This Instant Pot Baked Beans recipe using dry beans, and no soaking required, will knock your socks off! Tender cooked beans, all made from scratch, in a delicious sweet and smokey sauce.

16 ounces dry navy or pinto beans
8 cups water
1 teaspoon salt
8 slices bacon
1 yellow onion (, finely chopped)
1/2 red or green bell pepper (, cored, seeded, and finely chopped)
2/3 cup barbecue sauce (store-bought or homemade)
1/2 cup ketchup
2 Tablespoons spicy brown mustard
¼ cup cider vinegar
1 teaspoon liquid smoke
½ cup light brown sugar
1/2 cup water

Steps:

  • **DISCLAIMER: I created this recipe using a 6 quart instant pot DUO 60. Some users have had problems with a burn notice for this recipe using different versions of the instant pot. I have tested it many times with this version and had no issue.
  • Add beans, water and salt to instant pot. Cook on manual (high pressure) for 25 minutes. Allow the pressure to naturally release.
  • Remove lid and pour beans into a colander/strainer. Rinse with cold water. Set aside.
  • Set Instant Pot to saute setting. Add bacon and saute for a few minutes until it starts to get golden brown, tossing and scraping down the bottom of the pot often. Drain some of the grease.
  • Add bell pepper and onion and cook until tender.
  • Turn IP off. Add bbq sauce, ketchup, mustard, vinegar and liquid smoke to the pot and stir well to combine.
  • Add brown sugar, water and beans and stir to combine.
  • Secure IP lid, close steam valve and cook on Manual (high pressure) for 15 minutes. Natural release the pressure.
  • Carefully open lid, and gently stir mixture to combine. Enjoy!

28-30 oz. fresh frozen baby lima beans (*)
3 cups water (really just enough to cover beans)
1/2 tsp. black pepper
2 Tbsp. butter (can sub vegan butter)
1 bay leaf
1 tsp. salt

Steps:

  • Place beans, water, black pepper, butter, and bay leaf in IP. Lock lid, close vent, and set manual time for 7 minutes on high pressure.
  • Once cook time is complete, quick-release the pressure.
  • Open lid and add salt. Mix well, then allow to sit for at least 10 minutes on warm setting.
  • Serve and enjoy!

1 cup baby lima beans ((white, not green))
3 cups water

Steps:

  • Add lima beans to a bowl and cover with cool water by about 3 inches (ensuring they're well submerged). Soak overnight, or for at least 6-8 hours at room temperature.
  • Drain lima beans, then add to the Instant Pot. Add water and stir to prevent sticking. Pressure cook on high for 5-7 minutes (it will take about 8 minutes for the Instant Pot to pressurize before cooking begins).
  • Once the timer goes off, allow to naturally release for 15 minutes, then release any remaining pressure. Carefully remove lid once steam has fully escaped and strain off any excess cooking liquid.
  • Enjoy immediately in stews, soups, salads, and more. Store cooled leftovers in the refrigerator up to 5 days or in the freezer up to 1 month. Reheat in a saucepan on the stovetop, adding a little water, as needed, to prevent sticking.

This recipe was passed down through my French Canadian family from my grandmother, to my mother and then to me many years ago. It traditionally takes hours to make, as we let the beans slow cook overnight in the oven on low heat. I decided to try and transform it into a much quicker Instant Pot® recipe with great success! With this method, you don't even have to presoak the beans. These are even better the next day, and they freeze well, too.

8 cups water
1 pound dry navy beans, rinsed and picked through
1 tablespoon olive oil
6 ounces salt pork, diced
6 ounces bacon, cut into small pieces
1 small onion, minced
1 ½ cups water, divided
¼ cup ketchup
⅓ cup molasses
¼ cup brown sugar
1 tablespoon yellow mustard

Steps:

  • Combine water and beans in a multi-functional pressure cooker (such as an Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method for 20 minutes; quick-release remaining pressure according to manufacturer's directions. Unlock and remove the lid. Drain and rinse the beans with cold water and set aside. Rinse and wipe out Instant Pot® insert and place back into the pressure cooker.
  • Turn on Instant Pot® and select Saute function. Heat olive oil until shimmering, 2 to 3 minutes. Add salt pork, bacon, and onion and briefly cook until fat begins to render, 1 to 2 minutes. Pour in 1/2 cup water and scrape any brown bits off the bottom. Turn Instant Pot® off.
  • Whisk together ketchup, molasses, brown sugar, mustard, and remaining 1 cup water in a small bowl. Return cooked beans to the pot along with the ketchup mixture. Gently stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method for 20 minutes; quick-release any remaining pressure according to manufacturer's directions. Unlock and remove the lid. Beans will thicken upon cooling. Serve immediately or freeze portions for later.

Baked beans are a staple breakfast item in Britain. A traditional full British breakfast consists of bacon, sausage, grilled/broiled tomatoes, toast and baked beans. Heinz® Baked Beans in cans are often served there, but homemade is better and healthier. They're flavorful, lightly sweetened, hearty, and quick-and-easy in the Instant Pot®.

2 cups dried navy beans
2 cups water
2 cups low-sodium vegetable broth
3 tablespoons tomato paste
2 tablespoons maple syrup
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 tablespoon brown sugar
1 teaspoon garlic powder
salt and freshly ground black pepper to taste

Steps:

  • Place navy beans in a multi-functional pressure cooker (such as Instant Pot®). Add water and vegetable stock, stirring well. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 28 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the instant-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Test beans for doneness. If they are not quite soft enough, cook in increments of 2 minutes using instant pressure release until you reach your desired doneness. Drain the beans reserving the bean liquid; set aside.
  • Combine tomato paste, maple syrup, Worcestershire sauce, vinegar, brown sugar, garlic powder, and 1 1/4 cups of the reserved bean liquid in the pot. Add cooked beans and season with salt and pepper. Stir until beans are well coated. Select Saute function on low temperature.
  • Cook until mixture starts to bubble and slightly thicken, about 3 minutes. If mixture is too thick, add some more of the reserved bean liquid until you reach your desired consistency.
