Indonesian-Style Eggplant with Spicy Peanut Sauce image

A delicious and spicy, good vegetarian meal with healthy fats.

3 servings oil spray
1 serving sesame oil
1/4 cup chopped onion
1/4 tsp crushed red pepper flakes
1 lemon yields lemon juice
2 servings Natural Crunchy Peanut Butter
1 unpeeled eggplant- cut into 1/2 thick slices
1 clove garlic, minced
1 cup water
2 tsps soy sauce
1 serving 1 packet sweetener

Steps:

  • Sprinkle the eggplant slices with salt, let drain in a colander for an hour.
  • Rinse and pat dry. Spray the slices with oil on both sides.
  • Put in 400 °F (200 °C) oven and cook for 20 minutes. Can also be grilled on an oiled rack (BBQ) for 7 to 8 minutes, until just cooked.
  • In a small saucepan cook the garlic, onion, pepper flakes in the sesame oil over moderately low heat, stirring occasionally.
  • Add peanut butter, cook for one minute, stirring constantly.
  • Add the sweetener, soy sauce, lemon juice and one cup water.
  • Boil mixture, stirring occasionally, until it is thickened slightly. Add salt and pepper to taste.
  • Serve over the cooked eggplant.

4 teaspoons sesame oil
4 cloves garlic, minced
1 -2 teaspoon crushed red pepper flakes, up to you
2/3 cup crunchy peanut butter
4 teaspoons tamari
4 teaspoons fresh lime juice
2 teaspoons sugar
2/3 cup water
2 medium eggplants
vegetable oil, for brushing

Steps:

  • In a medium saucepan heat the sesame oil over medium heat.
  • Add the garlic and red pepper flakes.
  • Saute for 1 minute.
  • Whisk in the peanut butter, tamari, lime juice, sugar and water, cooking for 2 minutes.
  • Add a touch of water-you want the sauce to be the consistency of hot fudge sauce.
  • Keep warm over low heat.
  • Heat your grill to medium high heat.
  • Slice the eggplant 1/2 inch thick.
  • Brush both sides with oil and lightly salt.
  • Grill for 8-10 minutes or until tender and lightly browned.
  • Brush lightly with sauce and serve with remaining sauce.

1 Garlic minced
2 ts Oriental sesame oil
1 Eggplant (about 1 1/4 pounds) cut into 1/2-inch-thick slices
1 2-inch long fresh hot red rubber gloves or 1/4 teaspoon crushed red pepper flakes
2 ts Soy sauce
1 Shallot minced
1/4 c Ground roasted peanuts
1 ts Sugar
Vegetable oil for brushing

Steps:

  • Sprinkle the eggplant lightly with salt, let it drain in a colander for 1 hour, and pat it dry. In a small saucepan cook the garlic, the shallot, and the chili in the sesame oil over moderately low heat, stirring occasionally, until the vegetables are softened, add the peanuts, and cook the mixture, stirring, for 1 minute. Add the soy sauce, the sugar, the lemon juice, and 1 cup water, boil the mixture, stirring occasionally, until it is thickened slightly, and add salt and pepper to taste. Brush the eggplant, patted dry, with the vegetable oil and grill it on an oiled rack set 5 to 6 inches over glowing coals, turning it, for 7 to 8 minutes, or until it is just cooked. Indonesian Eggplant With Peanut Sauce image

In the classic Indonesian dish, called Petjel Terong, the eggplant is usually deep-fried. In this healthier version, the eggplant is baked in the oven with a small amount of olive oil. The creaminess of the coconut milk and the peanut butter are heavenly. As a side dish, this serves 4, but will serve 3 as a main dish. From Nut Butter Universe by Robin Robertson.

