This Cobb salad has some of my favorite ingredients: chicken, egg, tomatoes, blue cheese and avocado.

Number Of Ingredients 9

6 slices bacon
3 eggs
1 head iceberg lettuce, shredded
3 cups chopped, cooked chicken meat
2 tomatoes, seeded and chopped
¾ cup blue cheese, crumbled
1 avocado - peeled, pitted and diced
3 green onions, chopped
1 (8 ounce) bottle Ranch-style salad dressing

Steps:

  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Divide shredded lettuce among individual plates.
  • Evenly divide and arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.
  • Drizzle with your favorite dressing and enjoy.

1/4 cup red wine vinegar
2 teaspoons salt
1 teaspoon lemon juice
1 small garlic clove, minced
3/4 teaspoon coarsely ground pepper
3/4 teaspoon Worcestershire sauce
1/4 teaspoon sugar
1/4 teaspoon ground mustard
3/4 cup canola oil
1/4 cup olive oil
SALAD:
6-1/2 cups torn romaine
2-1/2 cups torn curly endive
1 bunch watercress (4 ounces), trimmed, divided
2 cooked chicken breasts, chopped
2 medium tomatoes, seeded and chopped
1 medium ripe avocado, peeled and chopped
3 hard-boiled large eggs, chopped
1/2 cup crumbled blue or Roquefort cheese
6 bacon strips, cooked and crumbled
2 tablespoons minced fresh chives

Steps:

  • In a blender, combine the first 8 ingredients. While processing, gradually add canola and olive oils in a steady stream., In a large bowl, combine the romaine, endive and half of the watercress; toss lightly. Transfer to a serving platter. Arrange the chicken, tomatoes, avocado, eggs, cheese and bacon over the greens; sprinkle with chives. Top with remaining watercress. Cover and chill until serving., To serve, drizzle 1 cup dressing over salad. Serve with remaining dressing if desired.

Individual Chicken Cobb Salads with Blue Cheese Dressing image

A pretty presentation for an afternoon with friends, these mini-Cobbs have all the good stuff--avocado, chicken, bacon, and a creamy blue cheese dressing.

1/3 cup mayonnaise or salad dressing
3 tablespoons plain low-fat yogurt
3 tablespoons red wine vinegar
1 clove garlic, finely chopped
1/2 cup crumbled blue cheese (2 oz)
8 cups mixed salad greens
2 packages (5 oz each) sliced smoked chicken breast, chopped
4 hard-cooked eggs, quartered
1 medium ripe avocado, pitted, peeled and sliced
2 medium tomatoes, chopped
1/4 cup bacon flavor bits or chips

Steps:

  • In small bowl, beat mayonnaise, yogurt, vinegar and garlic with wire whisk. Stir in blue cheese. Cover and refrigerate at least 1 hour.
  • Just before serving, arrange greens on 4 salad plates. Top with remaining salad ingredients. Drizzle dressing over salads.
  • If desired, sprinkle with freshly ground black pepper.
