- In a greased 1-qt. baking dish, combine the beans and mushrooms. In a small bowl, combine cornstarch and mustard; gradually stir in broth until smooth. Pour over the vegetables. Dot with butter. , Bake, uncovered, at 375° for 25-30 minutes. Sprinkle with onions. Bake 5 minutes longer.

- Bring a large pot of lightly-salted water to a rolling boil. Add beans and cook until just tender, about 5 minutes. (The beans will not soften too much more during baking, so if you want them softer, cook to your preference.)
- Drain beans, run under cold water, and place in a bowl of ice water to stop the cooking. When beans are chilled, drain and set aside.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray the inside of 4 ramekins with cooking spray.
- Melt butter in a medium skillet over medium heat. Add mushrooms and shallot and cook until they start to brown, 2 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Sprinkle flour over the mushrooms, stirring well to combine. Gradually pour in chicken stock, soy sauce, Dijon, and thyme, stirring constantly; the mixture will be thick at this point. Stir in half-and-half, salt, and pepper until well combined. Reduce heat to low and simmer until flavors have melded and sauce has thickened, 3 to 5 minutes.
- Stir in green beans and bacon until well combined. Spoon into the prepared ramekins and top with French-fried onions.
- Bake in the preheated oven for 13 to 15 minutes. Serve immediately.

- Heat the oven to 375°F Spray 16 (2 1/2-inch) muffin-pan cups with vegetable cooking spray. Stir the green beans, soup, milk, 1 cup cheese and 2/3 cup French fried onions in a large bowl.
- Roll each biscuit into a 4-inch circle. Press the biscuit circles into the bottoms and up the sides of the muffin-pan cups. Divide the green bean mixture among the biscuit cups.
- Bake for 20 minutes or until the biscuit cups are golden brown. Stir the remaining cheese and onions in a small bowl. Sprinkle over the green bean mixture.

MY MINI GREEN BEAN CASSEROLE
I LOVE green bean casserole...I HATE leftovers. This recipe can serve as a side dish for two or as a whole meal for one. If you want you can leave out the mushrooms and substitute for cream of celery. However, I really like mushrooms. Some people may also like to sprikle some french's dried onions on top, but once again, it is not my thing.

Steps:
- Preheat oven to 350*F.
- Chop mushrooms and stick them in microwave-safe bowl. Cover and cook on high for about two minutes or until mushrooms are done.
- Add half of the can of soup and stir to combine.
- Open can of green beans and pour in about half of the liquid from the can. Drain the rest.
- Add the green beans and ground black pepper and stir well.
- Put into small casserole dish and place in over for about 35 minutes.
- Turn the oven off and let stand for five more minutes.
