4 cups pitted canned or frozen tart red cherries
3/4 cup sugar
1 tablespoon butter
Pinch salt
1/4 cup cornstarch
1/3 cup cold water
1/4 teaspoon almond extract
1/4 teaspoon red food coloring, optional
Pastry for double-crust pie (9 inches)

Steps:

  • Drain cherries, reserving 2/3 cup juice in a saucepan; discard remaining juice. To the juice, add the cherries, sugar, butter and salt. In a small bowl, combine cornstarch and water until smooth; stir into cherry mixture. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in the almond extract and food coloring if desired. Cool. , Line a 9-in. pie plate with bottom pastry; add filling. Make a lattice crust. Trim, seal and flute edges. Bake at 375° for 45-50 minutes or until crust is golden and filling is bubbly. Cool on a wire rack.

This is a bit like a clafouti - a baked French dessert that is halfway between Yorkshire pudding and custard. I like this for dessert or breakfast.

1/2 cup Bisquick (can use lower-fat version)
1/4 cup sugar
3/4 cup milk
2 tablespoons butter or 2 tablespoons margarine, at room temperature
1/4 teaspoon almond extract
2 eggs
1 (21 ounce) can cherry pie filling
brown sugar, streusel
1/2 cup Bisquick (can use lower-fat version)
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or 2 tablespoons margarine
slivered almonds, toasted, if desired

Steps:

  • Heat oven to 400 degrees. Mist a 9- or 10-inch pie plate with nonstick spray and set aside.
  • Stir together first six ingredients until blended. Pour into prepared pie plate. Spoon pie filling over top. Bake 30 minutes.
  • While pie is baking, make streusel topping by mixing Bisquick, brown sugar and cinnamon in a small bowl, and cutting in butter with a pastry blender, a fork or your fingers, until you have crumbs. Stir in almonds, if using (recommended). After pie has baked 30 minutes, sprinkle Brown Sugar Streusel over pie filling and return to oven to bake another 10 minutes, or until streusel is golden brown. Remove pie from oven and cool.
  • Serve slightly warm, at room temperature or chilled from the refrigerator. It tastes great any way!

1 1 (9 inch) unbaked pie crust (see footnote for recipe link)
½ cup slivered almonds
½ cup light brown sugar
⅓ cup rolled oats
⅓ cup all-purpose flour
¾ teaspoon salt
6 tablespoons cold, unsalted butter, cut into pieces
2 pounds cherries, pitted
½ lemon, juiced
⅓ cup white sugar, or more to taste
¼ cup cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Roll out pie crust and lay into a 9-inch pie pan.
  • Combine almonds, brown sugar, oats, flour, and salt in a large bowl. Work butter into the almond mixture with your fingers, breaking up any large pieces, until incorporated completely. Cover and chill for 15 minutes.
  • Combine cherries, lemon juice, white sugar, and cornstarch. Stir until well coated and no dry lumps remain, 3 to 4 minutes.
  • Pour cherries and any accumulated juices into the prepared pie pan. Press down into the pan. Crumble oat mixture over the top. Place the pan on the prepared baking sheet.
  • Bake in the preheated oven until cherries are bubbling and the crust and crumble topping are browned, about 1 hour 15 minutes. Let cool completely.

Cherry Almond Pie is an easy fruit pie recipe with a fresh cherry filling flavored with almond and a lattice crust sprinkled with almonds.

2 refrigerated pie crusts
1 large egg (, beaten)
5 cups cherries (, pitted)
1 tablespoon lemon juice
1/2 teaspoon almond extract
1/2 cup sugar
1/2 cup flour
2 tablespoons unsalted butter (, chopped)
2 tablespoons coarse sugar
2 tablespoons sliced almonds

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the cherries with the sugar, flour, almond extract, and lemon juice until no visible flour is left. Allow to sit while you make the lattice top crust. then pour it in the pie crust and top with the butter.
  • Place the first pie crust in the bottom of the pie plate and cut the second one into strips and brush the pie crust in the pie plate with the egg.
  • Spoon the cherry filling into the bottom crust, careful not to add too much cherry juice.
  • Scatter chopped butter pieces evenly over cherry filling.
  • Top with the strips of pie crust in a lattice design, brush with the remaining amount of egg and sprinkle with almonds and sugar.
  • Bake at 425 degrees for 15 minutes then reduce to 375 degrees and bake for an additional 25 minutes before cooling completely.

1 teaspoon double-acting baking powder
1 tablespoon flour
1 tablespoon graham cracker crumbs
1 cup butter
1 cup sugar, divided
3 eggs
1/2 cup cold water
confectioners' sugar, for garnish
creme fraiche

Steps:

  • Preheat the oven to 350°F degrees.
  • Grease and flour a 9-inch pie plate.
  • In a small bowl, combine the almonds, baking powder, flour, and graham cracker crumbs.
  • In another small bowl, mix the butter and 1/2 cup of the sugar.
  • Stir the almond mixture into the butter and sugar.
  • Beat in the eggs, one at a time, mixing well after each addition.
  • Pour the mixture into the pie plate and bake for 25-30 minutes.
  • While the pie is baking, combine the remaining 1/2 cup sugar with the 1/2 cup cold water in a saucepan and simmer until the syrup is reduced to 1/2 cup.
  • Pour the syrup over the hot pie when the pie comes out of the oven.
  • Sift the confectioners' sugar over the top.
  • May be served with crème fraîche.

1 c milk
2 Tbsp margarine or butter,softened
1/4 tsp almond extract
2 large eggs
1/2 c bisquick mix
1/4 c granulated sugar
21 oz can cherry pie filling
STREUSEL:
2 Tbsp firm margarine or butter
1/2 c bisquick mix
1/2 c brown sugar, firmly packed
1/2 tsp ground cinnamon

Steps:

  • 1. Pie: Heat oven to 400^. Grease a 10-inch pie plate. Beat all ingredients, except the pie filling and Streusel until smooth, about 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate. Spoon pie filling evenly over top. Bake for 25 minutes. Remove from oven and top with streusel. Bake until streusel is brown, about 10 minutes. Cool on wire rack. --- Streusel: Cut butter into the Bisquick,sugar and cinnamon until crumbly.

1 ½ cups all-purpose flour
½ cup white sugar
½ cup butter, cubed
½ cup sliced almonds

2 cups pitted fresh tart cherries, halved, or more to taste

1 tablespoon almond extract, or more to taste
1 tablespoon amaretto liqueur, or more to taste
1 tablespoon cornstarch

Steps:

  • Combine flour and sugar for crust in a bowl. Cut in butter using hands to mix and mush until thoroughly combined and mixture resembles tiny pebbles or cornmeal. Stir in almonds. Sprinkle with ice water until dough holds together in a ball. Cover in plastic wrap and refrigerate at least 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Toss cherries, sugar, and salt for filling together in a bowl.
  • Combine almond extract, amaretto, and cornstarch in a separate bowl until smooth; add to cherry mixture and mix well.
