SOUTHERN HUSH PUPPIES
Southern Hush Puppies are golf ball sized, light and flakey cornmeal dough that is fried golden brown on the outside and soft on the inside served as a side dish to any southern meal. These hush puppies are ready in minutes!

- Preheat 2 inches of oil in a large skillet to 365 degrees. In a medium sized mixing bowl add the flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, paprika, and pepper. Add the egg and buttermilk and stir until combined. Stir in cubed butter.
- Drop the batter by rounded teaspoonfuls in the hot oil. Let cook until they are golden brown 2-3 minutes. Remove with a metal strainer on a paper toweled lined plate. Serve with tarter sauce if desired.

- In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 3 batches (4-1/2 cups total)., To prepare hush puppies: In a large bowl, combine 1-1/2 cups mix, corn, onion and egg; stir just until moistened. In an electric skillet or deep-fat fryer, heat 1-1/2 in. of oil to 375°. Drop batter by teaspoonfuls into oil; fry until golden brown. Drain on paper towels. Serve warm.

QUICK AND EASY HUSH PUPPIES
I don't normally like hush puppies. They are generally too dry, too dense, and too bland for my taste. After tasting some in a restaurant that I actually liked, I decided to come up with a recipe of my own. This one deliberately uses stuff right out of the pantry so that it can be whipped up quickly and served fast.

- Mix corn muffin mix, salt, garlic powder, onion powder, black pepper, and cayenne pepper in a bowl until blended.
- Stir eggs and evaporated milk into dry ingredients until moistened.
- Stir cream-style corn into mixture to make a moist batter. Let batter stand while oil heats.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Gently drop a teaspoon of batter at a time into the hot oil, staying as close to the oil as possible to avoid splattering. Fry hush puppies until golden brown, about 3 minutes per batch.
- Remove hush puppies with a slotted spoon and place on a paper towel-lined plate to drain. Sprinkle with salt if desired.

I have not tried this recipe yet but it sounds good! I found it on a package of Martha White Hush Puppy Mix. This bake would go perfectly with fried shrimp or fish.

- Heat oven to 375 degrees. Grease a 2 quart glass baking dish.
- In medium mixing bowl, combine hush puppy mix and water; stir until smooth. Add butter, egg yolks, buttermilk, sugar and baking soda; mix well. Fold in egg whites.
- Pour into greased casserole.
- Bake for 50 to 55 minutes or until golden brown and set. Serve warm.
- Store loosely covered in refrigerator.
