ICE CREAM SNOWBALLS WITH RASPBERRY SAUCE



Ice Cream Snowballs with Raspberry Sauce image

I needed a dessert for a church group at Christmas, and snowballs came to mind. For added flavor, toast the coconut before making these frozen treats. -Nancy Bruce, Big Timber, MT

Number Of Ingredients 9

1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2/3 cup orange juice
1/2 cup white grape juice
1 package (10 ounces) frozen sweetened raspberries, thawed
SNOWBALLS:
4 cups sweetened shredded coconut
5 cups vanilla ice cream

Steps:

  • In a small saucepan, mix sugar, cornstarch and salt; stir in juices until smooth. Add raspberries; bring to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened. Transfer to a small bowl; cool slightly. Refrigerate, covered, 2 hours or until cold., For snowballs, place coconut in a shallow bowl. Using a 1/2-cup scoop, drop a scoop of ice cream in coconut; roll in coconut to coat and shape into a ball. Transfer to a waxed paper-lined baking pan; place in freezer. Repeat to make a total of 10 snowballs; freeze 1 hour or until firm., To serve, spoon raspberry sauce into dessert dishes. Top with snowballs.

Number Of Ingredients 6

1/2 teaspoon plus 1/2 cup butter, softened and divided
1-3/4 cups sweetened shredded coconut, divided
4 ounces cream cheese, softened
3-3/4 cups confectioners' sugar
8 ounces white candy coating, chopped
2 tablespoons shortening

Steps:

  • Line a 9x5-in. loaf pan with foil. Grease foil with 1/2 teaspoon butter; set aside. Pulse 3/4 cup coconut in a food processor until coarsely chopped. Add cream cheese and remaining butter; pulse until blended. Gradually add confectioners' sugar; pulse until blended. Press into prepared pan. Refrigerate, covered, at least 3 hours. , Microwave candy coating and shortening until melted; stir until smooth. Cool slightly. Using foil, lift coconut mixture out of pan. Gently peel off foil; cut into 36 pieces. Taking a few pieces at a time, roll each into a ball; keep remaining pieces refrigerated., Using a toothpick, dip balls one at a time in melted coating mixture, allowing excess to drip off. Roll in remaining coconut; place on waxed paper-lined baking sheets. Refrigerate until set. Store in an airtight container in refrigerator.

1/2 ounce cream nectar flavor

  • In a small saucepan, mix the sugar and spring water and start mixing with a spoon until the sugar dissolves. Then add the milk, cream nectar flavor, vanilla and pink food coloring and stir again. Shave 1 bowl of ice, then pour syrup over. Make sure you pour syrup between each layer.

2 cups sweetened shredded coconut
1 teaspoon ground cinnamon

Steps:

  • Cover two large baking dishes with plastic wrap, pulling so surface is taut. Drop 16 scoops of ice cream onto prepared dishes, dipping the ice-cream scoop in hot water as you work. Freeze balls until firm, at least 1 hour.
  • Meanwhile, preheat oven to 350 degrees. On a rimmed baking sheet, toss coconut with cinnamon. Toast, tossing occasionally, 6 to 10 minutes; let cool.
  • Working with one ice-cream ball at a time, remove from freezer, and roll in coconut mixture; return to dish in freezer. Freeze until set, at least 30 minutes (or up to 1 day).

"Snow balls" made from vanilla ice cream and toffee-chip, toasted-almond, or toasted-coconut toppings are a refreshing summer dessert.

1 1/2 pints vanilla ice cream
1/2 cups toffee chips
1/2 cup toasted coconut
1/2 cup toasted almonds

Steps:

  • With an ice-cream scoop, form ice cream into 8 balls, dipping scoop in hot water as you work and dropping balls onto prepared dish. (To prepare the dish, tightly cover a baking dish with plastic wrap, stretching it over the top; this will prevent the snowballs from flattening on the bottom.) Freeze until firm, about 30 minutes.
  • One at a time, remove balls from freezer, roll in desired coating (1 1/2 cups total), and return to freezer. Freeze until set, at least 10 minutes, before serving.
  • TOFFEE CHIPS: Use toffee chips straight from the bag, or crush up your favorite candies.
  • TOASTED COCONUTS: Spread sweetened shredded coconut on a rimmed baking sheet; bake at 350 degrees, tossing occasionally, 8 to 10 minutes. Let cool completely.
  • TOASTED ALMONDS: Spread sliced almonds on a rimmed baking sheet; bake at 350 degrees, tossing occasionally, 8 to 10 minutes. Let cool completely.

Steps:

  • Preheat the oven to 350°F if using coconut or almonds. Spread the coconut and/or almonds on a rimmed baking sheet and toast in the oven, tossing occasionally, for 8 to 10 minutes. Transfer to a plate, and let cool completely before using.
  • Tightly cover a baking dish with plastic wrap, stretching it over the top (this will prevent the snowballs from flattening on the bottom.)   • Line a baking sheet with parchment and put the baking sheet in the freezer. Scoop ice cream into a ball and place on the baking sheet in the freezer. (I used a #16 scoop which holds about 1/3 cup of ice cream, but you could make them any size you’d like.)
  • Make 12 snowballs and place each snowball on the baking sheet in the freezer. Freeze until solid about one hour.
  • Put the coconut in a pie plate. One at a time, roll the ice cream balls in coconut. Gently press coconut into the ice cream. Return the snowball to the baking sheet in the freezer.
  • When all the snowballs have been decorated you can serve immediately or store in the freezer covered for one week. If desired, serve with your favorite ice cream topping.
