EYE-POPPING SOUP



Eye-Popping Soup image

Make your own homemade tomato soup, which will keep you warm on a chilly Halloween night. Create the eye-catching garnish by stuffing individual mozzarella balls with pimento olives.

Number Of Ingredients 14

2 tablespoons unsalted butter
1 onion, finely chopped
3 garlic cloves, minced
1/2 cup dry white wine
2 cans (28 ounces each) crushed tomatoes
1 quart homemade or low-sodium store-bought chicken stock
3 sprigs oregano or marjoram
1/2 cup half-and-half
Coarse salt and freshly ground pepper
6 pitted black Kalamata olives
2 sprigs fresh rosemary
4 fresh chives, cut into 1-inch pieces
1 pound (about 30) bocconcini (bite-size mozzarella balls)
1 jar small pimiento-stuffed olives

Steps:

  • Melt butter in a large saucepan over medium-low heat. Add onion and garlic, and cook until onion is translucent, about 6 minutes.
  • Add wine, and cook until most liquid has evaporated, about 1 minute. Add tomatoes, stock, and oregano, and bring to a boil. Reduce heat, and simmer gently until thickened, about 45 minutes.
  • Using a slotted spoon, remove herbs. Puree soup in small batches until smooth. Return to pan, and slowly pour in half-and-half, stirring constantly. Season with salt and pepper.
  • Meanwhile, make the bugs: Use a toothpick to pierce each Kalamata olive 4 times (all the way through to other side). Insert a rosemary leaf into each hole to make eight legs. Insert two pieces of chive into the small hole at the end of the olive to make antennae.
  • Make the eyeballs: Using a small melon baller, scoop out a hole from each bocconcini. Have each pimiento-stuffed olive crosswise. Place a half, cut side out, in the hole in each bocconcini to make eyeballs.
  • Ladle hot soup into shallow bowls. Float 4 or 5 eyeballs in soup, and place a bug on rim of each bowl.

GREEN GRUEL WITH EYEBALLS

People may feel a bit wary at first glance, but this broccoli soup is delicious and the eyeball is a harmless hard-cooked egg.

Yield Makes 6 servings

Number Of Ingredients 11

3 tablespoons unsalted butter
2 1/2 pounds broccoli, tops chopped into 1/2-inch florets; stalks chopped into 1/2-inch pieces
3 shallots, finely chopped
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 cup vegetable or chicken broth
1/2 pound grated sharp cheddar cheese (2 cups)
6 hard-cooked eggs, peeled
6 pitted black olives
Pinch freshly grated nutmeg

Steps:

  • 1. Melt 1 tablespoon of the butter in a 12-inch nonstick skillet over medium heat. Add the chopped broccoli stems, shallots, garlic, salt, pepper, and nutmeg; cook, stirring, until the shallots are tender, 3 to 5 minutes.
  • 2. Add the broth, cover, and simmer 20 minutes, until the broccoli stalks are tender and the liquid almost evaporated. Remove from the heat, add the cheese, and toss to combine. Working in batches, transfer to a blender and purée until smooth.
  • 3. Bring a large pot of lightly salted water to a boil. Add the florets and cook for 3 minutes. Drain and rinse under cold running water to stop the cooking.
  • 4. Cut a notch in the side of each egg and press an olive into it. Heat broccoli purée over medium heat until just warmed through, 5 minutes. Stir in the florets and the remaining butter. Spoon the gruel into individual soup bowls and top each with an egg eye; serve immediately.

2 small packets yellow Jell-O gelatin
1 1/4 cups boiling water
24 blueberries

Steps:

  • Pour boiling water over the gelatin and stir to dissolve completely. Pour the mixture into ice cube trays with rounded bottoms (you should be able to fill 2 trays). Refrigerate until partially set, about 20 minutes. Push the blueberry eyeballs into the partially set gelatin and refrigerate until thoroughly set. Dip the ice cube tray in warm water for 15 to 30 seconds and run a knife around the edges of each ice cube. Turn the "eyes" out on a serving plate and refrigerate until serving time.

12 small submarine sandwich buns, split
1 large egg
1/4 cup milk
1 tablespoon finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds lean ground beef (90% lean)
2 tablespoons canola oil, divided
2 medium green peppers, julienned
1 medium onion, sliced
1 tablespoon all-purpose flour
1 bottle (12 ounces) chili sauce
1 cup water
1 tablespoon brown sugar
1 teaspoon ground mustard
Sliced pimiento-stuffed olives

Steps:

  • Hollow out bun bottoms, leaving a 1/2-in. shell. Crumble 1-1/4 cups removed bread and place in a large bowl. Cover buns with plastic wrap; set aside., Add the egg, milk, chopped onion, salt and pepper to the bread. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a large skillet, cook meatballs in 1 tablespoon oil for 20-25 minutes or until no longer pink. Remove with a slotted spoon; set aside., Add remaining oil to the skillet; saute green peppers and sliced onion until tender. Remove with a slotted spoon; set aside., Stir flour into skillet. Add chili sauce and water; bring to a boil. Cook and stir for 1-2 minutes. Stir in brown sugar and mustard. Add meatballs, peppers and onion; cover and simmer for 20 minutes., Meanwhile, warm rolls in a 325° oven for 8-10 minutes. Spoon two meatballs and sauce into each roll; replace tops and garnish with olive slices for eyes.

1 tablespoon butter
1 garlic clove, minced
1 cup onion, chopped
1/2 cup celery, chopped
4 cups potatoes, peeled and diced yellow fleshed (about 3 large) or 4 cups oblong potatoes (about 3 large)
4 cups chicken stock, reduced- sodium
1 1/2 cups canadian old white cheddar cheese, shredded
1 cup sour cream (5% M.F.)
6 tablespoons whole cranberry sauce, canned

Steps:

  • In large pot, melt butter over medium heat; cook garlic, onion and celery stirring for 3 to 5 min or until onion is softened. Add potatoes and chicken stock; bring to boil, over high heat. Reduce heat and simmer, stirring occasionally for about 10 to15 min or until potatoes are tender.
  • In a blender, in batches, or with an immersion blender, puree until smooth; return to pot, if necessary. (Make-ahead: Cover and refrigerate up to 2 days.) Stir in cheese and sour cream; heat over low heat until cheese melts.
  • Spoon 1 tbsp (15 mL) cranberry sauce in center of each shallow bowl and ladle soup around cranberries, not covering so it appears as an eyeball. Serve immediately. Serves 6. Preparation 10 minutes, cooking time 32 minutes.
  • Tips:.
  • For a Halloween cocktail party, serve hot soup in 2 oz. (50 mL) shot glasses and top with 1 tsp (5 mL) of cranberry sauce. Yield 30 servings.
