IDAHOAN COCA-COLA® CAKE



Idahoan Coca-Cola® Cake image

This recipe originally came from one of our favorite Food Network stars, Nigella Lawson. A little alteration here and there (like including Idahoan's Original Mashed Potatoes) to this wonderfully rich cake made with Coca-Cola® and a new favorite was created.

Number Of Ingredients 12

2 cups Idahoan® Boxed Original Mashed Potatoes, dry
1 stick unsalted butter
8 ounces Coca-Cola® (or Guinness® for an adult cake)
½ cup unsweetened cocoa powder
1 ¾ cups superfine sugar
½ cup sour cream
2 medium eggs
1 tablespoon vanilla
2 ½ teaspoons baking soda
2 (8 ounce) packages cream cheese
⅓ cup heavy cream
¾ cup powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Coat the sides and bottom of spring form pan with nonstick cooking spray.
  • Melt stick of butter in a large, wide sauce pan.
  • Add cola, cocoa powder and superfine sugar and whisk until smooth. Remove from heat.
  • Whisk sour cream, eggs and vanilla thoroughly until almost a batter-like consistency and add slowly into the slightly cooled butter mixture.
  • Add dry Original Mashed Potato flakes and baking soda. Stir thoroughly. The batter will have a slightly grainy appearance but don't be concerned.
  • Pour into spring form pan and bake for 45 minutes to an hour. Test center of cake with a wooden toothpick (cake is done when the toothpick comes out clean).
  • Cool and remove from spring form pan. Note: This is a very dark and dense cake.
  • Frosting: The cream cheese should be at room temperature. Add cream and powdered sugar and mix in a food processor or with a large whisk. Adjust powdered sugar and cream to ensure a nicely thick frosting that is still spreadable.
  • Frost just the top of the cake once it's unmolded and serve chilled. This cake is even better the next day!

This recipe for Molten Lava Cake proves that Idahoan Mashed Potatoes don't have to be saved for just savory applications!

4 ounces bittersweet chocolate, broken into small pieces
4 ounces semisweet chocolate, broken into small pieces
¼ cup unsalted butter, cut into small pieces
4 eggs
½ cup sugar
¼ cup Idahoan® Boxed Original Mashed Potatoes, dry
1 tablespoon unsweetened cocoa powder
2 teaspoons vanilla extract
1 teaspoon instant espresso powder
½ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F.
  • Liberally spray six 6 oz ramekins with nonstick cooking spray and place on a baking sheet.
  • In a double boiler, melt the chocolate and butter.
  • Alternative: Use a medium size stainless bowl that sits on top of a small saucepan (with water in saucepan) if you do not have a double boiler. Do not let any water get into the melting chocolate.
  • Remove from heat and cool.
  • In a large mixing bowl beat eggs with hand mixer for several minutes and thoroughly foamy.
  • Add sugar, dry mashed potatoes, cocoa powder, vanilla extract, espresso powder and salt. Beat a couple of minutes to mix.
  • Add the melted chocolate mixture and beat for five minutes. This recipe works best if lots of air is incorporated into the mixture to make the cakes light and airy.
  • Pour into ramekins. DO NOT under bake or over bake the cakes. Bake for 15 to 17 minutes. Keep your eye on them; you want them to be molten (a bit soft in the middle), but not too much.
  • Let them rest a few minutes before serving. The center may sink a little - don't worry.
  • Run a thin knife around the inside edge to help release the cakes.
  • Top with powdered sugar and whip cream.

2 eggs
2 cups white sugar
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup butter
1 ½ cups miniature marshmallows
3 tablespoons unsweetened cocoa powder
1 cup cola-flavored carbonated beverage
½ cup buttermilk
½ cup butter
2 tablespoons unsweetened cocoa powder
6 tablespoons cola-flavored carbonated beverage
4 cups confectioners' sugar
1 cup chopped pecans

Steps:

  • Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
  • Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
  • Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
  • While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

1/2 cup buttermilk
1 teaspoon vanilla extract
GLAZE:
1 can (12 ounces) cola
1/2 cup butter, cubed
1/4 cup baking cocoa
4 cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened., In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly., Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean., About 15 minutes before cake is done, prepare glaze. In a small saucepan, bring cola to a boil; cook 12-15 minutes or until liquid is reduced to 1/2 cup. Stir in butter and cocoa until butter is melted; remove from heat. Add confectioners' sugar; stir until smooth. Pour immediately over hot cake.
