VEGAN SWEET POTATO CASSEROLE

Vegan Sweet Potato Casserole image

We took this classic holiday dish and made it vegan-friendly, nixing the heavy cream and butter in favor of rich, creamy coconut milk. The result is a fluffy, non-dairy sweet potato filling that will satisfy everyone at your table. It's topped with a crunchy golden-brown nut layer spiced with cinnamon.

Provided by Food Network Kitchen

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 14

2 pounds sweet potatoes, peeled and roughly chopped (about 5 medium potatoes)
Kosher salt
1 cup canned unsweetened coconut milk
3 tablespoons packed vegan light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
Pinch freshly grated nutmeg
1/3 cup raw walnut halves and pieces
1/3 cup raw pecan halves
1/3 cup all-purpose flour
1/4 cup packed vegan light brown sugar
1/4 teaspoon ground cinnamon
Kosher salt
3 tablespoons unrefined coconut oil, melted and cooled slightly

Steps:

  • Preheat the oven to 375 degrees F.
  • For the sweet potatoes: Put the sweet potatoes in a large pot and fill with enough water to cover by 2 inches. Season with a good pinch of salt and bring to a boil over medium-high heat, lower to medium low and simmer until the potatoes are tender, 8 to 10 minutes. Drain well and return the potatoes to the pot.
  • Add the coconut milk, brown sugar, vanilla, cinnamon, nutmeg and a pinch of salt; use a potato masher to mash the sweet potatoes until the mixture very smooth (see Cook's Note). Taste and adjust the seasoning with more salt if needed. Transfer to a 2-quart baking dish and smooth into an even layer.
  • For the nut topping: While the potatoes are cooking, add the walnuts, pecans, flour, brown sugar, cinnamon and a pinch of salt to a food processor and pulse a few times until evenly and finely chopped (the nuts should be small but not pulverized). Add the coconut oil and pulse a few more times until the mixture is fully moistened and combined.
  • Sprinkle the nut mixture evenly over the sweet potato filling. Bake until the top is golden brown and the filling is heated through, 25 to 30 minutes. Let the casserole cool 5 minutes before serving.

I CAN'T BELIEVE IT'S NOT POTATO SALAD!

I Can't Believe It's Not Potato Salad! image

Provided by Cooking Channel

Time 3h35m

Yield 10 servings

Number Of Ingredients 15

1 large head cauliflower, chopped
1 1/2 cups fat-free mayonnaise
1/2 cup fat-free sour cream
3 tablespoons creamy Dijon mustard (recommended: Best Foods/Hellmann's Dijonnaise)
1/2 envelope dry ranch dressing/dip mix
2 tablespoons fat-free non-dairy liquid creamer
Salt
1 cup diced red onion
2 celery stalks, diced
6 hard-boiled egg whites, chilled and chopped
3 tablespoons seasoned rice vinegar
1/4 cup chopped chives
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley, plus more, for serving, optional
Paprika, for serving, optional

Steps:

  • Place cauliflower in a large microwave-safe bowl, and pour 1/3 cup water over it. Cover and microwave until soft, 6 to 8 minutes. Once the bowl is cool enough to handle, drain any excess water, if needed.
  • Put 2 cups cauliflower in a blender or food processor and set the rest aside. Add the mayonnaise, sour cream, Dijon mustard, ranch dressing or dip mix, non-dairy creamer, and 1/4 teaspoon salt. Puree or pulse until blended. Don't worry if the puree isn't completely smooth. Set aside.
  • To the bowl with the remaining chopped cauliflower, add the onion, celery, egg whites, chives, dill, 2 tablespoons parsley, and rice vinegar. Add the pureed mixture and lightly stir to coat.
  • Chill for several hours before serving. Garnish with paprika and additional parsley, if using. Mmmmm!

NOT SO SWEET SWEET POTATO CASSEROLE

Not so Sweet Sweet Potato Casserole image

This recipe is very different from the typical sweet potato casseroles topped with marshmallows you might often see on the Thanksgiving table. First of all, no marshmallows or brown sugar anywhere in sight. In fact, the only sugar in this recipe comes naturally from the potatoes themselves and the juice. Topped with cheese and baked til warm and yummy :) A nice change of pace.

