1 cup coconut milk
1 teaspoon vanilla extract
2 packets stevia sweetener (such as Truvia®)
½ teaspoon ground turmeric
¼ teaspoon ground ginger
¼ teaspoon ground cinnamon
1 fluid ounce brewed espresso

Steps:

  • Combine coconut milk, vanilla extract, stevia sweetener, turmeric, ginger, and cinnamon in a saucepan. Heat over medium heat until warm, about 5 minutes.
  • Remove the saucepan from heat. Blend until frothy using an immersion blender.
  • Pour espresso into a serving mug. Top off with frothed milk mixture.

I came up with this to try to get my daily dose of turmeric in. Turmeric is an Indian spice that is anti-inflammatory. You can take this hot or add ice and drink it cold. Good either way. You could also add in some powdered ginger, if you like.

Number Of Ingredients 7

1 cup coconut milk (or other milk or milk substitute)
1 teaspoon turmeric
1/2 teaspoon cinnamon
2 dashes black pepper
1 1/2 teaspoons coconut oil (coconut for hot drink, olive for chilled) or 1 1/2 teaspoons olive oil (coconut for hot drink, olive for chilled)
liquid stevia (or sweetener of choice, I use 8-10 drops of chocolate liquid stevia)
ice

Steps:

  • Put all ingredients, except ice (and olive oil, if you're using that), in a small pot on the stove and heat on medium low until it simmers lightly; remove from stove.
  • If you are using honey or stevia or olive oil, add it now and dissolve; stir.
  • If you're drinking this hot (with the coconut oil), pour into a mug.
  • If drinking cold (with olive oil), pour into a tall travel mug, add ice to fill, mix and enjoy! You might have to stir occasionally to keep it from settling to the bottom.

This anti-inflammatory iced coffee is spiced with turmeric, ginger, and cinnamon. It can be sweetened with your choice sweetener or not sweetened and left as a spiced iced coffee. I prefer Silk® Coconut Milk Beverage and I like to sweeten it with stevia.

¾ cup coconut milk beverage (such as Silk®)
1 teaspoon vanilla extract
2 packets stevia powder, divided
ice cubes
2 tablespoons water
1 tablespoon instant coffee granules
½ teaspoon ground turmeric
¼ teaspoon ground ginger
¼ teaspoon ground cinnamon

Steps:

  • Pour coconut milk, vanilla extract, and 1 packet stevia powder into a glass and stir to combine. Fill glass with ice cubes.
  • Combine water, instant coffee granules, 1 packet stevia powder, turmeric, ginger and cinnamon in a microwave-safe glass; stir to mix. Microwave for 30 seconds. Stir. Continue microwaving at 15-second intervals until hot and foamy. Carefully pour over the iced coconut milk.

4 teaspoons instant coffee granules
1 cup boiling water
Sugar substitute equivalent to 4 teaspoons sugar, optional
1 cup fat-free milk
4 teaspoons chocolate syrup
1/8 teaspoon vanilla extract
Ice cubes

Steps:

  • In a large bowl, dissolve coffee in water. Add sweetener if desired. Stir in the milk, chocolate syrup and vanilla; mix well. Serve over ice.

I based this homemade iced coffee on Starbucks® bottled Frappuccino®. My husband and I love it and our fridge is never without a pitcher of this super easy, frugal alternative to the expensive stuff. Even though winter's coming and we live in Pennsylvania's Lake Erie snowbelt, we drink this year-round as an alternative to soda and other soft drinks. This particular recipe lends itself to endless variations limited only by your imagination!

4 cups ice cubes, or as needed
8 cups strong freshly brewed coffee
1 cup white sugar, or to taste
4 cups whole milk

Steps:

  • Place 2 cups of ice cubes into a 2-quart pitcher; slowly pour coffee over ice and stir until ice is melted. Stir sugar into coffee and mix thoroughly until sugar is completely dissolved. Add milk, stirring just until combined. Stir in remaining 2 cups ice, adding more as needed; refrigerate until well chilled, about 30 minutes.
  • Stir before serving. Pour over ice in tall glasses or into recycled serving-size glass bottles or insulated tumblers.
