water and beans in a multi-functional pressure cooker (such as an Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method for 20 minutes; quick-release remaining pressure according to manufacturer's directions. Unlock and remove the lid. Drain and rinse the beans with cold water and set aside. Rinse and wipe out Instant Pot® insert and place back into the pressure cooker.
  • Turn on Instant Pot® and select Saute function. Heat olive oil until shimmering, 2 to 3 minutes. Add salt pork, bacon, and onion and briefly cook until fat begins to render, 1 to 2 minutes. Pour in 1/2 cup water and scrape any brown bits off the bottom. Turn Instant Pot® off.
  • Whisk together ketchup, molasses, brown sugar, mustard, and remaining 1 cup water in a small bowl. Return cooked beans to the pot along with the ketchup mixture. Gently stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method for 20 minutes; quick-release any remaining pressure according to manufacturer's directions. Unlock and remove the lid. Beans will thicken upon cooling. Serve immediately or freeze portions for later.

Quick Instant Pot® Baked Beans image

I converted my mum's amazing baked bean recipe for the Instant Pot®. I normally have to wait for over 40 minutes as it cooks in the oven, but I love it so much I converted the recipe to cook in the Instant Pot!

8 slices bacon, chopped
2 (15 ounce) cans baked beans with pork
½ cup ketchup
6 tablespoons brown sugar
½ teaspoon dry mustard powder

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon and cook until browned and crispy but not burned, about 6 minutes. Transfer bacon to a baking sheet lined with paper towels. Allow grease to drain.
  • Pour off some liquid from the beans, clearing at least 1 inch from the top of the can, but leaving some liquid. Add beans and remaining liquid, ketchup, brown sugar, and mustard to the Instant Pot®. Mix in bacon. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

Instant Pot Baked Beans image

These Instant Pot "Baked" Beans are smoky, thick, tangy and sweet!

1 lb. dried navy beans
1/3 lb. bacon (sliced into bite sized pieces)
1 medium yellow onion (diced)
3 cloves garlic (minced)
1 2/3 cups water
2 tsp dried mustard powder
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp smoked paprika (regular paprika can be substituted)
1/2 cup packed light brown sugar
1/4 cup ketchup
1/2 cup molasses
1/2 cup barbecue sauce (we like to use a hickory smoke flavored variety)
1 Tbsp apple cider vinegar
1 tsp liquid smoke (optional but recommended if you have it on hand)

Steps:

  • Add dried beans to a large mixing bowl and cover with 7-8 cups of water. Let sit overnight at room temperature.
  • Drain soaked beans, then set aside.
  • Select "saute", and cook bacon, until mostly cooked, about 4 minutes or so. Add onion and cook, stirring occasionally, for about 3 minutes.
  • Add garlic and cook, stirring often, for about 1 minute.
  • Add water and scrape the bottom of the pot, removing any browned bits that remain.
  • Add drained beans, mustard powder, salt, pepper, paprika, brown sugar, ketchup, molasses, bbq sauce, vinegar and liquid smoke (if using).
  • Stir well. Cancel the "saute" function, secure lid, and make sure the pot is in the sealing position.
  • Select "manual" or "pressure cook" and adjust time to 30 minutes.
  • When time is up, let the pot naturally release any pressure by not touching it, for 15 minutes. Then release any remaining pressure.
  • Stir, and check for tenderness. If not tender enough, replace lid and cook another 10-15 minutes or so, with another 15 minutes NPR.
  • If beans are tender, select "saute" and cook, stirring often, for several minutes, or until the beans are cooked down and not too liquid-y.
  • Beans will thicken more as they cool a bit. Serve hot/warm.

Vegetarian baked beans made simple in a multi-functional pressure cooker. While this recipe does require cooking the beans in tw0 steps, the beans' texture is perfectly consistent. Bonus is that you don't have to soak the beans overnight.

1 (16 ounce) package dry navy beans, rinsed and picked through
8 cups water
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
2 teaspoons smoked paprika
1 ¼ cups vegetable broth
¼ cup pure maple syrup
¼ cup apple cider vinegar
3 tablespoons tomato paste
2 tablespoons yellow mustard

Steps:

  • Place beans in a multi-functional pressure cooker (such as an Instant Pot ®). Cover with water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 minutes for pressure to build.
  • Release pressure using the quick release method according to manufacturer's instructions, about 5 minutes. Drain beans in a colander.
  • Select the Saute function and add onion, bell pepper, garlic, oil, smoked paprika, and garlic. Saute until onions are translucent, about 3 minutes. Turn off.
  • Return drained beans back to the pot. Add broth, maple syrup, vinegar, tomato paste, and mustard. Stir to combine.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 minutes for pressure to build. Release pressure using the quick release method according to manufacturer's instructions, about 5 minutes. Remove the lid and let sit 5 minutes to thicken.