Categories     Yam/Sweet Potato

Time 2h15m

Yield 12 serving(s)

Number Of Ingredients 7

5 lbs sweet potatoes, scrubbed clean
2 tablespoons butter or 2 tablespoons margarine, cut into small pieces
3/4 cup apple cider or 3/4 cup apple juice
1/2 teaspoon salt (to taste)
1/2 teaspoon ground black pepper (to taste)
1 cup gruyere cheese, shredded (or you could use Swiss cheese or any other cheese you prefer)
1 tablespoon fresh parsley, chopped

Steps:

  • Preheat oven to 375°F.
  • Bake potatoes whole, in their skins on a foil lined jelly roll pan until they are soft when pierced with a fork (about 1-1 1/4 hours, depending on the actual size of your potatoes).
  • Remove from oven and let cool until you can handle them, then peel off the skins.
  • Mash the potatoes along with butter, cider, salt and pepper, until smooth enough to your liking.
  • Grease an oval baking dish (about 2-2 1/2 quart size) and spoon the mashed potatoes into the dish.
  • Sprinkle with the shredded cheese and bake at 375°F for about 30 minutes, uncovered, or until heated through and the cheese is melted.
  • Sprinkle parsley over the top and serve.
  • MAKE AHEAD TIP: You can make the mashed potatoes in advance and freeze them up to 1 month.
  • When ready to serve them, thaw completely, place into the baking dish as described above, top with cheese, and bake at 350°F for about 40 minutes, then sprinkle with parsley before serving.

HG'S I CAN'T BELIEVE IT'S NOT SWEET POTATO PIE - WW POINTS = 2

Hg's I Can't Believe It's Not Sweet Potato Pie - Ww Points = 2 image

From Hungry Girl: "Get Squashed! This one's an instant classic, people. We promise. By substituting butternut squash for sweet potatoes and using some key light ingredients, you can save over 200 calories and nearly 17 grams of fat per serving on this Turkey Day classic. And it tastes EXACTLY like the real thing (yes, EXACTLY). Now THAT'S something to be thankful for! Butternut squash, with half the calories (and all the yummy fun) of sweet potato, is our new best friend. (Pssst... In case you haven't tried 'em yet, our Bake-tastic Butternut Squash Fries ROCK!)" Time 1h

Yield 4 dishes, 4 serving(s)

Number Of Ingredients 8

2 cups butternut squash (1 large squash)
1/2 cup Egg Beaters egg substitute, Original
1/3 cup light vanilla soymilk
1/3 cup sugar-free maple syrup
1 teaspoon cinnamon
1/4 cup Splenda granular
1 teaspoon vanilla extract
2/3 cup miniature marshmallow

Steps:

  • Preheat oven to 350 degrees.
  • Peel squash and cut into large chunks (removing seeds). Fill a large, microwave-safe dish with a half an inch of water. Place squash into dish and cover with plastic wrap. Microwave for approximately 8 minutes (and drain). Squash should be tender enough to mash, but not fully cooked. With a potato masher, food processor or fork, mash squash. Measure out 2 generous cups, lightly packed, and place in an oven-safe baking dish.
  • Add all ingredients except for marshmallows. Mix ingredients thoroughly, but do not over-stir; squash should still be pulpy.
  • Allow to cook for 45 - 50 minutes. Remove from oven, and disperse marshmallows over top of pie. Return to oven for 5 minutes, until marshmallows begin to brown. Allow to cool.

  • Cook the potatoes by either roasting at 400 F for 30-40 minutes in the oven. Alternatively, cook the potatoes in the microwave. Pierce the potato skins all over with a fork, place on a microwave-safe plate, and cover with a wet paper towel. Cook at full power for 5 minutes, rotate the potatoes, and cook in intervals of 2 minutes until potatoes are done. Mine took 9 minutes total. **see notes**
  • While the potatoes cool enough to handle, prepare your baking dish by greasing with a little butter or nonstick spray. I used a 7" round for a thicker casserole, but you may also use an 8x8" square. If you are doubling the recipe, I would use a 9" pie dish or 9x9" square, tripling the recipe would require a 9x13" baking dish.
  • Once the potatoes are cool enough to handle, peel away the skin and place the still-warm potatoes in a mixing bowl. Add the butter, salt, and sour cream and mash together until you've reached a smooth consistency.
