Caramelized onions add the perfect touch of sweetness to these mini meat loaves.

Meat Loaf
1 (20-ounce) package lean ground turkey *
1/3 cup seasoned bread crumbs
1 medium (1/2 cup) onion, finely chopped
1 rib (1/2 cup) celery, finely chopped
1/2 cup finely shredded Cheddar cheese
1/4 cup chili sauce **
1 medium carrot, grated
1 large Land O Lakes® Egg slightly beaten
2 teaspoons dry mustard
1/2 teaspoon pepper
Topping
1 tablespoon Land O Lakes® Butter
1 large (1 cup) onion, thinly sliced
Sauce
1/4 cup chili sauce **
2 tablespoons firmly packed brown sugar
2 teaspoons dry mustard

Steps:

  • Heat oven to 350°F. Line 13x9-inch baking pan with aluminum foil; set aside.
  • Combine all meat loaf ingredients in bowl; mix well. (Use hands if necessary.) Form mixture into 4 (4x2 1/2x1-inch) loaves in prepared pan.
  • Melt butter in 10-inch skillet until sizzling; add sliced onion. Cook over medium heat, stirring occasionally, 5-7 minutes or until onion is light golden brown.
  • Combine all sauce ingredients in bowl; mix well. Evenly spread over top of meat loaves. Top each with 1/4 cooked onion. Bake 45-55 minutes or until loaves are no longer pink in center.

1 large egg, lightly beaten
1 large onion, finely chopped
1 small sweet red pepper, finely chopped
3/4 cup shredded part-skim mozzarella cheese, divided
1/2 cup plus 6 tablespoons spaghetti sauce, divided
3 tablespoons grated Parmesan cheese, divided
3 tablespoons quick-cooking oats
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground turkey

Steps:

  • In a large bowl, combine the egg, onion, red pepper, 1/2 cup mozzarella cheese, 1/2 cup spaghetti sauce, 2 tablespoons Parmesan cheese, oats and seasonings. Crumble turkey over mixture and mix well. , Coat 6 jumbo muffin cups with cooking spray; fill with turkey mixture. Bake at 350° for 20 minutes; drain. , Top each loaf with 1 tablespoon spaghetti sauce, 2 teaspoons mozzarella cheese and 1/2 teaspoon Parmesan cheese. Bake 5-10 minutes longer or until a thermometer reads 165° and cheese is melted. Let stand for 5 minutes before removing from pan.

Nonstick cooking spray, for the pan
1 1/2 cups regular oats
1 cup whole milk
2 1/2 pounds ground turkey
4 slices bacon, cut into very small bits
3 tablespoons finely minced fresh parsley, plus more for serving
1/2 teaspoon seasoned salt, such as Lawry's
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 cup ketchup, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
  • Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
  • Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
  • Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
  • Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

1 medium carrot
1 large garlic clove
1 1/2 pounds ground turkey
3/4 cup panko breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon smoked paprika
2 large eggs
1 scallion, chopped
Kosher salt and freshly ground black pepper
1/2 cup chili sauce
2 teaspoons dark brown sugar

Steps:

  • Preheat the oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.
  • Grate the carrot and garlic on the small holes of a box grater into a large bowl. Add the ground turkey, breadcrumbs, parsley, thyme, paprika, eggs, scallions, 1 teaspoon salt and 1/2 teaspoon pepper. Mix with your hands until just combined.
  • Divide the mixture into 6 even portions and form each into a small loaf shape on the prepared baking sheet. Mix the chili sauce and brown sugar in a small bowl and brush over the loaves. Bake until just cooked through, 20 to 25 minutes.

1/2 cup zucchini, shredded, all moisture squeezed out with a paper towel
1/2 medium onion, minced
2 tablespoons diced red peppers, optional at my house
3 garlic cloves, crushed
1/2 cup breadcrumbs, the recipe calls for whole wheat seasoned
1/4 cup harissa
1 large egg
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 1/3 lbs ground turkey
1 1/2 tablespoons harissa, for topping
1 1/2 tablespoons ketchup, for topping

Steps:

  • In a large bowl, mix the zucchini, onion, garlic, red pepper, breadcrumbs, 1/4 cup Harissa, egg, paprika and salt.
  • Add turkey and combine until mixed well.
  • Form the meat into 5 round patties.
  • In a small bowl stir the ketchup and harissa.
  • Spray a large skillet with cooking spray.
  • Heat the skillet over medium heat.
  • Add patties and cook covered for 6-8 minutes per side, reduce heat if they get too brown.
  • Brush the Harissa mixture on top of the patties during the last few minutes of cooking.