1 large eggplant, trimmed
1 tablespoon olive oil
salt & fresh ground pepper
1 cup unsweetened coconut milk
1/4 cup peanut butter
1 garlic clove, minced
1 tablespoon raw sugar (raw or turbinado sugar)
1 tablespoon fresh lemon juice
1 tablespoon tamari
1/8 teaspoon cayenne, to taste (or use finely chopped fresh hot pepper)
1 tablespoon minced fresh parsley

Steps:

  • Preheat the oven to 425*F. Halve the eggplant lengthwise, then cut each half crosswise into 1/4-inch-thick slices. Arrange the eggplant slices on a lightly oiled baking sheet, brush them with the olive oil, and season with salt and pepper to taste. Bake, turning once, until softened and browned on both sides, about 15 minutes.
  • While the eggplant is baking, make the sauce. In a medium saucepan, combine the coconut milk, peanut butter, garlic, sugar, lemon juice, tamari, and cayenne. Bring to a boil, then reduce the heat to low and simmer, stirring frequently, until the sauce thickens slightly, about 5 minutes.
  • Arrange the eggplant slices on a platter and top with the sauce. Garnish with the parsley.

This peanut sauce recipe is based on my mom's version, which accompanies Gado Gado. Raw peanuts are roasted and then ground for the best flavor.

2 tablespoons vegetable oil (or just enough to coat the peanuts)
1 cup plus 2 tablespoons (200 g) raw skinless peanuts
1 ½ cups (375 ml) water
2 makrut lime leaves (optional)
1 tablespoon seedless wet tamarind pulp, or 2 tablespoons freshly squeezed lime juice
3 tablespoons coconut palm sugar or 2 tablespoons dark brown sugar
2 teaspoons fine sea salt
1 teaspoon sambal oelek chili paste
1 to 2 Thai chiles, chopped (optional)

Steps:

  • Pour the oil into a large wok or and set over medium heat until shimmering hot. Add the peanuts and stir and cook until golden brown, 4 to 6 minutes. Toss them continuously so they cook evenly without burning.
  • Scoop up the peanuts with a slotted spoon and transfer to a paper-towel lined plate to cool. Remove any burnt peanuts, they will taste bitter.
  • When the peanuts are cool enough to handle, grind them in a small food processor or pulverize them with a mortar and pestle until they have the texture of coarse sand.
  • Mix the water together with the lime leaves, tamarind, sugar and salt in a medium saucepan. Bring to a boil over medium-high heat, then adjust the heat until it is bubbling gently. Simmer for about 5 minutes, breaking up the tamarind pulp.
  • Remove the lime leaves and any chunks of tamarind pulp with a slotted spoon. Add the ground peanuts and bring to a boil over medium-high heat. Adjust the heat and simmer gently until thick and creamy like gravy, 8 to 10 minutes, stirring often so the sauce doesn't stick to the bottom of the pot.
  • Remove from the heat and stir in the sambal oelek and Thai chilies (if using). Taste and adjust the seasonings as needed, making sure the acidity of the tamarind or lime sings through.
  • Serve the peanut sauce with vegetables or as a dipping sauce for grilled kebabs.

1/2 cup natural chunky peanut butter
1 tablespoon soy sauce
1 tablespoon dark brown sugar
1 teaspoon finely grated lime zest
1 tablespoon lime juice
2 teaspoons sambal olek or other chile paste
1 garlic clove, finely chopped
6 Asian or baby eggplant
1/4 cup chopped, roasted peanuts
1/4 cup sliced scallions

Steps:

  • In a bowl, whisk together peanut butter, 1/3 cup water, soy sauce, sugar, lime zest, lime juice, sambal olek and garlic.
  • Trim the ends of the eggplant. If using baby eggplant, peel them. Place in a steamer basket set over a pan of simmering water. Cover and cook until tender, about 10 minutes. (Alternatively, you can wrap the eggplants individually in parchment and microwave until tender, 3 to 4 minutes.) Halve eggplants lengthwise.
  • Transfer eggplants to a platter, cut side up. Spoon peanut sauce over eggplant. Garnish with peanuts and scallions.
