Yellow tomato gazpacho soup is the epitome of summer. This chilled soup is ice cold, silky smooth and bright yellow with a small kick.

Number Of Ingredients 11

1/2 loaf Italian or French bread (day-old preferred)
2 lbs yellow tomatoes
2 Persian cucumbers (peeled and chopped (save some for garnish))
1/4 sweet or red onion (chopped)
1 large yellow bell pepper (seeds and ribs removed)
2 garlic cloves
1 small jalapeno (chopped and seeded (optional))
1/4 cup Olive oil ( + more for garnish)
Few dashes of red wine vinegar
Salt and pepper (to taste)
Fresh oregano leaves (for garnish)

Steps:

  • In a medium sized bowl, roughly tear up bread and add enough water to cover. Allow bread to soak for 15 minutes.
  • After about 15 minutes, squeeze the excess water out of the bread. Add all the chopped vegetables, garlic and olive oil to the bread bowl and toss together to combine, making sure everything is evenly coated with olive oil. Season with salt and pepper and let everthing marinate for another 15 minutes.
  • In a food processor or blender, blend together the vegetable mixture until pureed and there are no large peices of bread or vegetable. Add a few dashes of redwine vinegar and season with a good amount of salt and pepper. Taste for seasoning and give it one bland pulse.
  • For a silky smooth texture, pour the gazpacho soup through a fine mesh strainer pushing down on the pulp to get as much liquid as possible.
  • Chill gazpacho for at least 30 minutes before serving and once ready, pour pour in bowls and garnish with an extra drizzle of olive oil, chopped vegetables and fresh oregano.

Number Of Ingredients 10

1 large onion, chopped (about 2 1/2 cups)
6 bacon slices (about 5 ounces), chopped
5 cups chopped yellow tomatoes (about 2 pounds)
2 garlic cloves, minced
1/2 cup dry Sherry
1/2 cup dry white wine
4 cups chicken stock or canned low-salt chicken broth
2 teaspoons minced canned chipotle chilies*
1 tablespoon fresh chopped oregano leaves
1/2 cup whipping cream

Steps:

  • Sauté onion and bacon in heavy large pot over medium heat until onion is tender and beginning to brown, about 15 minutes. Add tomatoes and garlic and simmer until tomatoes are tender and juicy, stirring occasionally, about 20 minutes. Add Sherry and wine; simmer 5 minutes. Add stock and simmer until mixture is reduced to 6 1/2 cups, about 15 minutes. Stir in chipotle chilies and oregano. Working in batches, puree soup in blender. Return to pot. Add cream and stir until heated through. Season to taste with salt and pepper and serve.
  • *Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.

2 Tbsp extra virgin olive oil
1 whole yellow onion, chopped (about 2 cups)
2 medium carrots, chopped (about 1 cup)
2 stalks celery, chopped (about 2 cups)
3 sprigs fresh thyme
4-5 large yellow tomatoes, quartered* (about 4 lbs)
6 cups vegetable stock
salt and pepper
fresh basil for serving

Steps:

  • Heat the olive oil in a dutch oven or soup pot over medium heat. Add the onion and saute until fragrant, about 3 mins. Add the carrots, celery, and thyme, and saute until until fragrant, about 2 minutes. Add the tomatoes and the stock. Increase heat, if needed, to bring just to a boil. Reduce heat to about medium, cover and simmer until tomatoes are very soft and able to puree, about 15 minutes.
  • Remove the thyme sprigs. Puree the soup with an immersion blender or in batches in a blender. Season the soup with salt and pepper to taste.
  • Serve with fresh basil, croutons, red pepper flakes, anything you'd like! Maybe dunk in some crusty bread. Enjoy!

3 large ripe tomatoes, coarsely chopped
1 onion, chopped
1/4 cup water
1/2 teaspoon salt
1 dash fresh ground pepper
2 tablespoons tomato paste
2 tablespoons flour
2 cups chicken broth (dissolved in 2 cups boiling water)
1 cup chilled heavy cream

Steps:

  • Combine chopped tomatoes, onion, water, salt and pepper in a saucepan.
  • Cook over medium heat for 5 minutes.
  • Stir in a blend of tomato paste, and flour, then the chicken broth.
  • Stirring constantly, bring to boiling and cook for 1-2 minutes.
  • Force mixture through a fine sieve.
  • Chill several hours.
  • Before serving, blend in cream.

3 pounds yellow tomatoes, halved (about 9 medium)
2 tablespoons olive oil, divided
4 garlic cloves, minced, divided
1 teaspoon salt
1 teaspoon pepper
1 teaspoon minced fresh rosemary
1 teaspoon minced fresh thyme
1 large onion, chopped
1 cup vegetable broth
1/2 cup milk
1/2 cup heavy whipping cream
CROUTONS:
12 slices French bread baguette (1/2 inch thick)
1 tablespoon olive oil
2 tablespoons prepared pesto
1/2 cup crumbled goat cheese
1 teaspoon pepper

Steps:

  • Place tomatoes, cut side down, in a greased 15x10x1-in. baking pan; brush with 1 tablespoon oil. Sprinkle with 2 teaspoons garlic and the salt, pepper, rosemary and thyme. , Bake at 400° for 25-30 minutes or until tomatoes are tender and skins are charred. Cool slightly. Discard tomato skins. In a blender, process tomatoes until blended., In a large saucepan, saute onion in remaining oil until tender. Add remaining garlic; saute 1 minute longer. Add broth and milk; bring to a boil. Carefully stir in tomato puree. Simmer, uncovered, for 15 minutes to allow flavors to blend. Stir in cream; heat through (do not boil). , Meanwhile, for croutons, place bread on a baking sheet and brush with oil. Bake for 5-6 minutes or until golden brown. Spread with pesto and sprinkle with goat cheese and pepper. Bake 2 minutes longer. Ladle soup into bowls and top with croutons.

5 tablespoons unsalted butter
2 large leeks (white part only), well cleaned and chopped
1 tablespoon finely minced fresh thyme, or 1 teaspoon dried
2 bay leaves
2 pounds plum tomatoes, preferably yellow, trimmed and cut in chunks
3 1/2 cups chicken broth, homemade or low-sodium canned
2 teaspoons sugar
1 tablespoon salt
1 teaspoon freshly ground black pepper
1/3 cup olivada (black olive puree) or 1/2 cup pitted imported black olives pureed with 1 tablespoon olive oil
1/4 cup whipping cream
2 red plum tomatoes, trimmed and diced, for garnish

Steps:

  • To make the soup, melt the butter in a large saucepan over low heat. Add the leeks, thyme and bay leaves. Cover, and cook 20 minutes, stirring once or twice. Stir in the tomatoes, chicken broth, sugar, salt and pepper. Bring to a simmer, and cook, uncovered, until the tomatoes are soft and the soup has thickened, about 25 minutes, stirring once or twice.
  • Cool slightly, remove the bay leaves, and puree in a food processor. Place in a bowl, cover, and refrigerate until cold, at least 5 hours. The soup can be prepared to this point up to 2 days ahead.
  • To make the olive cream, put the olivada in a small bowl and whisk in the cream. Taste the soup and adjust seasoning if needed. Ladle into chilled bowls, and drizzle with the black olive cream. Sprinkle with diced red tomatoes, and serve immediately.
